Iese o mancare cremoasa, satioasa si complet vegetala, pe care o servesti alaturi de orez basmati sau lipii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu pot sa spun ca sunt mare fana a bucatariei indiene &#8212; bucataria libaneza va ramane pentru totdeauna preferata mea! Insa imi place sa ma bucur din cand in cand de un curry fierbinte sau de un dal, iar aceasta reteta de linte cu dovlecei a ajuns sa fie varianta mea de baza cand vreau ceva consistent fara sa stau ore in bucatarie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca nu esti familiarizat cu acest tip de mancare, dal-ul este in esenta o simpla mancare de linte, condimentata diferit de la o regiune la alta a Indiei. De obicei, o mancare de linte cu specific indian capata o culoare portocalie sau tonuri pamantii, mai ales cand este preparata cu legume si verdeturi. Spre deosebire de lintea verde sau maro, lintea rosie (decorticata) nu se tine intreaga la fiert, ci se desface si se transforma intr-o pasta fina care ingroasa mancarea singura. Nu are nevoie de inmuiere. Cand o cumperi, alege boabe de culoare uniforma, fara prea multa praf sau boabe sparte in punga, si clateste-o bine inainte de gatit ca sa indepartezi amidonul si eventualele impuritati.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dovlecel<\/strong> &#8212; foloseste un dovlecel mai mare, taiat cubulete. Cauta unul ferm, cu coaja lucioasa si fara pete moi; cu cat e mai tanar, cu atat are seminte mai putine si gust mai dulce. Dovleceii uriasi, ajunsi la maturitate, au miezul mai apos si seminte mari, asa ca daca prinzi unul mare scoate seminele inainte sa il tai. Nu e nevoie sa il cureti de coaja &#8212; coaja subtire se inmoaie complet la fiert.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei gras rosu<\/strong> &#8212; doi ardei grasi rosii maruntiti aduc dulceata si culoare. Ii prefer pe cei rosii pentru ca sunt copti complet si mai dulci decat cei verzi, care pot da o nota usor amaruie. Alege ardei grei in mana, cu coaja intinsa si lucioasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; o ceapa tocata, calita la inceput impreuna cu legumele, formeaza baza dulce-aromata a mancarii. Taie-o marunt ca sa se topeasca uniform si caleste-o pana devine translucida, nu rumenita tare, ca sa nu amareasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Curry pudra<\/strong> &#8212; trei lingurite dau aroma caracteristica de dal. Curry pudra este un amestec de condimente (de obicei turmeric, coriandru, chimion, ghimbir, mustar), iar turmericul este cel care da culoarea portocalie-aurie. Daca il ai mai vechi in dulap, miroase-l intai: condimentele macinate isi pierd aroma in timp, asa ca un curry proaspat face diferenta. Pentru gust maxim, lasa-l cateva secunde in oala impreuna cu legumele calite inainte de a turna apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei, sare si piper<\/strong> &#8212; doua linguri de ulei sunt suficiente ca sa calesti legumele si sa eliberezi aroma condimentelor. Sareaza si pipereaza dupa gust, dar fa-o spre final, dupa ce lintea s-a inmuiat, ca sa dozezi corect.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste legumele inainte de a adauga lintea.<\/strong> Cele 5 minute de sotat la ardei, dovlecel si ceapa nu sunt optionale &#8212; aici se construieste gustul. Stii ca sunt gata cand ceapa devine translucida si incepe sa miroasa dulce.<\/li>\n<li><strong>Nu sari peste clatirea lintei.<\/strong> Clatita sub jet de apa rece pana apa iese limpede; asa scapi de excesul de amidon si mancarea nu mai face spuma in exces si nu se lipeste de fund.<\/li>\n<li><strong>Atentie la lichid si la fund.<\/strong> Lintea rosie se ingroasa mult la sfarsit si tinde sa se prinda de oala. Amesteca din cand in cand spre finalul celor 20 de minute si, daca devine prea groasa inainte sa se inmoaie, mai adauga putina apa fierbinte.<\/li>\n<li><strong>Stii ca e gata<\/strong> cand lintea s-a desfacut si e moale, mare parte din lichid a fost absorbit, iar dovlecelul aproape s-a topit. Daca apesi o bucata de linte cu lingura, trebuie sa se striveasca usor.<\/li>\n<li><strong>Gusta si ajusteaza la final.<\/strong> Dupa ce a fiert, potriveste de sare, piper si curry. Lintea fiarta absoarbe sarea, asa ca s-ar putea sa ai nevoie de putin mai mult decat crezi.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alte legume.<\/strong> Poti fi creativ si adauga spanac, kale, vinete, morcovi sau mai mult ardei. Verdeturile cu frunze le adaugi spre final, ca sa nu se gateasca prea mult.<\/li>\n<li><strong>Mai cremos.<\/strong> Pentru un dal mai bogat si mai catifelat, inlocuieste o parte din apa cu lapte de cocos &#8212; da o nota dulce care merge perfect cu curry-ul.<\/li>\n<li><strong>Mai picant.<\/strong> Daca iti place iute, adauga un ardei iute tocat odata cu legumele sau un varf de chili pudra impreuna cu curry-ul.<\/li>\n<li><strong>Alt tip de linte sau leguminoase.<\/strong> Asa cum dal-ul se face in India din fasole mung (mung dal) sau mazare galbena uscata (chana dal), poti incerca si tu varianta cu mazare galbena despicata &#8212; tine cont ca aceasta are nevoie de mai mult timp de fierbere si eventual de inmuiere.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Mancarea de linte cu dovlecei se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile, iar gustul chiar se intensifica a doua zi, dupa ce condimentele se asaza. La reincalzire se ingroasa, asa ca adauga putina apa sau supa de legume si amesteca pana ajunge la consistenta dorita. Se congeleaza fara probleme pana la 3 luni; o dezgheti peste noapte la frigider si o reincalzesti la foc mic. Este o reteta excelenta de gatit in avans pentru pranzurile de peste saptamana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu o servesc cel mai des cu orez basmati, dar merge minunat si alaturi de niste <a href=\"https:\/\/gourmandelle.com\/ro\/lipii-fara-gluten-cu-susan-la-tigaie-parathas-vegane\/\">lipii fara gluten cu susan la tigaie<\/a> calde, cu care aduni sosul din farfurie. Daca vrei sa incerci si alte retete cu specific indian, arunca o privire pe varianta mea clasica de <a href=\"https:\/\/gourmandelle.com\/ro\/dhal-mancare-de-linte\/\">dhal, mancare de linte<\/a>. Iar daca te-ai indragostit de lintea rosie, o regasesti si intr-o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-linte-rosie\/\">supa crema de linte rosie<\/a> la fel de
