Se asaza in straturi intr-o tava, se unge cu ulei de masline si se coace la 180C pana se rumeneste. Este vegana, reconfortanta si gata in mai putin de o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iubesc varza, desi este o leguma destul de controversata: oamenii ori o adora, ori o evita complet. Dar reteta de astazi nu e despre preferintele celorlalti. Pe scurt, varza poate fi folosita in nenumarate moduri, iar printre retetele mele preferate cu varza se numara aceasta placinta. Gasesc foarte reconfortant faptul ca pot face un fel de mancare absolut delicios din ingrediente pe care, in alt context, as fi ajuns sa le arunc pentru ca se strica repede.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Desi foile de placinta sunt relativ usor de preparat chiar si in casa, eu nu am avut suficient timp in ziua in care am facut aceasta placinta, asa ca am apelat la cele de la Linco Patisero, care sunt foarte bune. Mie cel mai mult imi place la acest aluat faptul ca este usor de folosit chiar si de cei care nu au deloc experienta in gatit. Folosesc 500 g de varza tocata. Cand o cumperi, alege o capatana grea pentru marimea ei, cu frunzele exterioare ferme si bine stranse, nu vestejite. O varza grea inseamna multa apa in interior, exact ce iti trebuie ca sa se inmoaie frumos la calit. Toaca-o cat mai subtire, fiindca asa se caleste uniform si se compacteaza bine intre foi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; o ceapa mare, taiata solzisori. Ceapa aduce dulceata si rotunjeste gustul varzei. Taiata solzisori (felii subtiri pe lungime), se topeste in compozitie si nu lasa bucati prea mari. Alege o ceapa tare, fara pete moi sau colturi incoltite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Foile filo de placinta<\/strong> &#8212; am folosit jumatate din pachetul de 200 g de la Linco Patisero. Foile filo sunt foarte subtiri si se usuca rapid la aer, asa ca tine-le acoperite cu un prosop usor umezit pana le folosesti. Cumpara-le din sectiunea de congelate sau frigorifice si lasa-le sa se decongeleze complet inainte, altfel se sfarama. Daca o foaie se rupe, nu e nicio problema, o suprapui peste alta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boiaua afumata<\/strong> &#8212; o lingura. Acesta este condimentul-vedeta. Boiaua afumata (pimenton) este facuta din ardei uscati la fum de stejar, iar aroma ei da senzatia de mancare cu afumatura, desi reteta este complet vegana. Cumpara-o de calitate, intr-un borcan opac, fiindca lumina ii degradeaza aroma in timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrul uscat<\/strong> &#8212; o lingurita. Cimbrul completa varza si ceapa cu o nota usor lemnoasa, de pamant. Cimbrul uscat este mai concentrat decat cel proaspat, asa ca o lingurita este suficienta. Freaca-l usor intre degete cand il adaugi, ca sa-i eliberezi uleiurile aromatice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> &#8212; 20 g pentru calit, plus putin pentru uns tava si fata placintei. Uleiul de masline da gust si ajuta foile sa se rumeneasca frumos si crocant la cuptor. Tine la indemana o pensula de silicon ca sa ungi uniform stratul de deasupra.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste varza pana se inmoaie cu adevarat.<\/strong> Cele aproximativ 15 minute de calit nu sunt optionale. Varza este gata cand devine translucida, s-a redus la jumatate si nu mai are acel miros crud, intepator. Daca o pui in placinta inca tare, ramane tare si dupa coacere.<\/li>\n<li><strong>Daca se prinde de cratita, adauga putina apa, nu mai mult ulei.<\/strong> Acopera cratita cu un capac: aburul ajuta varza sa se inmoaie mai repede fara sa se arda. Amesteca ocazional ca sa nu se prinda de fund.<\/li>\n<li><strong>Lasa varza sa se raceasca putin inainte sa o pui pe foi.<\/strong> Compozitia prea fierbinte inmoaie foile filo si le poate rupe. Greseala cea mai comuna este graba la acest pas.<\/li>\n<li><strong>Indeasa bine marginile foilor peste compozitie.<\/strong> Asa inchizi placinta ca pe un pachetel si umplutura nu se imprastie. Stratul final de foi trebuie sa acopere tot, sigilat la margini.<\/li>\n<li><strong>Unge fata cu ulei inainte de cuptor.<\/strong> Acesta este secretul crustei aurii si crocante. Vei pierde nota de afumat, dar placinta ramane gustoasa.<\/li>\n<li><strong>Alte verdeturi aromatice<\/strong> &#8212; in loc de cimbru poti folosi marar uscat sau o combinatie de cimbru si marar, mai aproape de placintele traditionale romanesti.<\/li>\n<li><strong>Un strop de picant<\/strong> &#8212; adauga un varf de fulgi de ardei iute in varza calita daca iti place o nota picanta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Placinta cu varza se pastreaza foarte bine la frigider 3-4 zile, intr-un recipient inchis. Pentru ca foile filo sa redevina crocante, incalzeste-o in cuptor sau in friteuza cu aer cateva minute, nu la microunde, fiindca acolo se inmoaie. Poti pregati in avans varza calita cu o zi inainte si o tii la frigider, apoi asamblezi si coci placinta cand ai nevoie. Compozitia de varza se si congeleaza bine, asa ca o poti face in cantitate mai mare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta placinta, vei iubi si <a href=\"https:\/\/gourmandelle.com\/ro\/spanakopita-placinta-cu-spanac\/\">spanakopita, placinta greceasca cu spanac<\/a> facuta tot din foi filo, sau o <a href=\"https:\/\/gourmandelle.com\/ro\/placinta-cu-vinete-melitzanopita\/\">placinta cu vinete (melitzanopita)<\/a> in acelasi stil.
