Le-am intins eu frumusel pe blatul de bucatarie si am inceput sa le admir, gandindu-ma la ce retete sa fac cu ele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Asa am dat startul testarii mele cu aceasta reteta de spaghete cu sos cremos de usturoi copt. Iaurtul natur nu l-as manca asa, ca atare, dar il folosesc mai mult pe post de smantana de gatit in retete, si exact aici se simte la el acasa. Fierbe-le al dente, cu un minut mai putin decat scrie pe ambalaj, pentru ca se vor mai inmuia putin cand le amesteci in sos cald. Pastreaza putina apa de la fiert inainte sa le scurgi: amidonul din ea ajuta sosul sa se prinda frumos de paste daca s-a ingrosat prea tare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; 4 capatani intregi, nu catei razleti. Pare mult, dar la copt usturoiul isi pierde complet asprimea si devine dulce. Alege capatani ferme, grele in mana, cu invelisul uscat si lipit; daca au inceput sa incolteasca sau au pete moi, gustul va fi amar chiar si dupa coacere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurt vegetal natur<\/strong> &#8212; reteta foloseste un iaurt Joya natur. Eu unul nu l-as manca asa, ca atare, dar il folosesc pe post de smantana de gatit, si exact rolul asta il are si aici. Alege un iaurt natur, neindulcit si fara aroma, ca sa nu duca sosul intr-o directie dulceaga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte vegetal<\/strong> &#8212; 300 ml lapte de soia natural. Soia este alegerea buna aici pentru ca are cele mai multe proteine dintre laptele vegetal si leaga sosul mai bine. Foloseste o varianta naturala, neindulcita; cele cu vanilie sau zahar nu au ce cauta intr-un sos sarat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drojdie inactiva<\/strong> &#8212; 3 linguri de fulgi de drojdie inactiva dau acea nota de branza, usor umami, care face sosul sa para mai bogat. Nu o confunda cu drojdia de panificatie; cea inactiva nu creste si nu fermenteaza, ci se foloseste exact pentru aroma. O gasesti la magazinele bio sau la raionul de produse vegane.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; 4 linguri sunt agentul de ingrosare. Pentru ca se mixeaza la rece in blender impreuna cu lichidul, nu rastesti faina si nu faci cocoloase, asa cum s-ar putea intampla la un rantas clasic. Tot ea cere apoi amestecat continuu in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline, sare si piper<\/strong> &#8212; uleiul intra atat la copt usturoiul, cat si la final, ca firisor deasupra portiei. Sarea si piperul se pun dupa gust, dar gusta sosul dupa ce s-a ingrosat, fiindca abia atunci aromele se aseaza.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Coace usturoiul corect.<\/strong> Taie partea superioara a fiecarei capatani ca sa se vada cateii, stropeste cu ulei de masline, presara sare si piper, strange folia ca un pachetel si baga-l la 250C pentru aproximativ 40 de minute. Stii ca e gata cand cateii sunt aurii, moi si se storc singuri din coaja, ca o pasta.<\/li>\n<li><strong>Mixeaza sosul foarte bine.<\/strong> Pune in blender usturoiul copt si decojit, iaurtul, laptele, drojdia, faina, sare si piper si proceseaza pana e perfect omogen. Cu cat e mai fin acum, cu atat sosul iese mai catifelat in tigaie.<\/li>\n<li><strong>Amesteca neincetat la ingrosat.<\/strong> Cand torni lichidul in tigaie, amesteca-l continuu cu telul pana se ingroasa. Daca te opresti, faina se lipeste de fund si face cocoloase. Daca sosul se ingroasa prea tare, mai adauga putin lapte si revine la consistenta dorita.<\/li>\n<li><strong>Nu fierbe pastele in sos.<\/strong> Opreste focul inainte sa adaugi spaghetele scurse, apoi doar le amesteci in sosul cald. Asa raman al dente si nu se transforma intr-o pasta moale.<\/li>\n<li><strong>Serveste imediat.<\/strong> Sosul cremos e cel mai bun cald, cu un firisor de ulei de masline deasupra. Pe masura ce sta, se mai ingroasa, asa ca pune pastele in farfurii cat sunt fierbinti.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Cu pesto vegan<\/strong> &#8212; am mai incercat sosul cu pesto vegan adaugat si a iesit o nebunie. Pune o lingura-doua de pesto la final, dupa ce ai oprit focul, ca sa pastrezi prospetimea busuiocului.<\/li>\n<li><strong>Alt lapte vegetal<\/strong> &#8212; daca nu ai lapte de soia, mergi pe unul natural si neindulcit din ovaz sau migdale. La rece, sosul se ingroasa, asa ca la reincalzire adauga putin lapte vegetal sau un strop de apa si incalzeste totul la foc mic, amestecand, pana redevine cremos. Evita microundele la putere mare, fiindca pot taia sosul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, partea cea mai practica este sa coci usturoiul din timp: capatanile coapte stau la frigider 4-5 zile intr-un recipient inchis, iar cand vrei pastele mai ai doar de mixat sosul si de fiert spaghetele. Daca esti fan usturoi, ca mine, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/paste-cu-usturoi\/\">aceste paste cu usturoi<\/a> sau aromatul <a href=\"https:\/\/gourmandelle.com\/ro\/taitei-cu-usturoi\/\">taitei cu usturoi<\/a>. Iar daca vrei alta varianta de sos alb, arunca un ochi pe <a href=\"https:\/\/gourmandelle.com\/ro\/spaghete-cu-sos-alb-marar-piper-verde\/\">spaghetele cu sos alb, marar si piper
