M-a cucerit imediat ce am inteles cum functioneaza: spre deosebire de curry-urile indiene mai subtiri si mai picante, cel japonez are o textura densa, aproape ca o tocana, datorita roux-ului de unt si faina care leaga totul intr-un sos cremos si linistitor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta japoneza autentica contine in mod traditional carne, dar eu am facut un curry japonez vegetarian\/vegan. Baza ramane aceeasi pe care o stiu si o iubesc: un amestec de legume precum ceapa, morcovi si cartofi, fierte intr-un sos facut dintr-un amestec de condimente prajite si un roux. Cumpara semintele intregi, nu macinate &#8212; isi pastreaza uleiurile aromatice mult mai mult timp. Le prajesti uscat, intr-o tigaie fara ulei, pana cand incep sa miroasa intens si capata o nuanta mai inchisa; acolo se elibereaza aromele si de acolo vine toata diferenta de gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> este alegerea mea pentru a inlocui carnea aici. Cauta unul ferm, bine presat &#8212; cu cat are mai putina apa, cu atat se rumeneste mai bine si nu se faramita in tigaie. Il tai cuburi si il prajesti in ulei de cocos pana e rumen pe toate partile; crusta aceea aurie tine bucatile intregi in sos si adauga textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta miso<\/strong> este secretul savorii. O lingura adauga umami si sare in acelasi timp. Important: adaug-o dupa ce ai gatit, in lichidul deja cald dar nu in clocot puternic, fiindca fierberea agresiva ii taie din complexitate. Alege un miso deschis la culoare (shiro) daca vrei un gust mai bland, sau unul mai inchis pentru o nota mai intensa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul vegan si faina<\/strong> formeaza roux-ul, agentul de ingrosare. Le gatesti impreuna la foc mediu, amestecand continuu in jur de 15 minute, pana amestecul devine auriu-maroniu. Nu sari peste timp si nu da focul prea mare: un roux ars are gust amar si nu mai poate fi reparat. Untul vegan functioneaza la fel ca cel din lapte aici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofii si morcovii<\/strong> sunt baza clasica de legume a oricarui kare. Taie cartofii cuburi de marime egala ca sa se gateasca uniform; sunt gata cand intra usor furculita in ei, in jur de 15 minute. Morcovii ii calesti la inceput, alaturi de ceapa, ca sa-si scoata dulceata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Marul ras<\/strong> este ingredientul-surpriza, foarte tipic curry-ului japonez. Adauga o dulceata subtila si fructata care echilibreaza condimentele si rotunjeste sosul. Rade-l marunt ca sa se topeasca in lichid si sa nu ramana bucati.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Prajeste condimentele cu atentie.<\/strong> Stii ca sunt gata cand aroma devine puternica si umple bucataria, iar semintele se inchid putin la culoare. Daca incep sa fumege sau sa miroasa a ars, ai mers prea departe &#8212; amareala se simte in tot felul de mancare.<\/li>\n<li><strong>Rumeneste bine tofu inainte de a-l adauga in tocana.<\/strong> Greseala comuna e sa-l misti prea des in tigaie; lasa-l 2-3 minute pe fiecare parte, neatins, ca sa prinda crusta. Asa nu se sfarama si capata gust.<\/li>\n<li><strong>Ai rabdare cu roux-ul.<\/strong> Cele 15 minute de amestecat continuu nu sunt negociabile &#8212; aici se construieste textura cremoasa. La reincalzire s-ar putea sa se ingroase &#8212; adauga putina supa de legume sau apa si amesteca pana revine la consistenta cremoasa. Se congeleaza bine pana la 2-3 luni; daca stii ca vei congela, lasa mazarea pentru momentul servirii ca sa ramana frageda. Amestecul de condimente prajite si rasnite se pastreaza separat intr-un borcan inchis ermetic, la loc uscat si intunecos, gata pentru urmatorul curry.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca
