Fierbe-le al dente, adica scoase din apa cu un minut inainte de timpul de pe ambalaj, pentru ca vor mai sta inca 2-3 minute in sos si nu vrei sa se inmoaie prea tare. Pasteaza si o cana din apa de fierbere: are amidon si te ajuta sa subtiezi sosul daca devine prea gros.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Carne tocata vegana.<\/strong> Marca conteaza la textura: variantele de tip Beyond sau Verdino se zdrobesc usor in granule mici si capata o crusta apetisanta cand le lasi sa se rumeneasca putin inainte de a adauga lichidul. Alege un produs care nu este deja foarte condimentat, ca sa controlezi tu aroma cu amestecul pentru taco.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amestec de condimente pentru taco.<\/strong> Acesta este sufletul retetei. Contine de obicei chimion, boia, usturoi granulat, oregano si chili, iar aroma lui se dezvolta cel mai bine daca il presari peste carnea calduta, direct in tigaie, ca sa se prajeasca cateva secunde si sa-si elibereze uleiurile aromate. Daca il ai facut in casa, cu atat mai bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Jalapeno murat.<\/strong> Feliile de jalapeno murat aduc atat picant, cat si o aciditate placuta care echilibreaza dulceata rosiilor. Sase felii dau o caldura moderata; toaca-le marunt ca sa se distribuie uniform in sos. Daca rosiile par acrisoare, un praf de zahar in sos echilibreaza imediat aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza vegana rasa.<\/strong> Se adauga la final, peste pastele fierbinti, si se lasa sub capac ca sa se topeasca uniform. Variantele care se topesc bine sunt cele pe baza de amidon si ulei de cocos; daca branza ta vegana nu se topeste usor, raade-o mai fin si acopera tigaia un minut in plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjel sau coriandru.<\/strong> Verdeata proaspata, presarata la final, racoreste farfuria si echilibreaza picantul. Lasa carnea vegana sa se prajeasca un minut sau doua pana prinde culoare; asa capeta gust si textura, in loc sa fie fiarta si apoasa.<\/li>\n<li><strong>Caleste ceapa si usturoiul corect.<\/strong> Cele doua minute la foc mediu sunt suficiente cat ceapa devine translucida, nu maronie. Daca usturoiul incepe sa se arda, scade focul imediat, pentru ca usturoiul ars amaraste tot sosul.<\/li>\n<li><strong>Pastreaza spaghetele al dente.<\/strong> Stii ca sunt gata cand au inca o mica rezistenta la muscatura. Vor continua sa se gateasca in sos, asa ca daca le fierbi complet de la inceput, vor iesi moi.<\/li>\n<li><strong>Amesteca pastele in sos, nu doar deasupra.<\/strong> Cand adaugi spaghetele fierte, amesteca-le din cand in cand timp de 2-3 minute, ca fiecare fir sa se imbrace in sos si sa nu se lipeasca intre ele.<\/li>\n<li><strong>Topeste branza sub capac.<\/strong> Opreste focul, presara branza vegana si pune capacul. Caldura ramasa o topeste bland, fara sa o ardi sau sa devina sfaramicioasa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li><strong>Fara carne vegana.<\/strong> Inlocuieste carnea tocata vegana cu fasole rosie sau neagra fiarta, zdrobita partial, sau cu linte gatita. Vei obtine acelasi sos consistent, intr-o varianta integral pe baza de plante neprocesate.<\/li>\n<li><strong>Mai picant sau mai bland.<\/strong> Pentru un plus de caldura, adauga mai mult jalapeno sau un praf de chili.
