Eu o servesc cu o salsa cremoasa de ciuperci si trufe, care transforma o pizza modesta intr-un fel de mancare de efect.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se spune ca pizza con patate a fost facuta pentru prima data de pizzerii locale din orasul Napoli si ca a castigat rapid popularitate in randul oamenilor. Mie imi place tocmai pentru ca e o pizza onesta, fara prea multe ingrediente: cartofi, ulei de masline bun si putine ierburi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Traditionala Pizza con Patate este o pizza simpla de cartofi, care contine de obicei felii subtiri de cartofi, ulei de masline, sare si rozmarin. Eu prefer cartofii medii, fermi, cu continut mediu de amidon, pentru ca se taie frumos si nu se faramita. Secretul este sa ii feliezi cat mai subtire si uniform, ideal cu o mandolina sau cu robotul de bucatarie: feliile groase nu apuca sa se faca pana se arde blatul, iar cele inegale se coc neuniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> apare in reteta de mai multe ori &#8212; in aluat, peste cartofi si la salsa &#8212; asa ca merita unul extravirgin de calitate. El nu doar adauga aroma, ci ajuta cartofii sa se rumeneasca si sa nu se usuce in cuptor. Cand amesteci feliile in bol, asigura-te ca fiecare felie e acoperita cu o pelicula fina de ulei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile Champignon maro<\/strong> stau la baza salsei. Cele maro (cremini) au un gust mai intens si mai pamantiu decat cele albe, ceea ce le face perfecte pentru o pasta de ciuperci. Cauta ciuperci ferme, cu palaria inchisa si fara pete umede; sterge-le cu un servet in loc sa le speli, ca sa nu absoarba apa si sa nu lase prea multa zeama la calire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de trufe<\/strong> este ingredientul care da personalitate salsei. Se adauga la final, dupa ce ciupercile au fost procesate, pentru ca aroma de trufe este volatila si se pierde la caldura mare. O lingura este suficienta &#8212; e un ulei intens, iar prea mult poate deveni coplesitor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vinul alb<\/strong> deglaseaza tigaia si adauga aciditate, echilibrand gustul bogat al ciupercilor si al trufelor. Alege un vin sec, pe care l-ai bea si la masa; alcoolul se evapora la fierbere si ramane doar aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amestecul de ierburi italienesti, cimbrul si usturoiul<\/strong> sunt cele care fac aroma sa fie inconfundabil italieneasca. Cimbrul uscat se pune la fiert in salsa, ca sa-si lase aroma, iar ierburile italienesti le presar peste pizza fierbinte, ca sa-si pastreze prospetimea.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Felii subtiri si uniforme.<\/strong> Cea mai frecventa greseala este sa tai cartofii prea gros. Foloseste o mandolina si vei avea felii de aceeasi grosime, care se coc uniform si raman crocante la margine. Daca tai cu cutitul, ai rabdare si tinde spre felii cat mai fine.<\/li>\n<li><strong>Cuptor bine incins.<\/strong> Incinge cuptorul la 250 C inainte de a baga pizza. Caldura mare e cea care rumeneste cartofii rapid si tine blatul crocant; un cuptor caldut iti va da o pizza moale.<\/li>\n<li><strong>Foloseste gratarul de sus la final.<\/strong> Dupa cele 10-13 minute de copt, muta pizza sub gratar inca 3-4 minute. Asa stii ca e gata: cartofii capata acea crusta aurie cu margini usor crocante. Stai langa cuptor, pentru ca de la auriu la ars sunt doar cateva secunde.<\/li>\n<li><strong>Lasa salsa sa fiarba la foc mic.<\/strong> Cele 15-20 de minute cu capac nu sunt optionale: ele inmoaie ciupercile si concentreaza aromele inainte de a le procesa. Ciupercile trebuie sa fie moi si sa-si fi lasat zeama.<\/li>\n<li><strong>Asezoneaza in straturi.<\/strong> Pune sare si piper peste cartofi cand ii amesteci cu ulei, nu doar la final. Poti adauga cateva picaturi de otet balsamic sau putin patrunjel proaspat tocat pentru a-i da o nota aromata in plus.<\/li>\n<li><strong>Varianta clasica napolitana<\/strong>: lasa salsa deoparte si presara doar rozmarin proaspat peste cartofi inainte de copt. Este versiunea traditionala, minimalista, a pizzei con patate.<\/li>\n<li><strong>Blat fara gluten<\/strong>: foloseste un blat de pizza fara gluten din comert sau facut in casa; restul retetei ramane identic, iar pizza devine potrivita pentru cei cu intoleranta la gluten.<\/li>\n<li><strong>Alte ciuperci<\/strong>: in loc de Champignon maro poti folosi un amestec de ciuperci salbatice (gri, pleurotus, hribi uscati rehidratati) pentru o salsa cu aroma si mai intensa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pizza cu cartofi este cea mai buna proaspata din cuptor, cat blatul e inca crocant. Daca iti ramane, pastreaz-o la frigider, intr-un recipient inchis, 1-2 zile. Pentru reincalzire, evita microundele &#8212; inmoaie blatul. Pune feliile direct pe gratarul cuptorului sau intr-o tigaie incinsa, ca sa redevina crocante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Salsa de ciuperci cu trufe se preteaza foarte bine la prepararea in avans: o poti face cu o zi-doua inainte si o tii la frigider intr-un borcan inchis. De fapt, aromele se intensifica peste noapte. Inainte de servire, scoate-o din frigider ca sa ajunga la temperatura camerei. Aceeasi salsa este delicioasa si peste <a href=\"https:\/\/gourmandelle.com\/ro\/paste-cu-salsa-de-trufe\/\">paste cu salsa de trufe<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut
