Cand tai prima felie, galbenusul intreg apare in mijlocul umpluturii verzi, iar efectul acela este exact ce transforma o placinta obisnuita intr-un fel de mancare de sarbatoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In multe familii italiene reteta se pastreaza asa cum a fost invatata de la bunici si strabunici, iar Pasqualina ramane un simbol al meselor de Paste. Vestea buna e ca nu ai nevoie de o traditie de familie ca sa o faci reusita: iti trebuie doar un aluat racit bine, spanac stors de apa si putina rabdare la asamblat. Se recunoaste dupa doua lucruri: umplutura de spanac cu ricotta si parmezan, si ouale intregi care se coc chiar in interiorul placintei. Aluatul se face cu unt rece, ceea ce ii da textura frageda si straturile care se desprind usor la copt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este o placinta vegetariana, bogata si satioasa, care se poate servi calda sau la temperatura camerei. Tocmai de aceea e perfecta pentru mesele mari de Paste, cand vrei ceva ce poti pregati putin mai devreme si taia in felii frumoase in fata invitatilor.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele pentru placinta de Paste cu spanac<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta se imparte in doua: aluatul si umplutura. Nimic complicat, dar fiecare ingredient are rolul lui.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Faina si untul rece<\/strong> formeaza aluatul. Untul trebuie sa fie rece direct din frigider, pentru ca asa se obtin foietajul si textura frageda.<\/li><li><strong>Apa rece si un praf de sare<\/strong> leaga aluatul si il fac usor de intins.<\/li><li><strong>Spanacul proaspat<\/strong>, fiert in apa cu sare si apoi stors bine, este baza umpluturii. Cantitatea scade mult dupa fierbere, asa ca nu te speria de volumul initial.<\/li><li><strong>Ricotta<\/strong> aduce cremozitatea, iar <strong>parmezanul ras<\/strong> aduce gustul sarat, umami, care echilibreaza spanacul.<\/li><li><strong>Ouale<\/strong> au doua roluri: un ou usor batut leaga umplutura, iar cateva oua intregi se sparg in umplutura si se coc acolo, pentru efectul spectaculos la taiere.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum faci pas cu pas placinta de Paste cu spanac<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Incepe cu aluatul, pentru ca are nevoie de timp la rece. Pune faina, untul rece, apa si sarea in robotul de bucatarie si amesteca doar pana obtii un amestec grunjos, faramicios. Rastoarna-l pe blat, aduna-l repede intr-o sfera fara sa il framanti prea mult, invele-l in folie si lasa-l la frigider cat pregatesti umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru umplutura, scurge bine spanacul fiert si toaca-l. Caleste-l intr-o tigaie cu putin ulei impreuna cu ricotta, la foc mediu, amestecand pana se evapora excesul de lichid si compozitia devine cremoasa. Ia de pe foc, adauga parmezanul si lasa amestecul sa ajunga la temperatura camerei. Imparte aluatul in doua si intinde doua foi rotunde cu facaletul. Aseaza prima foaie in forma de placinta, adauga umplutura si niveleaz-o. Cu dosul unei linguri fa cateva gropite in umplutura si sparge cate un ou intreg in fiecare. Acopera cu a doua foaie, lipeste bine marginile si cresteaza suprafata cu un cutit in cateva locuri, ca aluatul sa nu se umfle. Coace placinta aproximativ 35 de minute, sau pana se rumeneste frumos deasupra.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul oualor coapte in umplutura<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Partea care impresioneaza mereu la Pasqualina sunt ouale intregi ascunse in stratul de spanac. Ca sa iasa bine, fa gropitele suficient de adanci si distanteaza-le uniform, astfel incat fiecare felie sa prinda un ou. Sparge ouale cu grija, ca sa ramana galbenusul intreg, si nu le sara direct peste ele in acest moment, ca sa nu se lipeasca de aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aluatul rece este al doilea secret. Cu cat untul ramane mai rece pana intra placinta la cuptor, cu atat aluatul iese mai fraged si mai stratificat. Daca in timp ce lucrezi simti ca s-a incalzit prea tare, baga-l cateva minute inapoi la frigider inainte de copt.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce servesti placinta de Paste cu spanac<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pasqualina este destul de bogata cat sa fie fel principal, mai ales alaturi de o salata verde simpla care sa taie din cremozitate. O <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-spanac\/\" target=\"_blank\" rel=\"noreferrer noopener\">salata de spanac<\/a> proaspata merge de minune si pastreaza tema, iar un platou de legume la gratar completeaza masa de Paste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta placinta cu spanac, ai putea sa incerci si varianta greceasca, <a href=\"https:\/\/gourmandelle.com\/ro\/spanakopita-placinta-cu-spanac\/\" target=\"_blank\" rel=\"noreferrer noopener\">spanakopita<\/a>, cu foietaj si feta, sau niste <a href=\"https:\/\/gourmandelle.com\/ro\/rulouri-cu-spanac\/\" target=\"_blank\" rel=\"noreferrer noopener\">rulouri cu spanac<\/a> pentru aperitiv. Daca vrei sa castigi timp de Paste, poti pregati aluatul cu o zi inainte si sa il tii in frigider, iar umplutura de spanac o poti face tot din timp, ca sa nu ramana decat asamblarea si coptul in ziua mesei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cel mai bine se taie in felii frumoase dupa ce s-a racit putin, cand umplutura s-a asezat si ouale se vad clar in sectiune. Serveste-o calduta sau la temperatura camerei, exact cum se face in Italia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca faci Torta Pasqualina de Pastele acesta, spune-mi in comentarii cate oua ai reusit sa prinzi in umplutura si cum ti-a iesit sectiunea la taiere. Lasa si o evaluare cu stelute daca reteta ti-a placut, ma ajuta enorm sa stiu ca a iesit bine si la tine in bucatarie.<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-188522\"
