Se face dintr-un aluat imbogatit cu oua, unt si lapte, aromat cu mahleb (o condiment din samburii cireselor amare) si optional cardamom, care dau painii aroma sa florala si usor amaruie distinctiva. Textura finala este moale, pufoasa si usor filata, similara cu un brioche dar mai densa si mai parfumata. tsoureki necesita timp si rabdare, dar rezultatul compenseaza<\/li>\n\n<li>O alternativa la cozonacul romanesc traditional pentru masa de Paste, cu o textura mai aerata si un profil aromatic diferit<\/li><\/ul><h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2><ul class=\"wp-block-list\"><li><strong>Aroma unica<\/strong> &#8211; mahleb-ul (samburul cireselor amare, macinat) este condimentul care face tsoureki recognoscibil; nu exista substitut direct, iar painea cu el are un parfum floral-amaricios de negasit in alt preparat<\/li>\n\n<li><strong>Textura filata, moale zile intregi<\/strong> &#8211; datorita cantitatii mari de oua si unt, tsoureki ramane moale 2-3 zile dupa coacere, spre deosebire de painea simpla care se intareste rapid<\/li>\n\n<li><strong>Aspectul impletit<\/strong> &#8211; tsoureki impletit in 3 sau 4 fire arata spectaculos fara a fi complicat tehnic; condimentul esential al tsoureki-ului. Se obtine din samburii cireselor salbatice uscati si macinati. Are un gust floral, usor amaricios, cu note de migdale si cirese. Se gaseste in magazinele grecesti, turcesti sau in magazinele de produse orientale. Se macina imediat inainte de folosire pentru aroma maxima. Fara mahleb, painea este buna dar nu este tsoureki autentic.<\/p><p><strong>Drojdia<\/strong> &#8211; drojdia proaspata da cel mai bun rezultat pentru tsoureki: activare mai rapida, aroma mai complexa. Drojdia uscata activa functioneaza ca alternativa &#8211; folosesti 1\/3 din cantitatea de drojdie proaspata. Activarea corecta in lapte cald (nu fierbinte, maxim 38 grade) este critica &#8211; lapte prea fierbinte ucide drojdia.<\/p><p><strong>Ouale<\/strong> &#8211; tsoureki-ul traditional foloseste oua intregi in aluat si galbenus pentru uns deasupra inainte de coacere. Ouale de calitate, la temperatura camerei, se incorporeaza mai usor in aluat. Galbenusul de uns da acea culoare maro-aurie lucioasa caracteristica.<\/p><p><strong>Untul<\/strong> &#8211; unt nesarat, la temperatura camerei, incorporat treptat in aluat dupa framantare initiala. Acesta este secretul texturii filate &#8211; untul emolienteaza reteaua de gluten si da fir la rupere. Nu inlocui cu margarina sau ulei &#8211; textura si gustul sunt diferite.<\/p><p><strong>Faina<\/strong> &#8211; faina alba tip 550 (sau faina de paine, tip 650) cu continut mai ridicat de proteine dect faina de tort. Continutul mai mare de gluten este necesar pentru structura impletiturii si textura filata. Reteaua de gluten bine dezvoltata este esentiala pentru textura filata &#8211; aluatul insuficient framantat da o paine cu textura mai groasa si mai compacta.<\/li>\n\n<li>Prima dospire se face la temperatura camerei 1,5-2 ore pana aluatul isi dubleaza volumul, sau la frigider peste noapte (8-12 ore). Dospirea la rece la frigider dezvolta arome mai complexe si face aluatul mai usor de modelat.<\/li>\n\n<li>Unge tsoureki-ul cu galbenus de ou batut cu o lingurita de lapte inainte de a-l pune la cuptor, si din nou dupa primele 15 minute de coacere (dupa ce scoate tava, opreste cuptorul, unge din nou, reintoarce). Doua straturi de uns dau culoarea maro-aurie profunda si lustrultare caracteristic.<\/li>\n\n<li>Coace la 170-175 grade Celsius, nu mai sus. Temperatura prea mare face exteriorul sa se rumeneasca inainte ca interiorul sa se coaca. Verifica cu un termometru de bucatarie &#8211; tsoureki-ul este gata cand temperatura interna atinge 88-90 grade Celsius.<\/li>\n\n<li>Lasa sa se raceasca complet pe un gratar inainte de taiere. Tsoureki-ul cald pare desfacut si umed la interior &#8211; racit, textura devine ferma si filata.<\/li><\/ul><h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2><p><strong>Fara mahleb<\/strong> &#8211; poti folosi o combinatie de 1\/2 lingurita extract de migdale + 1\/4 lingurita extract de vanilie ca substitut imperfect. Gustul va fi diferit, dar painea va fi buna. Cardamomul singur (fara mahleb) da o aroma placuta, orientala.<\/p><p><strong>Cu stafide sau portocale confiate<\/strong> &#8211; stafidele inmuiate in rom sau suc de portocale si portocalele confiate sunt adaosuri clasice in unele regiuni. Se incorporeaza dupa ultima framantare, la modelat.<\/p><p><strong>Cu glazura de zahar<\/strong> &#8211; in loc de galbenus, unele retete folosesc o glazura de zahar pudra cu apa de trandafiri turnata dupa coacere. Da un aspect mat si un gust mai dulce.<\/p><p><strong>Tsoureki individual (forma mica)<\/strong> &#8211; in loc de o singura paine mare, modeleaza 6-8 tsoureki mici individuale, perfecte ca dar sau pentru copii. Nu se pune la frigider &#8211; frigiderul usuca painea mai repede decat temperatura camerei. Se poate congela taiat in felii, bine infasurat in folie, pana la 2 luni. Se dezgheta la temperatura camerei sau se incalzeste 2-3 minute in cuptor la 160 grade.<\/p><p>Pentru masa de Paste, tsoureki se poate pregati cu 1-2 zile inainte &#8211; gustul se imbunatateste usor a doua zi cand aromele de mahleb si cardamom se intensifica. Ideal: copit cu 2-3 zile inainte, pastat la temperatura camerei, servit in dimineata Pastelui. Daca vrei sa avansezi si mai mult, aluatul framantat si pus la prima dospire poate sta la frigider 24 de ore inainte de modelare si a doua dospire.<\/p><p>Daca ti-a placut aceasta reteta, probabil te Trebuie sa obtii un aluat moale, omogen, elastic si lipicios. Se poate gasi sub forma de seminte intregi (mai aromate, se macina la momentul utilizarii) sau deja macinat. In Romania, il gasesti in centrele comerciale cu sectiune de produse internationale sau pe platforme online de condimente.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1773420593079\"><strong class=\"schema-faq-question\">De ce nu a crescut tsoureki-ul meu?<\/strong> <p class=\"schema-faq-answer\">Cauze frecvente: drojdia era veche sau moarta (testeaz-o intai in lapte cald cu un praf de zahar &#8211; daca nu face spuma in 10 minute, nu mai e buna), laptele era prea fierbinte si a ucis drojdia (trebuie sa fie cald, nu fierbinte, maxim 38 grade), sau temperatura din bucatarie era prea scazuta pentru dospire. Aluaturile bogate in oua si unt dospeaza mai lent decat painea simpla &#8211; ai nevoie de rabdare si de un loc cald (28-30 grade) fara curent.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1773420602752\"><strong class=\"schema-faq-question\">Cum trebuie sa arate textura tsoureki-ului bine facut?<\/strong> <p class=\"schema-faq-answer\">La rupere, tsoureki-ul trebuie sa arate fire sau straturi (similar cu cozonacul romanesc bun). Exteriorul este maro-auriu si lucios; interiorul este galben-pal (datorita oualor), moale si umed fara sa fie lipicios. Daca interiorul este umed si se lipeste, painea nu a stat destul la cuptor. Daca este uscat si sfarimicios, a stat prea mult sau temperatura a fost prea mare.<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1773420611633\"><strong class=\"schema-faq-question\">Care e diferenta intre tsoureki si challah?<\/strong> <p class=\"schema-faq-answer\">Ambele sunt paini dulci impletite cu origini religioase, dar ingredientele si aromele difera semnificativ. Tsoureki foloseste unt, oua, lapte si este aromat cu mahleb si cardamom &#8211; este o paine imbogatita cu lactate. Challah-ul evreiesc traditional este parve (fara lactate) &#8211; contine oua si ulei, nu unt si lapte, si este aromat cu seminte de mac sau susan.
