Sunt genul de reteta care imi place pentru ca nu cere nimic complicat: un aluat din ingrediente pe care le am mereu in casa si o jumatate de ora de modelat cu mainile, ceva ce poate face si un copil alaturi de tine in bucatarie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am observat ca koulourakia sunt de obicei mai dulci decat koulouria si se decoreaza cu ou batut sau cu susan. Foloseste unt cu adevarat la temperatura camerei, nu topit: trebuie sa cedeze usor cand apesi cu degetul, dar sa-si tina forma. Untul topit lasa biscuitii sa se lateasca, in timp ce untul rece nu se incorporeaza uniform si lasa cocoloase. Eu il scot din frigider cu aproximativ o ora inainte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar<\/strong> &#8212; cele 250 g de zahar nu indulcesc doar aluatul, ci ajuta untul sa inglobeze aer cand le bati impreuna, ceea ce da structura biscuitelui. Daca vrei un biscuite mai putin dulce, poti reduce putin cantitatea, dar nu prea mult, pentru ca zaharul contribuie si la rumenirea frumoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oua<\/strong> &#8212; cele 2 oua leaga aluatul si ii dau elasticitate, ca sa poti rula baghetele lungi fara sa crape. Scoate-le si pe ele din frigider mai devreme, pentru ca ouale reci pot sa taie crema de unt si zahar si sa o faca sa para branzoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vanilie<\/strong> &#8212; cele 2 lingurite de vanilie rotunjesc aroma. Daca ai esenta naturala sau extract de vanilie, acolo simti diferenta cel mai mult; gustul iese mai cald si mai profund decat la varianta sintetica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coaja rasa de portocala<\/strong> &#8212; cele 2 lingurite de coaja sunt sufletul acestor biscuiti. Rade doar partea portocalie, nu si albul de dedesubt, care e amar. Foloseste portocale bine spalate, ideal netratate, si rade-le chiar inainte de a le pune in aluat, ca sa nu se piarda uleiurile aromate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> &#8212; cele 500 g de faina dau structura. Incorporeaz-o treptat si opreste-te cand aluatul devine faramicios, dar se aduna. Daca framanti prea mult, dezvolti glutenul si biscuitii ies tari in loc de fragezi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praf de copt<\/strong> &#8212; cele 4 g de praf de copt dau o usoara crestere, ca biscuitii sa nu fie compacti. Verifica termenul de valabilitate: un praf de copt vechi nu mai lucreaza si lasa biscuitii plati.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte<\/strong> &#8212; sfertul de cana de lapte se foloseste pentru a unge biscuitii inainte de copt. El ajuta susanul sa se prinda si da un luciu frumos si o crusta aurie la suprafata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Susan negru<\/strong> &#8212; cele 2 linguri de susan negru sunt pentru topping. Da un contrast vizual frumos pe biscuitele auriu si o nota usor prajita. Daca preferi, poti folosi si susan alb, dar negrul iese mai spectaculos vizual.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bate untul cu zaharul, ouale, vanilia si coaja de portocala pana obtii o crema deschisa la culoare si pufoasa. Aceasta etapa inglobeaza aer si decide cat de fragezi ies biscuitii, asa ca nu o grabi.<\/li>\n<li>Cand incorporezi faina, opreste-te de indata ce aluatul devine faramicios, dar se leaga cand il aduni in mana. Greseala cea mai frecventa e framantatul excesiv, care intareste biscuitii.<\/li>\n<li>Rupe bucati cam cat o lingura si ruleaza-le in baghete subtiri de aproximativ 30 cm, apoi rasuceste-le in spirala sau impleteste-le. Daca aluatul se lipeste, fa-ti palmele putin reci sau pune aluatul cinci minute la frigider.<\/li>\n<li>Stii ca biscuitii sunt gata cand s-au rumenit uniform si au un miros cald de vanilie si portocala in bucatarie, in jur de 25 de minute la 180 C. Stai langa cuptor spre final, pentru ca trec repede de la auriu la prea copt.<\/li>\n<li>Lasa-i sa se raceasca complet pe gratar inainte sa-i muti in cutie. Dupa ce s-au racit complet, asaza-i intr-o cutie inchisa ermetic, la temperatura camerei, unde raman buni mai multe zile. Daca vrei sa-i tii mai mult, ii poti congela dupa coacere si racire: pune-i intr-o punga sau cutie etansa si scoate-i cu cateva ore inainte, la temperatura camerei. Poti modela biscuitii si cu o zi inainte, sa-i tii pe tava in frigider, apoi sa-i coci direct cand ai nevoie de ei proaspeti pentru masa de Paste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca esti in cautare de inspiratie pentru sarbatori, arunca o privire si peste alte retete care merg de minune pe masa de Paste.
