Se prepara din faina, lapte vegetal, aquafaba si unt vegan, apoi se rumeneste la 200 C timp de 30-40 de minute. Iese o clatita mare, pufoasa la margini, perfecta la micul dejun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ador reteta clasica de Dutch Baby, asa ca m-am gandit sa testez o varianta fara oua, lapte sau unt, pentru cei care nu consuma aceste alimente. La aspect nu iese chiar identica cu cea originala, insa rezultatul m-a cucerit: are aceleasi margini inalte si rumene si acel centru moale care face din clatita asta un mic spectacol cand o scoti din cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O fac mereu in tigaia de fonta, la cuptor, si o servesc, ca de obicei, la micul dejun sau la brunch. Imi place ca o pun la copt si pot sa pregatesc intre timp cafeaua si fructele, iar cand o scot e gata sa fie presarata cu zahar pudra si decorata. pe margini. Foloseste faina alba obisnuita si cantareste-o, daca poti, in loc sa o masori cu cana \u2014 90 g sunt exact cat trebuie pentru un aluat fluid, dar nu apos. Daca pui prea multa faina, clatita iese deasa si nu mai creste frumos la margini.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Aquafaba<\/strong> este lichidul dintr-o conserva de naut si inlocuieste ouale din reteta clasica. Batuta cu mixerul devine spumoasa si inglobeaza aer, exact ce ajuta clatita sa se umfle la cuptor. Foloseste lichidul ca atare, fara sa il diluezi, si mixeaza-l pana se face spumos si usor opac \u2014 acolo e secretul texturii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele vegan<\/strong> hidrateaza faina si leaga aluatul. Eu il combin intai cu zeama de lamaie si il las deoparte pana se inchega putin, ca un fel de lapte batut vegetal \u2014 asta da un plus de aciditate care reactioneaza cu praful de copt si ajuta cresterea. Merge orice lapte vegetal neindulcit, de soia, de ovaz sau de migdale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul vegan<\/strong> se topeste in tigaia de fonta inainte de a turna aluatul si formeaza stratul gras peste care clatita prinde marginile crocante. Topeste-l direct in tigaie, la cuptor, pana e complet lichid si tigaia e bine incinsa \u2014 abia atunci torni aluatul, ca sa auzi acel sfarait care anunta marginile rumene.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun si praful de copt<\/strong> sunt cantitati mici, dar importante. Zaharul brun adauga o nuanta usor caramelizata, iar praful de copt, impreuna cu aciditatea din lapte si aquafaba, da volumul. Nu mari cantitatea de praf de copt sperand ca va creste mai mult \u2014 un sfert de lingurita e suficient, altfel apare un gust amarui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fructele proaspete<\/strong> pentru decor echilibreaza dulceata si aduc prospetime. Daca torni aluatul intr-o tigaie calduta, clatita nu mai prinde marginile inalte si rumene \u2014 caldura puternica de la fonta e cea care o face sa creasca brusc.<\/li>\n<li>Bate aquafaba pana devine spumoasa, nu doar pana se amesteca. Aerul inglobat e ce tine locul oualelor, asa ca lasa mixerul sa lucreze pana lichidul se albeste si face spuma fina.<\/li>\n<li>Nu deschide cuptorul in primele 25 de minute. Scaderea brusca de temperatura face clatita sa se lase, exact ca la un sufleu. Stii ca e gata cand marginile sunt bine rumenite si umflate.<\/li>\n<li>Amesteca aluatul doar pana se omogenizeaza. Daca il bati prea mult dupa ce ai adaugat faina, dezvolti glutenul si clatita iese tare in loc de moale la mijloc.<\/li>\n<li>Serveste-o imediat. Dutch Baby arata cel mai spectaculos in primele minute dupa ce iese din cuptor, cand marginile sunt inca inalte; pe masura ce se raceste, se mai lasa, dar ramane la fel de gustoasa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta fara gluten:<\/strong> inlocuieste faina alba cu un mix fara gluten.
