Nu contine lapte, oua sau unt de origine animala, asa ca este perfecta si pentru perioadele de post. A fost un succes printre prietenii mei, chiar si printre cei care nu sunt vegani. Desi poate fi numita si cheesecake, care de obicei se serveste rotund, am ales sa o prepar intr-o tava dreptunghiulara si sa o tai in patratele mici, fiind mult mai usor si mai practic de servit asa.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De ce functioneaza aceasta combinatie de ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul unei creme de cheesecake vegan cremoase, fara branza, sta in doua ingrediente: caju crud si tofu silken. Cajul, inmuiat in apa fierbinte, se transforma intr-o pasta catifelata care da bogatie si textura, in timp ce tofu silken aduce o consistenta matasoasa si o nota neutra ce lasa aroma de vanilie si lime sa iasa in fata. Crema de cocos adauga grasimea care fixeaza totul, iar amidonul de porumb impreuna cu faina ajuta crema sa se intareasca la coacere, ca sa obtii feliile ferme, nu lichide.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru blat, biscuitii vegani macinati si untul vegan topit formeaza baza clasica de cheesecake: untul leaga firimiturile si, dupa precoacere, se intareste in racire intr-un strat crocant care nu se sfarama cand tai. Acest pas nu este unul pe care sa-l sari: cajul neinmuiat ramane granulos si nu se va omogeniza niciodata complet in blender, iar crema va iesi nisipoasa. Daca ai timp, il poti lasa si la inmuiat in apa rece peste noapte, rezultatul fiind o crema chiar mai fina. Scurge bine cajul inainte sa-l adaugi in blender, ca sa nu diluezi crema cu apa in plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un blender puternic face diferenta aici. Proceseaza compozitia pana devine complet omogena si cremoasa, oprindu-te din cand in cand sa razuiesti peretii vasului. Cu cat crema e mai neteda inainte de coacere, cu atat textura finala va fi mai placuta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Baia de apa si semnele ca prajitura e gata<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta foloseste tehnica baii de apa, adica asezi tava cu prajitura intr-o tava mai mare cu apa, in timp ce coace la 180 C. Aburul blandeste caldura din jurul cremei si o ajuta sa se coaca uniform, fara crapaturi la suprafata si fara margini prea uscate. Este acelasi truc folosit la cheesecake-urile clasice si merita efortul de un minut in plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dupa aproximativ 60 de minute, crema trebuie sa fie ferma la margini, dar inca usor tremuratoare la mijloc atunci cand misti tava &#8212; se va fixa complet pe masura ce se raceste. Nu o supracoace asteptand ca centrul sa fie complet intarit, pentru ca atunci marginile vor fi prea tari. Presara un amestec de zahar brun si zahar alb peste suprafata racita, intr-un strat subtire si uniform, apoi topeste-l cu un flambator de bucatarie pana se caramelizeaza si capata o nuanta chihlimbarie. Misca flacara constant, ca sa nu arzi zaharul intr-un singur loc &#8212; vrei sticla aurie, nu pete negre amare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un detaliu important: caramelizeaza zaharul cat mai aproape de momentul servirii. Crusta de creme brulee este cea mai spectaculoasa cand e proaspata si inca crocanta, pentru ca in contact cu crema rece si cu umiditatea din frigider se inmoaie in cateva ore. Daca nu ai flambator, poti incerca grillul cuptorului cateva minute, dar supravegheaza atent, fiindca zaharul se arde foarte repede.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o portionezi si cum o pastrezi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Taie prajitura in patratele cu un cutit curat, sters intre felii, ca sa obtii margini frumoase. Faptul ca o coci intr-o tava dreptunghiulara, in loc de forma rotunda clasica, o face mult mai usor de portionat si de servit la o masa cu multi invitati. Pastreaza prajitura la frigider, intr-un recipient acoperit, unde rezista cateva zile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tine minte ca, daca o pastrezi mai mult, crusta caramelizata se va inmuia, asa ca ideal este sa flambezi zaharul portie cu portie, chiar inainte de servire.
