Facut din lapte de vaca si este maturat timp de cel putin un an, este foarte versatile mai ales ca se topeste foarte bine la temperatura ridicata.<\/p><p><strong>Mozzarella<\/strong>, alta branza italiana clasica, este facuta fie din lapte de bivolita, fie de vaca. Cremoasa si moale, se topeste excelent insa nu adauga cremozitate sosurilor, mai ales ca se intareste la loc cand se raceste. De aceea trebuie adaugata in cantitate mai mica in sosul de paste, insa merge foarte bine pe pizza.<\/p><p><strong>Pecorino <\/strong>este similar cu parmezanul, ferm si cu gust intens, usor picant, insa preparate din lapte de oaie. Fontina este o branza semi-tare, originara din nord-vestul Italiei. Are o textura catifelata si un gust dulce, ca de nuca. E delicioasa in sandvisuri sau pe bruschete. Se topeste usor, deci o poti folosi cu incredere la preparate gratinate.<\/p><p>Uneori, mai ales la paste, se adauga si <strong>ricotta <\/strong>&#8211; o branza proaspata, din zer, cu o textura fina, cremoasa si un gust dulce-acrisor. Asadar pe langa clasica Gorgonzola, nelipsita din acest sos, am ales sa adaug Taleggio (o alta branza \u2018puturoasa\u2019 dar care se afla printer preferatele mele), Cheddar maturat care are o aroma puternica si Gouda care se gratineaza excellent.<\/p><p><strong>Gouda<\/strong> este o branza semi-tare, olandeza. O folosesc fie in sandvisuri, fie pentru gratinare sau pe pizza.<\/p><p><strong>Taleggio<\/strong> este o branza italiana moale, cu un miez cremos. Este de departe branza mea preferata, dar atentie, sa o depozitati intr-o caserola ermetica deoarce riscati sa imputiti toata casa cu ea! Pe cat de urat miroase pe atat e gustul de intens si placut. Are note de ciuperci si fan. Se potriveste perfect intr-un panini, in sosuri sau pe un platou de branzeturi.<\/p><p><strong>Cheddar-ul<\/strong> este destul de cunoscut, are o culoare galben-pal cu un gust puternic si sarat.
