Rezultatul: straturi cremoase la mijloc, o crusta aurie deasupra si un echilibru perfect intre dulce si sarat. De obicei o folosesc tocmai pentru acel joc de texturi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bineinteles ca imi plac gratinurile si cu cartofi obisnuiti, dar recent am descoperit ceva ce m-a cucerit: gratinarea potenteaza aroma dulce a cartofilor dulci, mai ales cand intra in joc o branza speciala precum Gruyere. Cei cu miez portocaliu intens sunt cei mai dulci si dau cea mai frumoasa culoare gratinului. Decojeste-i si taie-i in felii subtiri si egale; grosimea uniforma e ceea ce face ca toate straturile sa fie gata in acelasi timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Frisca lichida<\/strong> &#8212; ea da cremozitatea preparatului. Foloseste frisca lichida cu un continut bun de grasime, pentru ca grasimea e cea care leaga straturile si nu se taie la caldura. Inainte de a o turna peste cartofi, o incalzesti usor, pana se formeaza primele bule la suprafata, ca sa apuce sa preia aroma de salvie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Salvie<\/strong> &#8212; foloseste de preferinta frunze proaspete, care elibereaza un parfum mult mai aromat decat cea uscata. Cinci pana la zece frunze sunt suficiente; salvia e puternica, asa ca nu exagera. Trucul e sa o lasi sa se infuzeze in frisca calda 5-10 minute, cat sa cedeze aroma fara sa devina amaruie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza Gruyere<\/strong> &#8212; aceasta e branza speciala care face reteta. Are o aroma intensa, usor de nuca, si se topeste superb intr-o crusta aurie. Cumpara-o bucata si rade-o tu acasa, pentru ca cea ambalata deja rasa contine adesea agenti anti-aglomerare care impiedica topirea uniforma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt<\/strong> &#8212; il folosesti pentru a unge caserola de gratin, ca feliile de cartof sa nu se lipeasca si ca marginile sa capete o aroma frumoasa la coacere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sare si piper<\/strong> &#8212; le adaugi in frisca dupa ce ai luat-o de pe foc, ca sa condimenteze tot preparatul din interior. Cartofii dulci suporta bine condimentarea, asa ca nu te sfii sa gusti amestecul de frisca inainte de a-l turna.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Taie feliile cat mai subtiri si egale.<\/strong> O mandolina de legume sau un robot cu disc iti dau felii uniforme; daca felii inegal, unele straturi raman tari in timp ce altele se inmoaie prea tare.<\/li>\n<li><strong>Nu sari peste infuzarea fristei.<\/strong> Cele 5-10 minute in care salvia sta in frisca calda, cu capac, sunt momentul in care preparatul isi capata aroma. Daca torni frisca rece direct peste cartofi, gustul ramane plat.<\/li>\n<li><strong>Coace acoperit, apoi descoperit.<\/strong> Cele 40 de minute cu capac fac cartofii sa se gateasca in abur si sa ramana cremosi; abia la final, cand presari Gruyere si lasi descoperit 10 minute, se formeaza crusta aurie.<\/li>\n<li><strong>Verifica branza cu ochiul.<\/strong> Stii ca e gata cand Gruyere s-a topit complet si a prins puncte rumene-aurii la suprafata. Aroma va fi putin diferita, dar tot delicioasa.<\/li>\n<li><strong>Alta planta aromatica.<\/strong> In locul salviei poti infuza frisca cu cimbru sau rozmarin; ambele se potrivesc cu dulceata cartofului dulce.<\/li>\n<li><strong>Mix de cartofi.<\/strong> Combina cartofi dulci cu cartofi albi obisnuiti pentru un gratin cu doua culori si o dulceata mai temperata.<\/li>\n<li><strong>Un plus de aroma.<\/strong> O urma de nucsoara rasa sau un catel de usturoi pus in frisca la infuzat aduc un strat suplimentar de gust, fara sa acopere cartoful.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Gratinul se pastreaza foarte bine. Dupa ce s-a racit, acopera caserola sau pune portiile intr-un recipient inchis ermetic si tine-le la frigider 3-4 zile. La reincalzire, da-le cateva minute la cuptor ca sa-si recapete crusta; la microunde se incalzesc repede, dar crusta nu mai ramane crocanta. Poti asambla preparatul cu cateva ore inainte, sa-l tii la frigider acoperit si sa-l bagi la cuptor chiar inainte de masa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu cartof dulce, vei gasi multe idei in colectia mea de <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-cartofi-dulci\/\">retete cu cartofi dulci<\/a>.
