Se face intr-o singura oala si un singur vas de cuptor, fara tehnici complicate. Coaja portocalei este ingredientul aromatic principal &#8212; spala bine portocala cu apa calda si bicarbonate inainte de razuire. Portocalele mici si coapte au de obicei coaja mai aromata decat cele mari. Scoate sucul la temperatura camerei &#8212; portocalele reci dau mai putin suc.<\/p><p><strong>Ouale<\/strong> &#8212; Ouale de tara cu galbenus portocaliu dau o culoare mai intensa prajiturii si o aroma mai bogata. Foloseste ouale la temperatura camerei &#8212; se incorporeaza mai bine in aluat decat cele reci din frigider. Separa albusurile de galbenusuri si bate albusurile spuma daca vrei un blat mai pufos; pentru o textura mai densa de budinca, ouale pot fi incorporate intregi.<\/p><p><strong>Faina<\/strong> &#8212; Faina alba obisnuita da blatul clasic. Pentru varianta fara gluten, inlocuieste cu mix de faina fara gluten de patiserie (ex. Mix C Patisserie de la Schar sau un mix similar) in aceeasi cantitate. Nu folositi faina de orez singura sau faina de migdale &#8212; texturile sunt prea diferite si prajitura nu va iesi la fel.<\/p><p><strong>Untul<\/strong> &#8212; Untul la temperatura camerei se incorporeaza mai usor si da o textura mai fina decat cel rece sau topit. Razi doar stratul portocaliu exterior, nu miezul alb amar de dedesubt.<\/li>\n\n<li>Nu amesteca excesiv aluatul dupa ce ai adaugat faina. Amestecarea in exces dezvolta glutenul si da o prajitura densa si cauciucoasa. Incorporeaza faina cu miscari line, de jos in sus, pana dispare complet &#8212; nu mai mult.<\/li>\n\n<li>Tapeteaza tava cu hartie de copt si unge-o cu unt. Budinca umeda se lipeste usor de tava daca nu e bine pregatita. Hartia de copt pe fund si unt pe laterale asigura o scoatere usoara fara a rupe prajitura.<\/li>\n\n<li>Verifica coacerea cu scobitoarea in centrul prajiturii &#8212; trebuie sa iasa curata sau cu urme foarte mici de aluat umed (stratul de curd de la baza poate da o scobitoare usor umeda, ceea ce e normal). Cuptor la 170-180 grade, nu mai mult.<\/li>\n\n<li>Lasa prajitura sa se raceasca complet in tava inainte de a o rasturna sau taia. Budinca calda este fragila &#8212; la racire se intareste si se taie fara probleme.<\/li><\/ul><h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2><p><strong>Toppinguri recomandate<\/strong> &#8212; Prajitura arata bine si simpla (culoarea portocalie naturala este atractiva), dar poti adauga: inghetata de vanilie alaturi pentru contrast de temperatura; frisca naturala pus cu posul pe suprafata; felii subtiri de portocale proaspete sau caramelizate; fulgi de ciocolata amaruie &#8212; ciocolata si portocala este o combinatie clasica.<\/p><p><strong>Cu lamaie sau grapefruit<\/strong> &#8212; Inlocuieste portocalele cu lamaie (jumatate din cantitate, mai acid) sau cu grapefruit pentru o nota mai amara si mai adulta. La rece devine si mai densa si aroma de portocala se intensifica &#8212; multi o prefera a doua zi.<\/p><p>Se poate congela taiata in felii individuale, invelite in folie alimentara, pana la 2 luni. Dezgheteaza la frigider peste noapte sau la temperatura camerei 1-2 ore. Nu reincalzi la microunde &#8212; textura de budinca devine cauciucoasa. Serveste rece sau la temperatura camerei.<\/p><p>Se poate face cu o zi inainte fara probleme &#8212; de fapt e recomandat pentru evenimente sau musafiri, deoarece se taie mai bine si mai ingrijit dupa
