Se gatesc in mai putin de 20 de minute, intr-o singura tigaie, iar untul, usturoiul si smantana se transforma intr-un sos catifelat care imbraca fiecare fir de bucatini. Are un gust inconfundabil si adauga o aroma umami oricarui fel de mancare in care o pui. Fiind o fana a bucatariei asiatice, ingredientele traditionale japoneze sunt printre preferatele mele, pentru ca mereu aduc un strop de magie si savoare in bucatarie. Inspirata de gustul ei specific, am vrut sa o folosesc si pentru un <a href=\"https:\/\/gourmandelle.com\/ro\/tipuri-de-sos-de-paste\/\">sos de paste<\/a>, asa ca a iesit reteta aceasta, care imbina <a href=\"https:\/\/gourmandelle.com\/ro\/bucataria-italiana\/\">pasiunea italiana<\/a> pentru paste cu un ingredient pe care il iubesc din bucataria japoneza.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce ingrediente iti trebuie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Lista de ingrediente este scurta, dar fiecare are rolul lui. Pasta de miso este sufletul retetei: ii da gustul sarat-fermentat, adanc, pe care nu il poti reproduce cu altceva. Eu folosesc de obicei miso alb sau galben, care e mai bland si mai dulceag; daca ai miso rosu, fiind mai intens, foloseste putin mai putin la inceput si gusta pe parcurs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Untul si smantana dau cremozitatea, iar fulgii de drojdie inactiva adauga un plus de savoare brand-zoasa, asemanatoare branzei. Susanul rumenit si nori prajit nu sunt doar decor: susanul prajit (goma) si noriul prajit sunt printre preferatele mele si dau acel finisaj crocant si parfumat care face diferenta. In primul rand, pastreaza intotdeauna o jumatate de cana din apa in care au fiert pastele inainte sa o scurgi. Apa de paste este amidonoasa si, adaugata in sos, il leaga si ii da textura matasoasa, ajutand sosul sa se prinda de paste in loc sa alunece de pe ele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Al doilea detaliu important: nu adauga pasta de miso pe foc foarte mare si nu o lasa sa fiarba in clocot. Miso este un ingredient fermentat, iar caldura excesiva ii estompeaza aroma vie si poate scoate o nota amaruie. Adaug-o la foc mediu, dizolva-o bine in apa de paste, apoi incorporeaza smantana si drojdia inactiva si amesteca pana obtii o textura omogena. La final, gateste pastele in sos in jur de 3 minute, amestecandu-le continuu, ca sa absoarba cat mai mult din el.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o faci vegana<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta in forma de baza este vegetariana, dar o transformi usor in varianta complet vegana fara sa pierzi nimic din cremozitate. O salata verde simpla sau niste legume la abur echilibreaza perfect cremozitatea sosului. Daca vrei sa ramai in registrul asiatic si sa faci un meniu complet, le poti servi inainte sau alaturi de o <a href=\"https:\/\/gourmandelle.com\/ro\/supa-miso\/\">supa miso<\/a> calda. Daca iti raman, pune-le intr-un recipient inchis ermetic si tine-le la frigider pana la 2 zile. La reincalzire, sosul tinde sa se ingroase, asa ca adauga 1-2 linguri de apa sau de lapte vegetal in tigaie si incalzeste-le la foc mic, amestecand, pana redevin cremoase. Susanul si noriul ii adaugi proaspat, de fiecare data, ca sa ramana crocante. Nu recomand congelarea, fiindca sosul pe baza de smantana sau iaurt se poate taia la dezghetare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti place sa explorezi mai multe arome japoneze in bucatarie, cauta si celelalte retete din sectiunea de <a href=\"https:\/\/gourmandelle.com\/ro\/bucataria-asiatica\/\">bucatarie asiatica<\/a> de pe blog.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca incerci aceste paste cu sos miso, mi-ar placea tare mult sa stiu cum ti-au iesit: lasa-mi un comentariu cu ce fel de miso ai folosit si daca ai mers pe varianta cu smantana sau pe cea vegana, si nu uita sa dai o nota retetei.
