Conopida rumenita aduce o dulceata fina si o textura matasoasa, iar tahini, lamaia si chimionul ii dau acel gust autentic de humus. Se face din ingrediente simple, intr-un robot de bucatarie, si e gata in mai putin de o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca imi urmariti blogul de ceva timp, atunci cu siguranta ati observat ca am o <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-humus-de-la-0\/\">obsesie pentru humus<\/a>. Am tot felul de experimente cu acest fel de mancare si tot nu m-am plictisit de el. O desfaci in buchetele de 5-6 cm ca sa se coaca uniform. <strong>Nautul din conserva<\/strong> da consistenta cremoasa si proteina; pastreaza zeama (aquafaba) din conserva, fiindca o vei folosi ca sa subtiezi compozitia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tahini<\/strong> (pasta de susan) este ingredientul care transforma o simpla pasta de legume intr-un humus adevarat &#8212; ii da onctuozitate si acel gust usor amarui caracteristic. <strong>Zeama de lamaie<\/strong> echilibreaza grasimea si inviora totul, iar <strong>chimionul<\/strong> aduce nota calda, pamantie. Pentru topping, <strong>mugurii de pin prajiti<\/strong> adauga crocant, iar <strong>sumacul<\/strong> presarat la final da o aciditate fina si culoare. Uleiul de masline, usturoiul, sarea, piperul si un varf de chili intregesc gustul.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul: coace conopida ca lumea<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aici se decide totul. Conopida cruda are un gust apos si vegetal; conopida coapta devine dulce, nuciu si cremoasa, exact ce ai nevoie pentru un humus catifelat. Imprastie buchetelele intr-un singur strat pe tava, stropeste-le cu ulei de masline si lasa-le sa se rumeneasca pana prind margini aurii. Marginile acelea inseamna zaharurile naturale care s-au caramelizat, iar ele aduc adancimea de gust din vasul final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta foloseste 180 C pentru 30 de minute, dar daca vrei o rumenire mai intensa, conopida suporta bine si o temperatura mai mare &#8212; de obicei, temperatura de 200-220 de grade Celsius este ideala pentru o crusta mai aurie. Nu inghesui buchetelele pe tava: daca stau una peste alta, se aburesc in loc sa se rumeneasca. Lasa-le spatiu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udca1 Trucul retetei: coci toata conopida, dar folosesti doar jumatate in robot. Cealalta jumatate ramane intreaga, pentru topping. Mixeaza compozitia cel putin 5-8 minute inainte sa adaugi tahini, apoi inca 2-3 minute dupa. Pare mult, dar acest timp lung de procesare sparge fibrele si emulsioneaza grasimile, asa ca pasta devine aerata si fina, nu granuloasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca pasta iese prea groasa, adauga zeama de la conserva de naut, lingura cu lingura, pana ajungi la consistenta dorita. E mai bine sa folosesti aquafaba decat apa simpla &#8212; pastreaza gustul si ajuta la cremozitate. Gusta la final si ajusteaza: mai multa lamaie daca vrei prospetime, mai multa sare daca gustul pare plat, un varf de chili in plus daca iti place picant. Pentru savoare poti condimenta conopida si cu usturoi granulat, turmeric sau praf de curry, daca vrei sa experimentezi cu arome diferite.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce se serveste si cum il pastrezi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Humusul de conopida se serveste cu lipii calde, paine prajita, muraturi sau masline, alaturi de buchetelele de conopida rumenite, mugurii de pin si un praf de sumac deasupra. Merge minunat intr-o platou de aperitive sau ca dip alaturi de legume crude. Daca vrei sa explorezi si alte variante, am o gramada de idei in colectia mea de <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-conopida\/\">retete cu conopida<\/a>, plus alte humusuri precum <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-ardei-gras-copt\/\">humus cu ardei gras copt<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/humus-simplu\/\">humusul simplu<\/a> de fiecare zi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se pastreaza foarte bine la frigider, intr-un recipient inchis etans, 4-5 zile. Pastreaza toppingul (conopida, mugurii de pin, sumacul) separat si presara-l doar la servire, ca sa ramana crocant. Daca se ingroasa la rece, adauga putina zeama de naut sau ulei de masline si amesteca. Nu recomand congelarea, fiindca textura cremoasa se schimba dupa dezghetare.
