Reteta este simpla, fara pectina adaugata &#8212; lamaile contin suficienta pectina naturala. Petalele de trandafiri de Damasc dau cea mai intensa aroma, dar orice trandafir netratat chimic functioneaza. Trandafirii de gradina crescuti natural, cei de la bunici sau cei cultivati de tine sunt ideali. Trandafirii din florarie sunt tratati chimic si nu sunt comestibili. Trandafirii de Damasc (Rosa damascena) si trandafirii de cent petale (Rosa centifolia) dau cea mai buna aroma, dar orice trandafir aromat, netratat, functioneaza. Culege florile dimineata, imediat dupa ce s-au deschis, cand aroma este la maxim. Evita florile vechi sau partial ofilite &#8212; au o aroma mai slaba si pot da un gust usor amar.<\/p><p><strong>Pregatirea petalelor<\/strong> &#8212; Spala petalele sub jet de apa rece si scutura-le bine. Unele retete recomanda taierea bazei albe a fiecarei petale (partea alba, mai amara) &#8212; eu am sarit peste acest pas si am folosit petalele intregi fara diferenta notabila de gust. Daca trandafirii tai sunt foarte aromati, nu e necesar. Daca sunt mai putin parfumati, taierea bazei poate reduce usorul amarui.<\/p><p><strong>Zaharul<\/strong> &#8212; Zaharul alb obisnuit pastreaza culoarea rozalie-transparenta a dulcetii. Zaharul brun sau mierea vor inchide culoarea si vor adauga arome proprii care pot concura cu parfumul trandafirilor. Cantitatea de zahar este importanta si pentru conservare &#8212; nu reduce semnificativ cantitatea daca vrei sa pastrezi dulceata mai mult de cateva saptamani.<\/p><p><strong>Lamaile<\/strong> &#8212; Sucul de lamaie are doua roluri: pectina naturala (ajuta la gelificare) si acidul citric (echilibreaza dulcele si ajuta la conservare). Foloseste lamai proaspete, nu suc de lamaie din sticla. La foc mare se caramelizeaza zaharul si se pierde culoarea rozalie si aroma delicata a trandafirilor. Dulceata buna de trandafiri trebuie sa aiba o culoare roz-rosiatica transparenta, nu maro.<\/li>\n<li>Sterge spuma care se formeaza la suprafata in timpul fierberii cu o lingura sau o spatula. Spuma da o culoare tulbure dulcetii.<\/li>\n<li>Testeaza gelifierea pe o farfurie rece: pune o lingurita de dulceata pe o farfurie tinuta la congelator 5 minute. Daca se increteste cand o impingi cu degetul, dulceata e gata. Daca e inca lichida, mai fierbe 5-10 minute si repeta testul.<\/li>\n<li>Sterilizeaza borcanele inainte: spala-le bine si tine-le in cuptorul incins la 120\u00b0C timp de 15 minute, sau fierbe-le in apa 10 minute. Apa de trandafiri se gaseste in magazinele de produse orientale sau bio. Nu adauga prea mult &#8212; aroma devine artificiala si coplesitoare daca exagerezi.<\/p><p><strong>Cu petale de lavanda<\/strong> &#8212; Inlocuieste 20-30% din petale cu lavanda proaspata pentru o dulceata florala cu doua note de aroma. Cantitate mica de lavanda &#8212; e intensa.<\/p><p><strong>Sirop de trandafiri in loc de dulceata<\/strong> &#8212; Daca nu vrei sa astepti gelifierea, opreste fierberea mai devreme, cand siropul e inca lichid. Siropul de trandafiri se foloseste in bauturi, limonade, kombucha sau drizzled peste inghetata. Inspiratie: <a href=\"https:\/\/gourmandelle.com\/ro\/ghid-pentru-kombucha\/\"><strong>kombucha<\/strong><\/a>.<\/p><p><strong>Utilizari ale dulcetii de trandafiri<\/strong> &#8212; Pe paine prajita cu unt, stirata in iaurt grecesc, ca umplutura pentru macarons sau tarte, dizolvata intr-un ceai cald, sau ca topping pentru inghetata de vanilie. Dupa deschidere, pastreaza borcanul la frigider si consuma in 4-6 saptamani. Eticheteaza fiecare borcan cu data prepararii.<\/p><p>Semnele ca dulceata s-a alterat: mucegai vizibil la suprafata sau pe capac, miros acrisor sau fermentat, culoare inchisa sau aspect tulbure neobisnuit.
