Iaurtul grecesc autentic este strecurat, deci mai dens si mai putin acru decat iaurtul obisnuit, iar asta conteaza pentru ca primeste deasupra ouale calde si sosul de unt. Scoate-l din frigider cu cateva minute inainte: la temperatura camerei nu va raci la fel de tare ouale posate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oua<\/strong> &#8212; pentru oua posate reusite, foloseste oua cat mai proaspete. Un ou proaspat are albusul mai dens, care se strange frumos in jurul galbenusului in loc sa se disperseze in apa. Daca nu esti sigur de prospetime, pune oul intr-un pahar cu apa: daca ramane pe fund, este proaspat; daca pluteste, e mai bine sa il folosesti in alta reteta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt<\/strong> &#8212; untul topit este vehiculul care duce aroma condimentelor pe farfurie. Topeste-l la foc mediu si urmareste-l: vrei sa devina aromat, nu ars. Cand adaugi fulgii de chili si boiaua in untul cald, grasimea extrage culoarea si aroma condimentelor, transformand untul intr-un sos rosiatic, parfumat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de chili si boia afumata<\/strong> &#8212; acestea dau caracterul sosului. Fulgii de chili aduc picanteria, iar boiaua afumata aduce o nota adanca, usor afumata, care se potriveste perfect cu iaurtul rece. Adauga-le doar dupa ce ai oprit focul sau spre final, pentru ca boiaua se arde repede si capata gust amar daca o tii prea mult pe foc intens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; merge pisat si crud in iaurt, unde isi pastreaza intensitatea. Doi catei sunt suficienti pentru un gust prezent, dar nu coplesitor. Daca preferi o aroma mai blanda, freaca interiorul bolului cu un catel taiat in jumatate in loc sa il pisezi &#8212; vei avea doar o urma de usturoi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Menta, marar si seminte de rodie<\/strong> &#8212; mararul si menta tocata se amesteca in iaurt si aduc prospetime, in timp ce menta proaspata si semintele de rodie de deasupra dau culoare si o nota acrisoara-dulce care echilibreaza grasimea untului. Miscarea apei infasoara albusul in jurul galbenusului si iti da o forma ordonata, nu albus risipit prin toata cratita.<\/li>\n<li><strong>Adauga otetul in apa.<\/strong> Lingura de otet ajuta albusul sa se coaguleze mai repede, asa ca ramane strans in jurul galbenusului. Nu folosi prea mult, altfel ouale capata gust acru.<\/li>\n<li><strong>Urmareste timpul si textura.<\/strong> Circa 3 minute sunt suficiente: stii ca oul e gata cand albusul este ferm la atingere, iar galbenusul inca cedeaza usor sub deget si ramane moale in interior.<\/li>\n<li><strong>Nu lasa boiaua sa se arda.<\/strong> Cea mai frecventa greseala la sosul de unt este sa tii condimentele prea mult pe foc puternic.
