Untul si iaurtul ii dau o textura fina si umeda, iar lichiorul intareste aroma de lamaie. Se face usor si are gust intens de citrice.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place sa cred ca checurile insiropate cu lichior sunt mici comori de familie, pentru ca, initial, reteta de Limoncello era pastrata ca un secret de familie, transmisa din generatie in generatie. Acelasi spirit l-am pus si in checul asta: nimic complicat, doar ingrediente bune si o doza buna de aroma de lamaie care se simte la fiecare imbucatura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un lucru bun de stiut inainte sa servesti: Limoncello este de obicei un lichior cu continut ridicat de alcool, de obicei intre 25% si 30% alcool. Trebuie sa fie moale, dar nu topit: cand apesi cu degetul, lasa urma, dar isi pastreaza forma. Untul prea rece nu inglobeaza aer cand il bati cu zaharul, iar cel topit face checul dens. Eu il scot din frigider cu o ora inainte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul<\/strong> nu indulceste doar, ci ajuta untul sa inglobeze aer atunci cand le bati impreuna. Cristalele de zahar taie practic mici buzunare de aer in unt, iar de acolo vine o parte din pufosenia checului. De aceea nu sari peste etapa de batut bine la inceput.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale<\/strong> trebuie incorporate unul cate unul, nu toate odata. Asa emulsia nu se taie si aluatul ramane omogen. Daca le pui pe toate dintr-o data, riscul e ca aluatul sa para branzit. Lasa-le si pe ele la temperatura camerei, se amesteca mai bine cu untul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba si praful de copt<\/strong> dau structura. Cu doar o jumatate de lingurita praf de copt, checul creste echilibrat, fara sa se umfle si apoi sa se lase. Amesteca faina doar pana se incorporeaza: daca o bati prea mult, dezvolti glutenul si checul iese cauciucat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coaja rasa de lamaie<\/strong> e sufletul aromei. Rade doar partea galbena, nu albul de dedesubt, care e amar. Foloseste lamai netratate sau spala-le bine, fiindca uleiurile aromate stau chiar in coaja. O lingura plina da un parfum clar, fara sa fie agresiv.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurtul gras<\/strong> aduce umiditate si o usoara aciditate care fragezeste miezul. Aciditatea lui reactioneaza cu praful de copt si ajuta checul sa creasca frumos. Alege un iaurt cu grasime, nu degresat: cel slab lasa miezul mai uscat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Limoncello<\/strong> apare in doua locuri: in sirop, peste checul cald, si in frisca. Fiind un lichior cu 25-30% alcool, da multa aroma. Cand insiropezi checul cald, o parte din alcool se evapora, dar in frisca ramane intact, asa ca tine cont de cui servesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana dulce lichida pentru frisca<\/strong> trebuie sa fie bine rece si cu minimum 30% grasime, altfel nu se bate ferm. O smantana cu grasime mica ramane lichida oricat ai bate-o. Tine si bolul rece daca poti, se monteaza mai repede.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul esential pur de lamaie<\/strong> e optional, dar intareste aroma de citrice in frisca. Foloseste doar ulei esential alimentar, pur, si doar 4-5 picaturi: e foarte concentrat, asa ca prea mult devine amarui si parfumat ca un sapun.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Bate bine untul cu zaharul<\/strong> pana obtii o spuma cremoasa, deschisa la culoare. Asta poate dura 3-4 minute cu telul electric. Aici se construieste pufosenia, asa ca nu te grabi.<\/li>\n<li><strong>Fa testul scobitorii.<\/strong> Checul e gata cand scobitoarea infipta in mijloc iese curata sau cu cateva firimituri uscate. Daca iese cu aluat umed, mai lasa-l 5 minute. Cu 35-40 de minute la 180 C esti pe drumul bun.<\/li>\n<li><strong>Insiropeaza checul cat e cald<\/strong>, imediat ce iese din cuptor. Miezul cald si poros absoarbe Limoncello-ul mult mai bine decat unul rece, iar siropul ajunge in toata felia.<\/li>\n<li><strong>Nu pune frisca pe checul cald.<\/strong> Lasa-l sa se raceasca complet, altfel frisca se topeste si curge. Rabdarea aici face diferenta dintre un decor frumos si o balta dulce.<\/li>\n<li><strong>Opreste-te din batut frisca la timp.<\/strong> E gata cand sta ferma si lasa varfuri moi. Pastreaza grasimea, ca de ea depinde umiditatea miezului.<\/li>\n<li><strong>Decor:<\/strong> in loc de frisca, poti face o glazura simpla din zahar pudra si suc de lamaie, pentru un finisaj mai lucios si mai acrisor.<\/li>\n<li><strong>Aroma:<\/strong> poti adauga in aluat si putina coaja de lime sau de portocala, langa cea de lamaie, pentru un buchet de citrice mai complex.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Checul insiropat, fara frisca, se pastreaza foarte bine. Tine-l acoperit, la temperatura camerei, 1-2 zile, sau la frigider pana la 4 zile. De fapt, a doua zi e adesea mai bun, pentru ca siropul de Limoncello apuca sa patrunda complet in miez. Decoreaza cu frisca abia inainte de servire, ca sa arate proaspat si sa nu se inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, coace checul cu o zi inainte si insiropeaza-l, apoi pastreaza-l acoperit. Frisca o poti bate si ea cu cateva ore inainte si o tii la rece. Daca vrei sa il congelezi, fa-o fara frisca: invelit bine, rezista pana la o luna, iar dupa decongelare il decorezi proaspat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta reteta, arunca o privire si peste <a href=\"https:\/\/gourmandelle.com\/ro\/tiramisu-limoncello\/\">tiramisu cu Limoncello<\/a> sau peste <a href=\"https:\/\/gourmandelle.com\/ro\/chec-cu-lime-margarita\/\">checul cu lime in stil margarita<\/a>.
