Recunosc ca ma asteptam sa fie complicat, dar aluatul fara ou se framanta superb si se intinde frumos, iar umplutura de ciuperci mi-a placut la nebunie. Am folosit ciupercile congelate, care imi scapa de spalat si curatat, si le-am combinat cu un sos de usturoi atat de cremos incat parea ca am pus smantana in el, desi nu e nicio picatura de lactate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am vrut sa va arat cum se prepara ravioli de casa pas cu pas si prin poze, insa lumina din bucatarie nu prea a fost de partea mea in ziua aceea, asa ca v-am explicat cat de bine am putut in reteta de mai jos. Folosesc faina alba obisnuita de grau, care are suficient gluten cat sa lege aluatul si sa il faca elastic. Secretul este sa framanti pana cand aluatul devine neted si nu se mai lipeste de maini &#8212; abia atunci glutenul s-a dezvoltat suficient cat foile sa se intinda subtiri fara sa se rupa. Daca aluatul iti pare prea moale, mai adauga putina faina, lingura cu lingura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile congelate<\/strong> sunt eroul umpluturii. Marele avantaj este ca sunt deja curatate si taiate, asa ca te scapa de spalat si feliat. Nu trebuie sa le dezghetati inainte &#8212; le pui direct in tigaie, iar ele isi lasa apa in timpul calirii. Tocmai de aceea le lasi la foc mediu 10-15 minute, ca toata acea apa sa se evapore; daca grabesti acest pas, umplutura ramane apoasa si iti uda foile de ravioli.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrul proaspat<\/strong> face diferenta intre o umplutura banala si una cu adevarat aromata. Folosesc frunzele de pe 4-5 fire, pe care le trag de pe tulpina cu degetele &#8212; tulpinile sunt lemnoase si nu se mananca. Cand cumperi cimbru, alege fire verzi, fara pete maronii, iar la nevoie il poti inlocui cu cimbru uscat, dar pune doar o treime din cantitate, fiindca uscat e mult mai concentrat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Nucsoara<\/strong> este condimentul-surpriza care leaga totul. Un simplu varf, jumatate de lingurita macinata, da umpluturii de ciuperci acea caldura discreta pe care nu o identifici imediat, dar care lipseste daca o omiti. Daca ai nucsoara intreaga si o razuiesti pe loc, aroma e si mai puternica &#8212; nucsoara macinata isi pierde din intensitate dupa cateva luni in borcan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> sunt ingredientul care da sosului acel gust savuros, usor de branza, fara sa folosesti niciun produs lactat. Atentie sa cumperi drojdie inactiva (nutritionala), nu drojdie pentru paine &#8212; sunt lucruri complet diferite. Patru linguri par mult, dar ele sunt cele care transforma laptele vegetal simplu intr-un sos cu personalitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul<\/strong> apare de doua ori: cativa catei in umplutura si inca cinci cruzi, direct in sosul de blender. Cinci catei suna intens, insa la blender si la incalzire usturoiul crud isi pierde din asprime si lasa in urma doar aroma cremoasa. Alege capatani ferme, fara coltisori verzi rasariti in mijloc &#8212; acel colt da un gust amar sosului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele vegetal<\/strong> trebuie sa fie neindulcit, altfel sosul de usturoi va avea un gust dulceag ciudat. Eu folosesc lapte vegetal neutru, fara arome adaugate; el este lichidul de baza care, impreuna cu faina, se ingroasa la foc si da consistenta cremoasa a sosului.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa apa din ciuperci sa se evapore complet.<\/strong> Stii ca umplutura e gata cand in tigaie nu mai vezi lichid si ciupercile incep sa sfaraie usor in ulei. O umplutura uscata si bine calita inseamna ravioli care nu se desfac la fierbere.<\/li>\n<li><strong>Intinde foile la 2 mm grosime.<\/strong> Daca le lasi prea groase, raman cleioase la mijloc; daca le faci prea subtiri, se rup la umplere. Lucreaza pe o suprafata bine presarata cu faina, ca aluatul sa nu se lipeasca de facalet.<\/li>\n<li><strong>Preseaza bine marginile cu furculita.<\/strong> Acesta este pasul de care depinde totul &#8212; daca foile nu sunt lipite etans, umplutura iese in apa la fiert. Apasa ferm pe tot conturul si verifica sa nu fi ramas vreo deschizatura.<\/li>\n<li><strong>Fierbe-i putini deodata.<\/strong> Pune cam 6 ravioli odata intr-o oala mare cu apa cu sare; daca ii inghesui, se lipesc intre ei. Sunt gata exact in momentul in care se ridica la suprafata &#8212; nu ii lasa peste acel punct, fiindca se inmoaie prea tare.<\/li>\n<li><strong>Amesteca sosul continuu.<\/strong> Cand torni sosul in tigaie si il incalzesti, amesteca incontinuu 5-7 minute, pana ajunge la consistenta de iaurt. Ii fierbi direct congelati, fara dezghetare, lasandu-i cu un minut-doua mai mult in apa clocotita. Ravioli fierti se pastreaza la frigider 1-2 zile, iar sosul de usturoi il poti face cu cateva ore inainte si il reincalzesti la foc mic, mai subtiindu-l cu putin lapte vegetal daca s-a ingrosat prea tare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-au placut aceste paste de casa, incearca si alte retete cu ciuperci de pe blog. Eu am folosit un tocator mai mare, presarat cu faina pe deasupra. Rupe bucati din aluatul de ravioli si intinde-le pe suprafata de lucru in foi subtiri, de 2 mm grosime, cu ajutorul unui facalet. Se pot face ravioli atat de forma patrata, cat si rotunda (cu ajutorul unui pahar). Eu am ales sa fac ravioli rotunzi, asa ca dupa ce am intins aluatul am decupat cerculete pe care le-am asezat pe o suprafata separata, presarata cu faina.
