Se gateste in mai putin de 30 de minute si iese o budinca pufoasa, aromata si satioasa, servita cu coriandru proaspat si zeama de lime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vreau sa iti povestesc despre una dintre retetele mele preferate de mic dejun din India de Sud. Upma, sau &#8220;budinca cu gris sarata&#8221;, are o semnificatie speciala in cultura indiana de sud si este un fel de mancare indragit in randul localnicilor. Originara din regiunea Karnataka, reteta a calatorit de-a lungul anilor si a devenit un element de baza al micului dejun in intreaga zona.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De obicei, Upma se gateste cu ceapa, morcov, mazare si condimente precum semintele de mustar si frunzele de curry. Mie imi place varianta de fata pentru ca e simpla si rapida, dar pastreaza toate aromele care fac acest fel de mancare atat de special. Foloseste gris grosier (de tip rava, daca gasesti la magazinele indiene), pentru ca boabele mai mari se umfla mai uniform si nu se transforma in pasta. Pasul de prajire in tigaia uscata este esential: il calesti pana capata un miros placut, usor de alun. Asa fiecare bob ramane separat dupa fierbere, iar budinca iese pufoasa, nu cleioasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghee-ul<\/strong> (unt clarificat) este grasimea traditionala in care se calesc condimentele. Are punct de ardere ridicat, deci poti pocni semintele de mustar fara sa se arda, si aduce o aroma de nuca pe care uleiul neutru nu o poate da. Daca il cumperi gata facut, alege unul de culoare aurie, cu miros curat de unt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de mustar<\/strong> sunt cele care dau &#8220;semnatura&#8221; Upma. Secretul este sa le adaugi in ghee-ul deja incins si sa astepti sa inceapa sa pocneasca &#8212; abia atunci isi elibereaza aroma. Daca le pui in grasime rece, raman amare si crude.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Frunzele de curry<\/strong> nu au nicio legatura cu pulberea de curry. Sunt frunze aromate proaspete, cu un parfum citric-rasinos inconfundabil. Cumpara-le proaspete de la magazinele indiene si congeleaza-le &#8212; isi pastreaza aroma luni intregi, in timp ce uscate isi pierd aproape tot parfumul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul proaspat<\/strong> tocat fin aduce caldura si prospetime. Alege radacini ferme, cu coaja neteda si lucioasa; cele zbarcite sunt vechi si fibroase. Tocat marunt, se topeste in budinca si nu lasa bucati fibroase la mestecat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cajuul<\/strong> zdrobit marunt adauga textura crocanta si un strop de bogatie. Il prajesti scurt impreuna cu condimentele, ca sa devina auriu si sa-si scoata aroma. Ai grija sa nu il arzi &#8212; trece de la auriu la ars in cateva secunde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lintea rosie<\/strong> (doar 2 lingurite) nu este aici pentru proteina, ci pentru textura: prajita in ghee devine crocanta si da contrast budincii moi. Este o tehnica tipica bucatariei indiene de sud.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Prajeste grisul pana simti aroma, nu pana se coloreaza tare.<\/strong> Stii ca e gata cand miroase placut, usor de alun, si boabele isi pierd aspectul de praf crud. Daca il arzi, budinca va avea gust amar.<\/li>\n<li><strong>Adauga grisul peste apa, nu invers, si in ploaie.<\/strong> Toarna grisul calit cate putin in apa care clocoteste, amestecand continuu. Asa eviti cocoloasele, greseala cea mai frecventa la Upma.<\/li>\n<li><strong>Respecta proportia de lichid.<\/strong> Cele doua cani jumatate de apa la o cana de gris dau textura corecta de budinca. Daca pui prea putin, iese tare; daca pui prea mult, ramane lichida.<\/li>\n<li><strong>Lasa-o sub capac 3-4 minute la final.<\/strong> Dupa ce stingi focul, capacul lasa aburul sa termine de gatit grisul si budinca se aseaza. Pierzi putin din aroma de unt, dar reteta iese la fel de buna.<\/li>\n<li><strong>Cu legume:<\/strong> adauga morcov tocat marunt, mazare sau ardei gras odata cu ceapa, pentru o varianta mai consistenta si mai colorata, asa cum se face de obicei Upma.<\/li>\n<li><strong>Mai mult sau mai putin iute:<\/strong> ajusteaza cantitatea de ardei iute dupa gust sau scoate-l complet daca gatesti pentru copii.<\/li>\n<li><strong>Fara caju:<\/strong> daca ai alergie sau nu ai la indemana, poti folosi arahide prajite sau poti renunta la ele &#8212; vei pierde doar partea crocanta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Upma este cel mai bun proaspat facut, dar se pastreaza bine la frigider 2-3 zile intr-un recipient inchis ermetic. Pe masura ce sta, grisul absoarbe lichidul si se intareste, asa ca atunci cand o reincalzesti adauga cateva linguri de apa fierbinte si amesteca &#8212; isi recapata textura moale si pufoasa. O poti incalzi la tigaie, la foc mic, sau in cuptorul cu microunde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru a castiga timp dimineata, poti praji grisul in avans si pastra in borcan inchis cateva saptamani &#8212; astfel reduci mult timpul de preparare. La fel, poti toca dinainte ceapa, ghimbirul si ardeiul iute si le tii la frigider.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut Upma, arunca un ochi si peste celelalte <a href=\"https:\/\/gourmandelle.com\/ro\/retete-indiene-vegane\/\">retete indiene vegane<\/a> de pe blog. Iar daca esti curios cum se transforma grisul in deserturi, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/gris-cu-lapte-si-dulceata-coacaze\/\">grisul cu lapte si dulceata de coacaze<\/a> sau o
