Singura grija a fost sa nu iasa prea uscate, asa ca am adaugat putin ulei de cocos in care sa se rumeneasca frumos. Asa pastrez aroma si crocanta de afara, fara senzatia de imbibat in ulei pe care o au de obicei chiftelutele prajite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi plac la fel de mult ca dovleceii mei prajiti, pe care ii servesc de obicei cu sosuri sau chutney-uri. Taie cele doua cepe medii cat mai subtire si uniform, ca sa se gateasca pana la capat in timpul cat se rumeneste aluatul. Eu prefer ceapa galbena pentru ca are dulceata aceea care iese frumos cand se caramelizeaza usor in tigaie, dar merge si ceapa rosie daca vrei o nota mai puternica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de naut<\/strong> este ce tine totul laolalta si inlocuieste faina de grau. Cauta-o sub numele de besan sau faina de gram in magazinele cu specific indian &#8212; e mai fin macinata si leaga aluatul mai bine. Are gust usor de leguminoasa cand e cruda, dar acela dispare complet la prajire, asa ca nu te speria.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drojdia inactiva<\/strong> (fulgii de drojdie) adauga o nota usor de branzoasa si umami, fara niciun produs lactat. E un truc bun ca sa dai profunzime aluatului vegan. Lingura din reteta e suficienta cat sa se simta, dar fara sa acopere condimentele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Turmericul<\/strong> da culoarea aurie caracteristica si o aroma calda, pamantoasa. Foloseste-l cu masura &#8212; jumatatea de lingurita din reteta e perfecta; prea mult devine amar si domina restul condimentelor. Cumpara-l de la un magazin cu rulaj bun, pentru ca un turmeric vechi isi pierde si culoarea, si aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimionul macinat<\/strong> aduce caldura aceea specifica bucatariei indiene. Daca ai chimion intreg, prajeste-l usor in tigaia uscata si macina-l pe loc &#8212; aroma e incomparabil mai intensa decat cea din borcanul cumparat deja macinat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardeiul iute<\/strong> tocat fin si <strong>zeama de lime<\/strong> echilibreaza preparatul: ardeiul adauga picanteria, iar limeta acreala care taie din greutatea aluatului prajit. Doseaza ardeiul dupa cat de iute il vrei &#8212; scoate semintele daca preferi o nota mai blanda.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Aluatul trebuie sa fie cremos, nu lichid.<\/strong> Adauga apa treptat &#8212; ai nevoie sa imbrace feliile de ceapa, nu sa se scurga de pe ele. Daca iese prea moale, mai pune putina faina de naut.<\/li>\n<li><strong>Incinge bine tigaia inainte sa pui amestecul.<\/strong> Daca uleiul de cocos nu e suficient de cald, chiftelutele absorb gras si nu se mai rumenesc; stii ca tigaia e gata cand uleiul luceste si abia incepe sa p\u00e2lp\u00e2ie.<\/li>\n<li><strong>Nu le intoarce prea devreme.<\/strong> Lasa-le pe loc pana se formeaza o crusta aurie pe partea de jos &#8212; daca incerci sa le intorci si se lipesc, mai au nevoie de un minut. Stii ca sunt gata cand se desprind singure de tigaie.<\/li>\n<li><strong>Nu aglomera tigaia.<\/strong> Lasa spatiu intre chiftelute ca sa se rumeneasca, nu sa se aburesca. Ca sa le readuci la viata, incalzeste-le in cuptor sau in air fryer cateva minute &#8212; asa redevin crocante, spre deosebire de microunde, care le inmoaie.
