Se coace 30 de minute la 180C, pana se rumeneste pe margini, si se serveste calda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Desi anul acesta nu este cel mai productiv in gradina, probabil din cauza vremii extrem de imprevizibile din vara aceasta, cu furtuni si zile foarte reci urmate de zile secetoase si fierbinti, tot am putut sa ma bucur de darurile plantutelor mele din curte. Cu greutati, dar rosiile mi-au daruit fructe asa cum au putut, atat de multe incat am pus si la congelator pentru iarna si am avut ce darui si prietenilor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cu atatea rosii proaspete, dulci si zemoase in casa, era pacat sa nu profit de ele si sa nu testez retete care sa le puna cu adevarat in valoare. Asa a iesit aceasta tarta: o foaie subtire de foietaj, crema de branza de capra dedesubt si rosii care se coc lent in cuptor pana isi concentreaza aroma. Caut un foietaj cu unt in lista de ingrediente, nu cu margarina, pentru ca se rumeneste mai frumos si are gust mai bun. Foarte important: lucrez foietajul rece, direct din frigider. Daca se incalzeste si untul din straturi se topeste inainte de cuptor, foietajul nu mai creste si iese tare in loc de fraged.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crema de branza de capra<\/strong> se intinde ca primul strat, direct pe foietaj. Pe langa gust, are si un rol practic: face o bariera intre aluat si rosii si protejeaza partial crusta de zeama lor. O scot din frigider cu cateva minute inainte ca sa se intinda mai usor, fara sa rup foaia de aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile colorate<\/strong> sunt vedeta, asa ca merita rosii bune. Le aleg coapte, dar inca ferme, nu trecute si moi, ca sa isi tina forma in cuptor. Le tai felii uniforme, cam de jumatate de centimetru, ca sa se coaca egal. Secretul pe care l-am invatat in timp: dupa ce le feliez, le asez pe un servet de hartie si le las cateva minute sa lase din apa. Cu cat scot mai multa zeama inainte, cu atat ramane crusta mai crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maslinele taiate felii<\/strong> aduc nota sarata, mediteraneana. Folosesc masline cu gust intens, fie negre, fie kalamata, si verific sa fie fara samburi inainte sa le feliez. Pentru ca sunt deja sarate, tin cont de ele cand pun sarea peste tarta, ca sa nu iasa prea sarata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza de capra tare rasa<\/strong> se presara peste rosii si masline. La copt formeaza acea crusta usor aurie si adauga un strat in plus de gust, mai concentrat decat crema de dedesubt. Daca nu gasesti branza de capra tare, merge si o branza tare cu gust pronuntat, dar atunci tarta nu mai are accentul acela specific de capra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrisorul proaspat si uleiul de masline<\/strong> sunt finisajul mediteranean. Cimbrisorul rezista bine la copt si parfumeaza tarta fara sa o domine. Aseaza feliile pe un servet, presara putina sare si lasa-le 10 minute sa lase zeama, apoi tampoteaza-le usor inainte sa le pui pe tarta.<\/li>\n<li><strong>Un singur strat de rosii, fara suprapuneri.<\/strong> Cardul cere intentionat un singur strat: asa se coc, nu se fierb in propria zeama. Daca le ingramadesti, mijlocul tartei ramane apos.<\/li>\n<li><strong>Stii ca e gata cand marginile foietajului sunt rumene-aurii si umflate<\/strong>, iar rosiile au inceput sa se incrispeze pe margini. Daca marginile sunt inca palide, mai lasa-o cateva minute, indiferent ce zice ceasul.<\/li>\n<li><strong>Lasa tarta sa se odihneasca 5 minute<\/strong> dupa ce o scoti din cuptor. Asa se aseaza crema si feliezi curat, fara sa aluneca totul de pe crusta.<\/li>\n<li><strong>Adauga uleiul de masline bun la final, peste tarta calda.<\/strong> Caldura elibereaza aroma uleiului, iar acel ultim strop de ulei crud face diferenta intre o tarta buna si una memorabila.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara branza de capra:<\/strong> inlocuieste crema de capra cu crema de branza obisnuita sau cu ricotta, iar branza tare rasa cu feta sfaramata sau parmezan. Gustul iese mai bland, dar tot delicios.<\/li>\n<li><strong>Versiune vegana:<\/strong> foloseste o crema de branza vegetala si o branza vegana tare la ras, si verifica sa fie foietajul fara unt (multe foietaje din comert sunt facute cu ulei vegetal).<\/li>\n<li><strong>Mai multe legume:<\/strong> peste crema de branza poti adauga rondele subtiri de dovlecel sau ardei copt taiat fasii, alaturi de rosii, pentru o tarta mai consistenta.<\/li>\n<li><strong>Joaca-te cu ierburile:<\/strong> in loc de cimbrisor merge la fel de bine oregano proaspat sau busuioc adaugat dupa coacere. Ce ramane se pastreaza la frigider, intr-o cutie inchisa, 2 zile. Ca sa revina crocanta, o reincalzesc in cuptor sau in airfryer cateva minute, niciodata la microunde, care inmoaie foietajul. O poti manca si rece, ca pe o pizza rece de vara, si tot e gustoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, poti felia rosiile si scurge-le de apa, poti rade branza si lasa crema la temperatura camerei, dar asambleaza si coace tarta abia inainte de servit, ca sa nu se inmoaie foietajul. Daca iti place sa gatesti mediteranean cu rosii din plin, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/tarta-fara-gluten-cu-rosii\/\">tarta fara gluten cu rosii<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/salata-de-vara-cu-rosii-cherry-coapte\/\">salata de vara cu rosii cherry coapte<\/a>.
