Se asambleaza in chifla cu rosie, ceapa, castraveciori murati, salata, maioneza vegana si ketchup. Asta inseamna ca, atunci cand vine foamea, nu mai stau sa pun la cale o masa intreaga &#8212; scot din frigider compozitia gata facuta si in cateva minute am chifteluta in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelutele astea sunt foarte versatile: le poti congela, le poti coace sau le poti praji, asa cum am facut eu in acest caz. Merge orice tip ai la indemana (alba, rosie, neagra), insa scurge-o bine si clateste-o inainte sa o pasezi &#8212; lichidul din conserva e prea sarat si umed si iti uda compozitia. O fasole bine scursa inseamna o chifteluta care isi tine forma in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile<\/strong> dau aroma si textura. Alege ciuperci ferme, cu palaria inchisa si fara pete moi sau zone vascoase &#8212; alea proaspete miros a padure, nu acru. Ciupercile sunt pline de apa, asa ca, daca le vrei mai uscate, sotea-le scurt in tigaie inainte sa le adaugi in compozitie; altfel pasta iese mai umeda si vei avea nevoie de mai mult pesmet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarate de psyllium sau in macinat<\/strong> au rolul de liant. Psylliumul absoarbe umezeala si leaga compozitia ca un ou vegetal, iar inul macinat face acelasi lucru. Lasa compozitia cateva minute dupa ce ai amestecat, ca liantul sa apuce sa se hidrateze si sa se umfle &#8212; abia atunci modelezi chiftelutele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmetul<\/strong> regleaza consistenta. Daca, dupa ce amesteci, compozitia ti se pare prea lipicioasa pentru a o modela, mai adauga o lingura de pesmet pe rand pana cand poti forma chiftelute care nu se lipesc de maini.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrul si coriandrul macinat<\/strong> sunt cele care ridica gustul. Coriandrul macinat aduce o nota calda, usor citrica, iar cimbrul intra perfect alaturi de ciuperci. Daca ai coriandru boabe, macina-l proaspat chiar inainte de a-l folosi &#8212; aroma e net mai puternica decat la cel deja macinat din borcan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maioneza vegana, ketchup si garniturile<\/strong> &#8212; rosie, ceapa, castraveciori murati si salata verde &#8212; sunt ce transforma chifteluta intr-un burger adevarat. Castraveciorii murati si ketchupul aduc aciditatea care taie din bogatia fasolei, iar salata da prospetime si crocant.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu pasa fasolea si ciupercile prea fin.<\/strong> Vrei sa fie toate maruntite, dar compozitia trebuie sa ramana putin grunjoasa &#8212; daca o faci pasta perfecta, chiftelutele ies cleioase. La robot, pulseaza scurt, nu lasa motorul sa mearga continuu.<\/li>\n<li><strong>Tine compozitia la frigider 30 de minute inainte sa modelezi.<\/strong> Se intareste, se leaga mai bine si chiftelutele isi tin forma mult mai usor in tigaie. E pasul pe care multi il sar si apoi se intreaba de ce se faramiteaza burgerul.<\/li>\n<li><strong>Incinge bine uleiul inainte sa pui chiftelutele.<\/strong> Daca tigaia e prea rece, compozitia absoarbe ulei si se inmoaie in loc sa se rumeneasca. Stii ca e gata pe o parte cand se desprinde singura de tigaie si are o crusta aurie &#8212; abia atunci o intorci.<\/li>\n<li><strong>Scurge chiftelutele pe servet de hartie dupa prajit.<\/strong> Asa scapi de uleiul in exces si crusta ramane crocanta, nu unsuroasa.<\/li>\n<li><strong>Foloseste o tigaie mare, non-aderenta.<\/strong> Lasa spatiu intre chiftelute &#8212; daca le inghesui, scad temperatura tigaii si se fierb in loc sa se prajeasca.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara robot de bucatarie.<\/strong> Poti face reteta si manual, pasand fasolea cu o furculita sau cu un strivitor de cartofi si tocand marunt ciupercile cu cutitul.<\/li>\n<li><strong>Liant la alegere.<\/strong> Daca nu ai tarate de psyllium, foloseste in macinat &#8212; functioneaza la fel pentru a lega compozitia. Ambele se umfla cu umezeala si tin chifteluta laolalta.<\/li>\n<li><strong>Coapte in loc de prajite.<\/strong> Pentru o varianta mai usoara, asaza chiftelutele pe o tava cu hartie de copt si baga-le la cuptor in loc sa le prajesti &#8212; merg foarte bine si la cuptor.<\/li>\n<li><strong>Joaca-te cu condimentele.<\/strong> Cimbrul si coriandrul sunt baza, dar poti adauga boia afumata sau chimion pentru o nota mai intensa, in functie de gust.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cel mai mare avantaj al acestei retete e ca o pregatesti in avans. Fa compozitia intr-o cantitate mai mare, pastreaz-o in frigider intr-un recipient inchis cateva zile si modeleaza chiftelutele cand ai pofta. Pentru termen mai lung, chiftelutele se congeleaza foarte bine &#8212; le poti scoate si praji sau coace direct, fara prea multa bataie de cap. Asambleaza burgerul abia inainte de a-l servi, ca sa nu se inmoaie chifla si salata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca esti in cautare de retete similare, incearca si <a
