Sunt gata in mai putin de 30 de minute, au un gust racoritor si usor dulceag si se servesc calde, cu maioneza sau orice sos preferi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Trebuie sa recunosc ca nu m-am omorat niciodata dupa gulii. Auzisem de salata de gulii, dar nu ma tentase niciodata sa le cumpar &#8212; pana anul acesta, cand am experimentat sa le cultiv din samanta, direct in gradina mea. Cele cateva gulii pe care le-am plantat m-au surprins cu gustul lor racoritor, ceva intre varza si broccoli, dar mai dulce si mai fraged.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Salata clasica m-a inspirat sa incerc altceva si sa transform o leguma modesta intr-un preparat aromat. Asa au aparut aceste parjoale: crocante pe afara, fragede in interior, cu acel gust subtil de gulie pe care ajungi sa il indragesti. Alege gulii mici sau medii, ferme si grele in mana &#8212; cele prea mari tind sa fie lemnoase si fibroase in interior. Coaja lor groasa trebuie indepartata complet, pentru ca ramane tare chiar si dupa prajire. Dupa ce le razi, gulia lasa multa apa, asa ca acesta e ingredientul pe care chiar trebuie sa il storci bine, altfel compozitia ramane prea moale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcovul<\/strong> aduce dulceata si culoare. Un morcov mediu, ras fin, se leaga frumos de gulie si echilibreaza gustul. Alege un morcov ferm, fara pete moi; cei batrani sau ofiliti dau mai putin gust si mai multa fibra. Daca il razi pe razatoarea mica, se va integra mai uniform in compozitie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde<\/strong> da prospetime si o aroma usor picanta, fara sa fie la fel de agresiva ca ceapa uscata. Foloseste atat partea alba, cat si pe cea verde, tocate marunt. Daca firele sunt subtiri si de un verde viu, sunt proaspete; cele ingalbenite la varf au stat prea mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale<\/strong> sunt liantul care tine totul laolalta. Doua oua sunt suficiente pentru aceasta cantitate &#8212; ele coaguleaza la prajire si dau structura chiftelutelor. Foloseste oua la temperatura camerei, ca sa se amestece mai usor in compozitie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> absoarbe umezeala ramasa si ajuta compozitia sa se lege. O jumatate de cana e de ajuns; daca pui prea multa, chiftelutele ies tari si seci. Pentru o varianta fara gluten, inlocuieste faina obisnuita cu faina de naut, care leaga la fel de bine si adauga un gust placut, usor de nuca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza cheddar<\/strong> rasa aduce savoare si o nota sarata care ridica gustul intregului preparat. Cheddar maturat are aroma mai intensa decat cel tanar, asa ca daca vrei un gust mai pronuntat, alege-l pe cel mai vechi. Rade-o tu acasa, dintr-o bucata &#8212; branza prerasa de la punga e adesea acoperita cu amidon care impiedica topirea uniforma.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Storci bine guliile rase.<\/strong> Asta e pasul care decide totul. Pune guliile rase intr-un tifon sau intr-un prosop curat si stoarce cat de mult lichid poti. Cu cat scoti mai multa apa, cu atat chiftelutele se leaga mai bine si ies mai crocante, nu moi si umede.<\/li>\n\n\n\n<li><strong>Pastreaza focul mediu.<\/strong> Daca tigaia e prea incinsa, exteriorul se arde inainte ca interiorul sa se gateasca. Stii ca uleiul e pregatit cand o bucatica mica de compozitie incepe sa sfaraie usor de indata ce o pui in tigaie.<\/li>\n\n\n\n<li><strong>Nu le intoarce prea devreme.<\/strong> Lasa fiecare parte 4-5 minute, neatinsa, ca sa se formeze crusta. Daca incerci sa le intorci si se rup, mai au nevoie de un minut. Sunt gata de intors cand marginea de jos e clar aurie.<\/li>\n\n\n\n<li><strong>Nu aglomera tigaia.<\/strong> Lasa spatiu intre chiftelute, ca sa se rumeneasca, nu sa se aburi. Daca le pui prea aproape, scade temperatura uleiului si ies palide si moi.<\/li>\n\n\n\n<li><strong>Verifica gustul compozitiei.<\/strong> Inainte sa prajesti toata cantitatea, fa o singura chifteluta de proba si gusta-o. Leaga la fel de bine si adauga o aroma usor de nuca care merge perfect cu gulia.<\/li>\n\n\n\n<li><strong>Alta branza:<\/strong> in loc de cheddar poti folosi parmezan ras pentru un gust mai intens si sarat, sau o branza de oaie sfaramata pentru o nota mai puternica.<\/li>\n\n\n\n<li><strong>Mai multe arome:<\/strong> adauga marar sau patrunjel tocat, un catel de usturoi ras sau un praf de chimen pentru o variatie mai parfumata.<\/li>\n\n\n\n<li><strong>La cuptor in loc de prajit:<\/strong> aseaza chiftelutele pe o tava cu hartie de copt, unge-le usor cu ulei si coace-le pana se rumenesc, intorcandu-le o data la jumatatea timpului, pentru o varianta cu mai putina grasime.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Parjoalele de gulii se pastreaza la frigider, intr-un recipient inchis, 3-4 zile. Le poti reincalzi in tigaie la foc mic sau in cuptor, ca sa isi recapete crocanta &#8212; microundele le inmoaie. Compozitia cruda nu se pastreaza foarte bine, pentru ca guliile lasa apa in timp, asa ca e mai bine sa prajesti chiftelutele si abia apoi sa le depozitezi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru congelare, aseaza chiftelutele deja prajite si racite pe o tava, intr-un singur strat, congeleaza-le si abia apoi muta-le intr-o punga. Asa nu se lipesc intre ele si poti scoate exact cate ai nevoie. Le reincalzesti direct din congelator, in cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele de acest fel, arunca o privire si peste <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-parjoale-de-post\/\">retetele mele de parjoale de post<\/a>, perfecte cand vrei o varianta fara oua sau lactate.
