Uleiul de masline, sucul si coaja de lamaie aduc prospetime, iar cimbrul o nota aromata neasteptata. Mai ales atunci cand se nimereste sa ai cantitati industriale de dovlecei pentru ca ai pus anul asta mai multe rasaduri decat trebuia (guilty as charged), reteta asta e o modalitate ideala de a-i consuma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stiu ca suna ciudat sa pui dovlecel intr-un desert, dar exact ca la chec cu banane sau la prajitura cu morcov, leguma nu se simte deloc la gust. Ce face ea, in schimb, e sa tina checul umed zile intregi, fara sa fie nevoie de cantitati mari de grasime.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Dovleceii rasi<\/strong> sunt vedeta retetei, chiar daca nu se vad. Foloseste-i cruzi, rasi pe razatoarea mare, direct in aluat. Spre deosebire de alte retete, aici nu e nevoie sa storci dovlecelul de apa: lichidul pe care il lasa ajuta la hidratarea aluatului si la textura aceea umeda. Alege dovlecei tineri, fermi, cu coaja subtire, nu pe cei mari si copti, care au seminte multe si gust apos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> inlocuieste untul si da checului o textura matasoasa care se pastreaza fraged mai mult timp decat la variantele cu unt. Foloseste un ulei extravirgin cu aroma blanda; unul prea intens, amarui, ar concura cu lamaia. Grasimea lichida e si motivul pentru care miezul ramane umed dupa cateva zile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lamaia<\/strong> intra de doua ori: sucul, in compozitia lichida, si coaja rasa, pentru aroma. Coaja e partea cea mai parfumata, asa ca rade doar stratul galben, nu si albul de dedesubt, care e amar. Doar jumatate de lingurita de frunze e suficienta: cimbrul are o nota usor lemnoasa, aproape florala, care merge surprinzator de bine cu lamaia. Daca nu ai cimbru proaspat, poti sari peste el, dar e pacat, fiindca el da personalitate retetei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bicarbonatul si praful de copt<\/strong> lucreaza impreuna ca aluatul sa creasca. Bicarbonatul reactioneaza cu aciditatea din sucul de lamaie si elibereaza dioxid de carbon, iar praful de copt completeaza cresterea la cuptor. De aceea sucul de lamaie nu e doar pentru aroma: el e parte din chimia care face checul pufos.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Trucuri ca sa iasa perfect<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Bate bine uleiul, sucul de lamaie, ouale si zaharul, pana obtii o compozitie spumoasa si deschisa la culoare. Aceasta etapa inglobeaza aer si ajuta checul sa creasca uniform.<\/li>\n\n\n\n<li>Dupa ce adaugi faina, amesteca doar cat sa se incorporeze. Daca bati prea mult aluatul dupa adaugarea fainii, dezvolti glutenul si checul iese tare si cauciucos in loc de pufos. Asta e greseala cea mai des intalnita la checuri.<\/li>\n\n\n\n<li>Stii ca checul e gata cand suprafata e rumenita si o scobitoare infipta in mijloc iese curata. Daca iese cu aluat lipit, mai lasa-l 5 minute si verifica din nou.<\/li>\n\n\n\n<li>Daca folosesti o forma de silicon, poti sari peste tapetatul cu hartie de copt. La formele clasice, hartia de copt iti garanteaza ca scoti checul intreg, fara sa se rupa.<\/li>\n\n\n\n<li>Lasa checul sa se raceasca pe un gratar, nu in forma. La frigider rezista pana la o saptamana, dar scoate-l cu putin timp inainte de servire ca sa revina la temperatura camerei si sa-si recapete textura moale. Se congeleaza foarte bine: taie-l felii, ambaleaza-le separat si tine-le la congelator pana la 3 luni.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cu atatea variante de topping-uri si glazuri, poti personaliza acest desert in functie de preferintele tale si poti crea mereu ceva nou si delicios. Eu il servesc simplu, cu o dulceata de lamaie sau pur si simplu asa cum e, alaturi de o cafea.
