Atat sosul, cat si combinatia de ingrediente te vor surprinde, si sunt convinsa ca va intra pe lista retetelor tale preferate. Pasta miso o ador si o folosesc foarte des in diverse retete, iar aici se simte cel mai bine: cremoasa, sarata, cu acea profunzime umami pe care o aduce numai fermentarea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Recomand ciupercile King Oyster pentru ca au piciorul ferm, cu o textura asemanatoare cu cea a scoicilor Saint Jacques. preparate din faina de grau si faina de hrisca, ceea ce le confera o culoare maronie distinctiva si un gust usor nuciu. Cand cumperi taitei soba, citeste eticheta: cu cat procentul de hrisca e mai mare, cu atat aroma e mai pronuntata si textura mai elastica. Atentie la fierbere, soba se gateste mai repede decat pastele obisnuite si trec usor in zona moale, asa ca verifica-i cu un minut inainte de timpul de pe ambalaj.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta miso<\/strong> este inima acestei retete. O ador si o folosesc foarte des, pentru ca aduce acea profunzime umami pe care nu o obtii cu nimic altceva. Misoul alb (shiro) e mai bland si usor dulceag, iar cel rosu mai intens si mai sarat, asa ca alege in functie de cat de puternic vrei sosul. Important: nu fierbe misoul mult timp, caldura excesiva ii distruge fermentii vii si din aromele subtile, de aceea il adaugi la final, doar cat sa se incalzeasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciuperci King Oyster<\/strong> le recomand pentru ca au piciorul ferm, cu o textura asemanatoare cu cea a scoicilor Saint Jacques. Cauta exemplare tari, cu piciorul gros si alb, fara pete moi sau umede, acelea sunt cele mai proaspete si se rumenesc cel mai frumos. Feliaza-le pe lat la 2-3 cm, ca sa ai suprafata mare de contact cu tigaia si margini aurii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lime<\/strong> aduce aciditatea care taie din bogatia misoului si echilibreaza sosul. Foloseste doar zeama proaspat stoarsa, sucul din comert nu are aceeasi prospetime vie. Un lime la temperatura camerei, rulat usor pe blat inainte de stors, elibereaza mai mult suc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Miere sau sirop de artar<\/strong> echilibreaza salinitatea misoului cu o dulceata fina. O lingurita e suficienta, scopul nu e sa indulcesti sosul, ci sa rotunjesti gustul. Daca vrei reteta complet vegana, alege siropul de artar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> il recomand pentru a pastra reteta usoara, insa daca doriti un plus de savoare, untul 85% este ideal pentru rumenirea ciupercilor. Uleiul trebuie sa fie bine incins inainte de a aseza ciupercile, altfel acestea lasa apa si se fierb in loc sa se rumeneasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> (sub forma de praf, in aceasta reteta) este nelipsit din mancarurile mele cu ciuperci. Intensifica gustul general si completeaza reteta cu o savoare delicioasa. Daca le inghesui, lasa apa si se inabusa in loc sa se rumeneasca, iar tu vrei acele margini aurii si crocante.<\/li>\n<li><strong>Lasa-le sa stea pe loc inainte sa le intorci.<\/strong> Greseala cea mai frecventa e sa misti ciupercile prea des. Lasa-le 2-3 minute neatinse pe fiecare parte, ca sa se formeze crusta. Stii ca sunt gata de intors cand se desprind singure de pe fund.<\/li>\n<li><strong>Adauga misoul la final.<\/strong> Gateste sosul de miso doar 30 de secunde, cat sa devina cremos. Caldura prelungita ii strica aromele delicate si fermentii.<\/li>\n<li><strong>Nu fierbe taiteii soba in exces.<\/strong> Verifica-i cu un minut mai devreme decat scrie pe ambalaj. Sunt gata cand sunt elastici, dar inca au o usoara rezistenta la muscatura.<\/li>\n<li><strong>Clateste sau nu, dupa preferinta.<\/strong> Daca ii servesti calzi imediat, ii poti folosi direct dupa strecurare; daca vrei sa eviti lipirea, o clatire rapida cu apa rece opreste fierberea.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alte ciuperci.<\/strong> Daca doriti sa experimentati, puteti folosi si alt tip de ciuperci, precum Pleurotus sau clasicele Champignon. Daca iti raman resturi, pastreaza-le intr-un recipient inchis la frigider pana la 2 zile. Reincalzeste-le scurt intr-o tigaie, cu un strop de apa sau ulei, ca taiteii sa se desfaca, si evita microundele prelungite care inmoaie totul.
