Este o reteta vegetariana de inspiratie Caprese, gata in mai putin de o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta este metoda mea preferata pentru a gati ardeii: umpluti cu ingrediente delicioase si copti la cuptor, asa incat marginile se inmoaie si capata o dulceata pe care nu o obtii niciodata cand ii fierbi. Cuptorul concentreaza aromele in loc sa le dilueze, iar ardeiul rosu, cel mai copt si mai dulce dintre toti, devine practic un vas comestibil pentru umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Azi am decis sa combin dragostea mea pentru reteta clasica de salata Caprese cu pasiunea pentru ardei umpluti, iar rezultatul m-a surprins chiar pe mine. Trio-ul de rosii cherry, mozzarella si busuioc, asezat deasupra in ultimele minute de copt, pastreaza prospetimea unei salate de vara, in timp ce risotto-ul de dedesubt aduce confortul unei mancari calde. Cand cumperi, alege ardei grei pentru marimea lor, cu pielea lucioasa si intinsa si cu codita verde, semn ca sunt proaspeti. Ii tai in jumatati pe lung si ii curat bine de seminte si de nervurile albe din interior, care sunt amare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez Arborio<\/strong> &#8212; nu este intamplator in aceasta reteta. Este un orez cu bob scurt, bogat in amidon, acelasi folosit la risotto, iar amidonul lui face umplutura cremoasa fara sa adaugi smantana. Daca il inlocuiesti cu orez cu bob lung, vei pierde exact aceasta textura. Il calesc cateva secunde in ulei inainte de a adauga lichidul, un pas care sigileaza bobul si il ajuta sa ramana al dente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesto<\/strong> &#8212; este coloana vertebrala a aromei aici, asa ca merita unul bun. Daca il cumperi gata facut, cauta unul cu ulei de masline real si busuioc in capul listei de ingrediente, nu uleiuri ieftine. Il adaug abia la final, dupa ce am oprit focul, pentru ca pesto-ul fiert isi pierde culoarea verde vie si gustul proaspat de busuioc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mozzarella proaspata<\/strong> &#8212; folosesc bile de mozzarella proaspata, nu mozzarella rasa pentru pizza. Cea proaspata se topeste mai delicat si ramane cremoasa. Sfatul meu: las-o sa se scurga bine pe un servet de hartie inainte de a o aseza pe ardei, altfel apa eliberata baleste umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosii cherry<\/strong> &#8212; asezate intregi, in jumatati, deasupra ardeilor, se concentreaza la cuptor si capata o dulceata aproape caramelizata. Alege rosii ferme, bine colorate; cele apoase si necoapte nu vor avea aceeasi intensitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Busuioc proaspat<\/strong> &#8212; il folosesc in doua etape: o parte cu rosiile si mozzarella inainte de copt, restul presarat proaspat la final. Busuiocul proaspat se ofileste repede la caldura, asa ca cel adaugat la sfarsit pastreaza aroma vie de Caprese.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Muguri de pin<\/strong> &#8212; presarati la final, aduc o textura crocanta si o nota usor untoasa. Daca ai timp, prajeste-i scurt intr-o tigaie uscata, fara ulei, pana se rumenesc usor, dar nu-i lasa nesupravegheati: trec de la auriu la ars in cateva secunde.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Opreste focul cand orezul e al dente.<\/strong> Va continua sa se gateasca la cuptor in interiorul ardeilor, asa ca un orez prea moale in tigaie va deveni terci in farfurie. Stii ca e gata cand bobul are inca o usoara rezistenta in mijloc.<\/li>\n<li><strong>Inmoaie spanacul la abur, nu la foc direct.<\/strong> Dupa ce ai oprit focul, adaugi spanacul, amesteci si acoperi tigaia cinci minute. Aroma de Caprese ramane, fara lactate.<\/li>\n<li><strong>Alt orez:<\/strong> daca nu ai Arborio, poti folosi orez Carnaroli, tot cu bob scurt si bogat in amidon. Orezul cu bob lung va functiona, dar umplutura va fi mai sfaramicioasa, nu cremoasa.<\/li>\n<li><strong>Alte verdeturi:<\/strong> spanacul poate fi inlocuit cu rucola, adaugata tot la final pentru o nota usor picanta, sau cu frunze tinere de mangold.<\/li>\n<li><strong>Mai multa textura:<\/strong> daca vrei umplutura mai consistenta, adauga in risotto o mana de naut fiert sau cateva masline negre tocate, in spiritul aromelor mediteraneene.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ardeii umpluti se pastreaza la frigider, intr-un recipient inchis etans, 3 pana la 4 zile. Se reincalzesc cel mai bine la cuptor sau in air fryer, la temperatura moderata, ca sa nu devina apatici; cuptorul cu microunde merge la nevoie, dar branza nu va mai fi la fel de rumena. Pentru gatit in avans, poti pregati umplutura de risotto cu o zi inainte si o pastrezi la frigider, apoi umpli ardeii si adaugi topping-ul de rosii, mozzarella si busuioc chiar inainte de a-i baga la cuptor: asa pastrezi prospetimea stratului in stil Caprese.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca esti in cautare si de alte <a href=\"https:\/\/gourmandelle.com\/ro\/retete-de-ardei-umpluti\/\">retete de ardei umpluti<\/a>, iti recomand sa incerci si <a href=\"https:\/\/gourmandelle.com\/ro\/ardei-umpluti\/\">ardeii umpluti clasici<\/a>.
