Le indulcesc natural cu miere si putin zahar brun, le parfumez cu scortisoara si nucsoara si le presar cu granola. Se coc in 35-40 de minute la 190 C si ies perfecte pentru mic dejun sau gustare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este sezonul merelor si, cum anul acesta merii mei mi-au dat roade ca niciodata, am decis sa fac cat mai multe retete cu mere ca sa ma bucur de darul lor. Am facut suc de mere, cidru, otet de mere, am pus mere rase cu scortisoara la congelator pentru iarna, iar acum m-am hotarat sa folosesc niste mere extra-coapte in reteta aceasta de briose cu mere si scortisoara.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place reteta asta tocmai pentru ca foloseste marul in doua feluri in acelasi aluat: cubulete proaspete care raman suculente la coacere si piure de mar care tine totul umed, fara sa fie nevoie de unt sau de mult ulei. Pentru cubulete alege un mar mai ferm si usor acrisor, care isi tine forma la coacere si nu se transforma in sos. Taie cubulete cat mai mici si egale, ca sa se distribuie uniform si sa nu lase goluri umede in aluat. Daca folosesti mere extra-coapte, ca mine, briosele ies si mai aromate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piureul de mar.<\/strong> Inlocuieste o buna parte din grasime si tine briosele umede, asa cum face untul in retetele clasice. Foloseste piure neindulcit, fara zahar adaugat, ca sa controlezi tu dulceata. Daca il faci in casa, fierbe merele curatate pana se inmoaie si paseaza-le fin, fara apa in plus.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina integrala si taratele de grau.<\/strong> Dau structura si fibre, pentru ca pastreaza tarata si germenele bobului. Taratele absorb mai mult lichid decat faina alba, de aceea piureul de mar si albusurile sunt importante ca sa pastreze aluatul moale. Cumpara tarate proaspete si tine-le la rece sau la congelator, fiindca rancezesc mai repede din cauza grasimilor naturale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de migdale.<\/strong> Este facuta din migdale macinate fin si aduce grasimi sanatoase, o aroma usor nucoasa si o textura moale, umeda. Eu am ales combinatia intre faina integrala si faina de migdale, insa poti experimenta si vezi ce iti place cel mai mult. Caut-o pe cea fin macinata, de culoare deschisa, si pastreaz-o la frigider ca sa nu prinda miros de ranced.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Albusurile de ou.<\/strong> Mixate pana devin usor spumoase, aduc aer in aluat si ajuta briosele sa creasca. Foloseste oua la temperatura camerei, pentru ca albusul rece se mixeaza mai greu si nu inglobeaza la fel de mult aer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mierea, scortisoara si nucsoara.<\/strong> Mierea indulceste si parfumeaza marul macerat impreuna cu zeama de lamaie, iar scortisoara si nucsoara macinata dau acea aroma calda de toamna. Foloseste mirodenii cat mai proaspete &#8212; cele vechi isi pierd uleiurile aromate si rezultatul iese sters. Amesteca doar pana obtii un aluat moale si dispar urmele de faina, chiar daca ramane putin neuniform.<\/li>\n\n\n\n<li><strong>Coace imediat dupa ce ai amestecat.<\/strong> Bicarbonatul incepe sa reactioneze cu aciditatea din zeama de lamaie si din mar de cum atinge lichidul, asa ca aluatul nu trebuie sa stea pe blat. Cu cat ajunge mai repede in cuptorul deja incins la 190 C, cu atat briosele cresc mai bine.<\/li>\n\n\n\n<li><strong>Verifica coacerea cu o scobitoare.<\/strong> Briosele sunt gata in 35-40 de minute, cand sunt rumene deasupra si o scobitoare infipta in mijloc iese curata sau cu cateva firimituri uscate. Eu am ales combinatia integrala plus migdale, dar merita sa experimentezi pana gasesti varianta preferata.<\/li>\n\n\n\n<li><strong>Indulcitor:<\/strong> daca vrei briose mai putin dulci, redu zaharul brun &#8212; marul si mierea aduc deja multa dulceata. Lasa-le sa se raceasca complet pe un gratar inainte sa le depozitezi, altfel aburul ramas le inmoaie la baza si pot mucegai mai repede. La temperatura camerei, intr-un recipient inchis, rezista doua-trei zile; pune un servet de hartie pe fund ca sa absoarba umezeala. La frigider rezista pana la o saptamana, iar la congelator pana la trei luni &#8212; le impachetezi individual si le scoti cate ai nevoie.
