Aluatul se face din faina, lapte, ou, praf de copt si mar ras, iar deasupra se toarna mere acrisoare fierte in sirop de artar, zahar brun, unt si scortisoara. S-au facut ca nicicand, mari, zemoase, sanatoase. M-am bucurat de ele in checuri, prajituri si alte retete cu mere, iar acum a venit momentul sa le incerc si intr-o reteta de clatite pufoase cu mere, ideale pentru micul dejun. Imi place sa pun mar ras direct in aluat, nu doar in sos, pentru ca asa simti merele in fiecare imbucatura, nu doar deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La alegerea merelor pentru clatite ma gandesc mereu la textura si la gustul pe care vreau sa le obtin. Eu prefer merele acrisoare, fiindca aciditatea lor echilibreaza dulceata siropului de artar si a zaharului brun. Alege soiuri ferme si acrisoare, care isi pastreaza forma la fiert si nu se transforma in piure: Granny Smith, Idared sau merele acre de gradina merg de minune. Aciditatea lor taie din dulceata siropului si a zaharului brun, asa ca rezultatul nu e dulce-lesietic. Stropeste feliile cu zeama de lamaie imediat ce le tai, ca sa nu se oxideze si sa-si pastreze culoarea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Siropul de artar<\/strong> da sosului adancime si o dulceata cu note de caramel pe care zaharul singur nu o aduce. Cauta sirop de artar pur (100%), nu sirop aromatizat cu artar, fiindca diferenta de gust e uriasa. Daca nu gasesti, il poti inlocui cu miere sau cu mai mult zahar brun, dar vei pierde acea aroma usor afumata, caracteristica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun<\/strong> intra atat in sos, cat si in aluat, si nu e doar pentru dulceata. Melasa din el da culoarea aurie-aramie a sosului si o aroma de caramel pe care zaharul alb nu o are. Daca al tau s-a intarit, pune-l langa o felie de mar intr-un recipient inchis cateva ore si se inmoaie la loc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina si praful de copt<\/strong> formeaza structura clatitelor. Praful de copt e cel care le face pufoase, asa ca verifica termenul de valabilitate: daca e vechi, clatitele ies plate. Un truc simplu de testare este sa pui o lingurita de praf de copt in apa fierbinte; daca face spuma puternic, e bun de folosit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele gras si oul<\/strong> dau bogatie aluatului. Laptele integral face clatitele mai cremoase si mai umede decat cel degresat, iar oul leaga aluatul si ajuta la pufosenie. Scoate-le din frigider cu 15-20 de minute inainte: ingredientele la temperatura camerei se amesteca mai uniform si clatitele cresc mai bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara si ghimbirul praf<\/strong> sunt sufletul aromatic al retetei. Scortisoara aduce caldura, iar ghimbirul un usor picant care taie din dulceata si da complexitate. Daca ai scortisoara macinata de mai bine de un an, inlocuieste-o; condimentele macinate isi pierd aroma in timp si nu mai parfumeaza la fel.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu amesteca aluatul prea mult.<\/strong> Cateva cocoloase sunt nu doar in regula, ci chiar de dorit. Daca bati aluatul pana e perfect neted, dezvolti glutenul din faina si clatitele ies tari si cauciucate, nu pufoase. Amesteca doar pana se incorporeaza faina si opreste-te.<\/li>\n<li><strong>Lasa aluatul sa se odihneasca 5 minute.<\/strong> In acest timp praful de copt incepe sa actioneze si faina se hidrateaza, iar clatitele ies mai inalte si mai aerate.<\/li>\n<li><strong>Incinge bine tigaia inainte de prima clatita.<\/strong> Tigaia trebuie sa fie la foc mediu, nu mare. Stii ca e gata cand o picatura de apa sfaraie si se evapora imediat. Daca e prea rece, clatitele ies palide; daca e prea fierbinte, se ard pe dinafara si raman crude in mijloc.<\/li>\n<li><strong>Intoarce clatita la momentul potrivit.<\/strong> Stii ca e gata de intors cand apar bule la suprafata si marginile par uscate, dupa 1-2 minute. Atunci miezul s-a inchegat suficient cat sa nu se rupa.<\/li>\n<li><strong>Lasa sosul sa scada la foc mic 7-10 minute.<\/strong> Asa siropul se ingroasa si merele se inmoaie fara sa se faca terci. Reincalzeste-le scurt in tigaie sau cateva secunde la cuptorul cu microunde, ca sa-si revina pufosenia. Se congeleaza foarte bine: aseaza-le intr-un singur strat, intercaland hartie de copt intre ele, si stau pana la o luna. Sosul de mere il poti tine separat in frigider 3-4 zile si il reincalzesti la foc mic, adaugand un strop de apa daca s-a ingrosat prea tare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aluatul iese cel mai bine facut proaspat, fiindca praful de copt isi pierde puterea daca sta prea mult; daca vrei sa castigi timp dimineata, cantareste si amesteca ingredientele uscate de seara, iar dimineata mai adaugi doar laptele, oul si marul ras. Sosul de mere se poate prepara cu o zi inainte si reincalzi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-au placut aceste clatite, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-cu-faina-de-cocos\/\">clatitele mele cu faina de cocos<\/a> sau varianta de <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-pufoase-vegane-fara-gluten\/\">clatite pufoase vegane fara gluten<\/a>.
