Versiunea americana a acestui desert este, de obicei, mai dulce si mai bogata, acoperita cu un strat generos de glazura de zahar sau crema de branza, insa odata ce te-ai familiarizat cu reteta de baza, poti experimenta linistita cu alte tipuri de umpluturi si glazuri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Frumusetea acestei caserole este ca o poti face in doua feluri: fie pleci de la rulourile cu scortisoara facute de tine de la zero, fie scurtezi totul folosind chifle cumparate din comert, decongelate sau la tub. Fiecare varianta de umplutura aduce o nota distincta si speciala, transformand rulourile cu scortisoara intr-un desert versatil si mereu surprinzator. Daca optezi pentru cele din comert, alege-le pe cele care nu sunt deja glazurate ori pune glazura deoparte si o adaugi la final, altfel se topeste in crema si totul devine prea dulce. Cand le aranjezi in tava, lasa putin spatiu intre ele ca sa aiba loc sa creasca si sa absoarba crema.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara de Ceylon<\/strong> macinata este alegerea mea pentru umplutura. Spre deosebire de scortisoara cassia, mai comuna si mai iute, Ceylon are o aroma mai fina, dulceaga si florala, care nu acopera celelalte gusturi. Cumpara-o de preferat in batoane si macin-o proaspat sau, daca o iei deja macinata, mirose-o inainte: o scortisoara buna are un parfum cald si intens, nu unul plat. O foloseste atat in umplutura, cat si in crema de oua.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale<\/strong> sunt cele care leaga crema in care se coc rulourile &#8212; folosesti unul in aluat (daca il faci de la zero) si doua mari in compozitia care se toarna peste rulouri. Tine-le la temperatura camerei inainte: ouale reci se amesteca mai greu cu laptele cald si fac compozitia sa se taie. Bate-le bine cu laptele, vanilia si scortisoara pana obtii o compozitie complet omogena.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul nesarat<\/strong> apare in mai multe locuri: in aluat, in umplutura intinsa pe dreptunghi si in stratul moale de sub zaharul brun. Foloseste unt nesarat ca sa controlezi tu sarea din reteta. Pentru umplutura, untul trebuie sa fie moale, la temperatura camerei, ca sa il poti intinde uniform fara sa rupi aluatul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun<\/strong> din umplutura nu e doar pentru dulceata: melasa din el da o aroma de caramel si ajuta umplutura sa devina lipicioasa la copt, exact textura aceea de cinnamon roll bun. Daca presari amestecul de scortisoara si zahar brun uniform peste tot dreptunghiul, fiecare rulou va avea spirala dulce pana in centru.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Siropul de artar<\/strong> se toarna peste rulouri inainte de copt si patrunde in crema, adaugand o dulceata mai rotunda si o nota usor afumata. Daca e prea fierbinte, omori drojdia si aluatul nu mai creste; daca e prea rece, drojdia porneste greu. Il simti caldut pe incheietura mainii, nu il simti ca arde.<\/li>\n<li><strong>Lasa rulourile sa-si dubleze volumul.<\/strong> Cand faci aluatul de la zero, cele 60 de minute de crescut intr-un loc cald nu sunt optionale &#8212; rulourile trebuie sa fie clar mai mari si pufoase la atingere inainte sa le bagi la cuptor. Daca le cocci prea devreme, ies dense.<\/li>\n<li><strong>Toarna crema de oua uniform.<\/strong> Distribuie compozitia de oua si lapte peste toate rulourile, nu doar in mijloc, ca sa se imbibe egal. Asa eviti sa ai zone uscate la margine si zone prea umede in centru.<\/li>\n<li><strong>Stii ca e gata cand suprafata e bine rumenita.<\/strong> Dupa 30 de minute la 180\u00b0C, partea de sus trebuie sa fie aurie, iar crema dintre rulouri sa nu mai fie lichida. Daca se rumeneste prea repede deasupra, acopera tava lejer cu folie de aluminiu.<\/li>\n<li><strong>Pune glazura cand caserola e inca calda, dar nu fierbinte.<\/strong> Daca o torni imediat ce scoti tava, glazura se topeste si dispare; daca astepti prea mult, nu mai aluneca frumos. Cateva minute de odihna sunt suficiente.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Glazura de branza in loc de cea simpla.<\/strong> Daca vrei un desert mai decadent, inlocuieste glazura de zahar pudra cu un frosting clasic de branza &#8212; o combinatie cremoasa de branza Philadelphia, unt, zahar pudra si extract de vanilie.<\/li>\n<li><strong>Alte umpluturi.<\/strong> Reteta de baza accepta variatii: dupa ce te-ai obisnuit cu ea, poti experimenta cu alte tipuri de umpluturi care aduc fiecare o nota distincta si speciala.<\/li>\n<li><strong>Sirop de artar inlocuit.<\/strong> Daca nu ai sirop de artar, poti folosi miere sau un sirop de agave pentru o dulceata asemanatoare, tinand cont ca aroma finala se va schimba usor.<\/li>\n<li><strong>Lapte vegetal.<\/strong> Poti inlocui laptele de vaca cu un lapte vegetal in crema de oua, daca preferi. O reincalzesti la cuptor sau cateva secunde la microunde, ca sa redevina moale si calda &#8212; glazura o adaugi de preferat dupa reincalzire.
