Se prepara dintr-un piure de dovleac, faina de ovaz si seminte de chia, fara oua si fara lactate, fiind aromate cu scortisoara si vanilie. De fiecare data cand cumpar un dovleac intreg si vreau sa il tai, imi e frica sa nu imi tai mai degraba degetele. Asa ca, atunci cand am gasit la congelator niste cubulete de dovleac copt, lasate de mai demult, am stiut imediat ca scap de partea complicata si imi raman doar lucrurile placute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Piureul de dovleac l-am facut chiar eu, din cubuletele de dovleac copt congelat, lasate la decongelat si bagate in blender cateva minute. La fel am procedat si cu faina de ovaz, pe care am macinat-o tot la blender pana a devenit fina. Il poti folosi la conserva sau il poti face chiar tu, asa cum am facut eu: din cubulete de dovleac copt, lasate la decongelat si trecute prin blender cateva minute. Daca pleci de la dovleac proaspat, coace-l mai intai pana se inmoaie, apoi piuraza-l. Cauta un piure gros si concentrat, nu apos &#8212; daca e prea lichid, briosele ies dense. Cel mai bun dovleac pentru piure este cel de tip Hokkaido sau nucsoara, care are pulpa dulce si densa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de ovaz<\/strong> &#8212; pentru aceste briose am folosit faina de ovaz pe care am facut-o chiar eu, la blender. Pui pur si simplu fulgi de ovaz in blender si ii macini pana devin o pulbere fina. E mai ieftina decat cea cumparata gata facuta si o controlezi tu: daca o lasi putin mai grunjoasa, briosele ies cu o textura mai rustica. Daca ai nevoie de varianta fara gluten, asigura-te ca ovazul e certificat fara gluten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Seminte de chia<\/strong> &#8212; se macina la blender impreuna cu ovazul si joaca rolul de liant, in locul oualor. Chia absoarbe lichidul si formeaza un gel care leaga aluatul, asa ca nu sari peste ele. Cumpara seminte intregi, nu macinate din comert, pentru ca isi pastreaza mai bine prospetimea; le macini tu chiar inainte de folosire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina normala sau fara gluten<\/strong> &#8212; jumatate din cantitatea de faina vine de aici. Pentru o varianta clasica folosesti faina alba obisnuita; pentru una fara gluten, un amestec de faina fara gluten merge la fel de bine. Important e sa o masori corect: afaneaz-o usor cu lingura inainte sa o pui in cana, ca sa nu pui prea multa si sa nu iasa briosele tari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar brun<\/strong> &#8212; da briosellor dulceata si umiditate, pentru ca melasa din el atrage apa. Aroma lui caramelizata se potriveste perfect cu dovleacul si scortisoara. Daca preferi, il poti reduce putin, dar nu de tot, pentru ca ajuta si la textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praf de copt si bicarbonat<\/strong> &#8212; impreuna fac briosele sa creasca frumos. Verifica sa fie proaspete: praful de copt vechi isi pierde puterea si briosele raman plate. Un test rapid &#8212; pune putin bicarbonat in otet si daca face spuma, e bun.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara si vanilie<\/strong> &#8212; ele dau caldura si parfumul de toamna. Foloseste scortisoara macinata proaspat daca poti, pentru ca aroma e mult mai intensa decat la cea care a stat luni de zile in borcan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte vegetal si ulei<\/strong> &#8212; laptele vegetal (de soia, ovaz, migdale) aduce lichidul, iar uleiul de masline sau de cocos da fragezime. Uleiul de cocos lasa o aroma fina; cel de masline e mai neutru daca alegi unul rafinat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu amesteca aluatul prea mult.<\/strong> Combina ingredientele uscate cu cele umede doar pana se omogenizeaza. Daca amesteci excesiv, dezvolti glutenul si briosele ies tari si cauciucate, in loc de pufoase.<\/li>\n<li><strong>Umple formele doar pana la 2\/3 din inaltime.<\/strong> Asa cum spune si reteta, lasi loc briosellor sa creasca fara sa dea pe afara si capeti acel varf bombat frumos.<\/li>\n<li><strong>Testeaza coptul cu o scobitoare.<\/strong> Briosele sunt gata cand infigi o scobitoare in mijloc si iese curata. Daca iese cu aluat lipit, mai lasa-le cateva minute. Alege-l in functie de ce ai in casa si de aroma preferata.<\/li>\n<li><strong>Adaosuri<\/strong> &#8212; pentru un plus de gust, poti adauga in aluat fulgi de ciocolata neagra, nuci tocate sau stafide, alaturi de semintele de dovleac de deasupra.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Briosele se pastreaza bine 2-3 zile la temperatura camerei, intr-o cutie inchisa, si pana la 5 zile la frigider. Se mananca delicioase si reci, asa ca sunt perfecte de dus la pachet. Daca vrei sa le pastrezi mai mult, le poti congela: dupa ce s-au racit complet, le pui intr-o punga cu fermoar si le tii pana la 2 luni.
