Se odihneste la frigider, apoi se coace 45 de minute la 180C pana se rumeneste pe margini. E modul meu preferat de a salva painea ramasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8220;Strata&#8221; in sens culinar se refera de obicei la o caserola pentru mic dejun sau brunch care este straturificata, asemanatoare cu o budinca de paine. Imi place ideea asta tocmai pentru ca transforma niste resturi de paine, care altfel ar fi ajuns la cos, intr-un fel de mancare cald si imbietor, fara sa fac un efort suplimentar. E o reteta care lucreaza pentru mine peste noapte, in liniste, cat timp dorm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De obicei, versiunea americana este mai bogata, cu mai multe oua si lapte, pentru a crea o textura asemanatoare cu cea a unui sufleu, si este adesea gatita intr-un singur vas, fiind servita direct din acesta. Eu pastrez exact aceasta abundenta in reteta mea: opt oua si doua cani de lapte integral imbiba painea pana cand cuburile se topesc intr-o textura moale, dar tinuta. Foloseste paine cu maia uscata, de o zi sau doua, taiata cuburi de circa 2-3 cm. Painea proaspata e prea moale si se transforma in pasta cand absoarbe lichidul, in timp ce painea mai uscata isi pastreaza structura si da acel interior pufos cu margini rumene. Daca ai doar paine proaspata, taie-o cuburi si las-o la aer cateva ore sau usuc-o usor in cuptor la temperatura mica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oua<\/strong> &#8212; cele 8 oua sunt liantul care leaga totul si dau acea textura de sufleu. Foloseste oua mari, la temperatura camerei, ca sa se amestece omogen cu laptele. Daca le scoti din frigider cu putin timp inainte, compozitia se va distribui mai uniform peste cuburile de paine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte integral<\/strong> &#8212; cele 2 cani de lapte integral aduc grasimea care face budinca cremoasa. Nu il inlocui cu lapte degresat daca vrei rezultatul clasic, bogat: grasimea e cea care creeaza senzatia aceea catifelata si previne ca budinca sa iasa uscata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciuperci<\/strong> &#8212; cele 250 g de ciuperci feliate trebuie calite pana scapa de toata apa si se rumenesc. E pasul pe care multi il grabesc: daca le pui crude sau insuficient gatite, ele lasa apa in budinca si o fac apoasa. Cauta ciuperci ferme, fara pete umede, si nu le aglomera in tigaie, ca sa se rumeneasca, nu sa fiarba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Baby spanac<\/strong> &#8212; cele 100 g de spanac proaspat se adauga la final, in tigaie, doar un minut, cat sa se ofileasca. Spanacul are foarte multa apa, asa ca adaugarea lui peste ceapa si ciuperci calde il reduce rapid, fara sa lase exces de lichid in compozitie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mustar Dijon<\/strong> &#8212; cele 2 linguri de mustar Dijon nu fac budinca sa iasa iute, ci adauga adancime si scot in evidenta aroma branzeturilor. E un truc clasic la felurile cu branza si oua: aciditatea lui echilibreaza bogatia laptelui si a branzei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza Gruyere si Parmezan<\/strong> &#8212; Gruyere-ul (1 cana, ras) se topeste cremos in interior si are o aroma de nuca care merge perfect cu ouale, iar Parmezanul (\u00bd cana) se presara deasupra si formeaza o crusta rumena, sarata. Rade-le proaspat din bucata, nu le cumpara gata rase: branza ambalata rasa contine agenti anti-aglomerare care impiedica topirea frumoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrisor, nucsoara, sare si piper<\/strong> &#8212; cimbrisorul uscat si sfertul de lingurita de nucsoara sunt condimentele care dau budincii caracterul cald, de mic dejun copios. Nucsoara in special functioneaza minunat alaturi de lapte si branza, asa cum o face si in sosul bechamel.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu sari peste odihna la frigider.<\/strong> Cele cel putin 30 de minute, ideal peste noapte, sunt momentul in care painea absoarbe complet amestecul de ou. Daca o coci imediat, cuburile raman uscate in interior, iar budinca nu se leaga.<\/li>\n<li><strong>Raceste amestecul de legume inainte de a-l combina cu ouale.<\/strong> Reteta cere sa opresti focul si sa acoperi tigaia ca legumele sa se raceasca. Daca le adaugi calde peste oua, ouale incep sa se incheage prematur.<\/li>\n<li><strong>Cum stii cand e gata:<\/strong> dupa cele 45 de minute la 180C, marginile trebuie sa fie rumene si umflate, iar centrul ferm, nu tremurator. Daca infigi un cutit in mijloc, trebuie sa iasa curat, fara compozitie de ou lichida.<\/li>\n<li><strong>Caleste bine ciupercile.<\/strong> Asteapta pana se rumenesc si scapa de apa. Apa nescursa din ciuperci si spanac e principala cauza pentru o budinca apoasa.<\/li>\n<li><strong>Lasa budinca sa se odihneasca 5-10 minute dupa coacere<\/strong> inainte de a o portiona. Evita painea feliata foarte moale, care se face pasta.<\/li>\n<li><strong>Alte branzeturi:<\/strong> Gruyere-ul se poate inlocui cu cheddar maturat, Emmental sau o mozzarella mai uscata. Pentru crusta de deasupra, in loc de Parmezan poti folosi pecorino sau Grana Padano.<\/li>\n<li><strong>Alte legume:<\/strong> ardei copti, dovlecel calit, rosii uscate sau praz se potrivesc la fel de bine ca ceapa si ciupercile. Important e sa fie gatite si scurse de apa inainte.<\/li>\n<li><strong>Alt lapte:<\/strong> poti folosi jumatate lapte si jumatate smantana lichida pentru o budinca si mai bogata, cu textura clara de sufleu.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta budinca e facuta pentru pregatire in avans. Asambleaz-o complet seara, acoper-o si las-o la frigider peste noapte, apoi coace-o proaspata dimineata. Dupa coacere, se pastreaza la frigider, acoperita, 3-4 zile. Reincalzeste portiile in cuptor la temperatura mica sau in tigaie, ca sa isi recapete marginile crocante; la microunde iese mai moale, dar tot buna. Pentru un alt mod clasic de a folosi painea ramasa, incearca <a href=\"https:\/\/gourmandelle.com\/ro\/friganele\/\">friganelele<\/a>, iar daca vrei sa intelegi mai bine de ce painea cu maia se
