Se serveste cald, cu parmezan si patrunjel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru mamaliga cu ciuperci recomand mereu un mix de ciuperci, pentru un gust mai complex. Champignonul singur e cuminte si previzibil, dar in momentul in care adaugi hribi, galbiori si pleurotus alaturi de putine ciuperci de padure uscate, sotelul capata exact acea aroma de padure dupa ploaie pe care o cauti la un preparat rustic. Diferenta dintre o mamaliga cu ciuperci buna si una banala se face aproape in totalitate la nivelul ciupercilor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tin sa mentionez ca ciupercile proaspete vor da intotdeauna cele mai bune rezultate in termeni de aroma si textura, comparativ cu cele conservate sau prelucrate. Ciupercile uscate le folosesc nu ca substitut, ci ca intaritor de gust: apa in care le inmoi devine practic un fond aromat pe care il torn inapoi in tigaie, ca sa nu pierd nimic din savoarea sa tina loc de masa de pranz sau cina.<\/li>\n<li>O reteta de comfort food rustic, cu textura cremoasa si arome de padure, pentru zilele reci de toamna si iarna.<\/li>\n<li>Un mod de a folosi un mix de ciuperci proaspete plus ciuperci de padure uscate, cand vrei sa scoti maximum de aroma din ele.<\/li>\n<li>O masa fara gluten in mod natural, pentru ca mamaliga este facuta din malai, nu din faina placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Textura cremoasa, nu betonata.<\/strong> Mamaliga fierte lent, cu lapte si unt, ramane catifelata si moale, departe de mamaliga tare pe care o tai cu ata.<\/li>\n<li><strong>Aroma intensa de ciuperci.<\/strong> Combinatia de ciuperci proaspete si ciuperci de padure uscate, plus apa lor de inmuiat, da o adancime de gust pe care ciupercile proaspete singure nu o ating.<\/li>\n<li><strong>Vegetariana, dar deloc plictisitoare.<\/strong> Untul, parmezanul, smantana si sosul de soia construiesc un gust bogat, umami, fara pic de carne.<\/li>\n<li><strong>Fara gluten in mod natural.<\/strong> Fiind facuta din malai, e o optiune sigura pentru cei care evita glutenul, fara substitutii complicate.<\/li>\n<li><strong>Ingrediente accesibile.<\/strong> Malai, lapte, unt, usturoi si ciuperci sunt lucruri pe care le gasesti usor, iar ciupercile uscate se pastreaza luni de zile in \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Note despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Malaiul<\/strong> este inima preparatului. Eu prefer malaiul cu macinatura medie, nu cel foarte fin: da o mamaliga cu putin corp, nu pastoasa. Raportul de lichid la malai poate varia in functie de tipul de malai folosit, asa ca verifica intotdeauna instructiunile de pe pachet. In reteta de fata folosesc 1\u00be cani malai la 4 cani apa si 2 cani lapte, dar daca malaiul tau absoarbe mai mult, mai adaugi un strop de apa fierbinte spre final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mixul de ciuperci proaspete<\/strong> (hribi, galbiori, pleurotus si champignon) este ceea ce ridica reteta. Cand le cumperi, alege ciuperci ferme, uscate la pipait, fara pete moi sau umede si fara miros inteptator. Galbiorii si hribii aduc nota de padure, pleurotusul da textura, iar champignonul echilibreaza si umple. Cu cat mixul e mai variat, cu atat gustul e mai complex.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile de padure uscate<\/strong> sunt secretul de aroma. O treime de cana pare putin, dar concentratia lor de gust este enorma. Le inmoi 20 de minute in apa clocotita, le scoti, le toci, iar apa de inmuiere o pastrezi obligatoriu: este un fond aromat pe care il torni inapoi in tigaie. Nu o arunca, acolo sta jumatate din savoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul<\/strong> apare in doua locuri: in sotelul de ciuperci si in mamaliga. In total folosesti generos, pentru ca el este cel care da catifelarea. La mamaliga, untul se incorporeaza la final, impreuna cu parmezanul, ca sa obtii acea luciu si textura matasoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Parmezanul<\/strong> aduce nota sarata, umami, care leaga totul. O lingura in mamaliga si putin presarat deasupra la final sunt suficiente. Daca il razi proaspat dintr-o bucata, in loc sa folosesti din cel gata ras, aroma e simtitor mai buna.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul, sosul de soia si smantana<\/strong> sunt micile trucuri din sotel. Usturoiul zdrobit se caleste doar jumatate de minut, cat sa devina parfumat, nu ars. Asa previi formarea nodurilor, greseala numarul unu la mamaliga. Telul, nu lingura de lemn, este unealta corecta in primele minute.<\/li>\n<li><strong>Ai rabdare la fiert.<\/strong> Dupa ce s-a ingrosat in 3-5 minute, mamaliga mai are nevoie de inca 30 de minute la foc mic, amestecata din cand in cand. Stii ca e gata cand se desprinde usor de pe peretii oalei si nu mai are gust de malai crud, ci unul dulceag, copt.<\/li>\n<li><strong>Nu inghesui ciupercile in tigaie.<\/strong> Daca pui prea multe deodata, ele lasa apa si se fierb in loc sa se rumeneasca. Caleste-le la foc mediu, ca sa se evapore lichidul si sa capete culoare. Aroma adevarata vine din rumenire, nu din fierbere.<\/li>\n<li><strong>Redu lichidul pana se concentreaza.<\/strong> Dupa ce adaugi apa de la ciupercile uscate, gateste pana lichidul scade la jumatate, apoi pana e absorbit complet. O compozitie densa, lucioasa, inseamna aroma concentrata; una apoasa inseamna gust diluat.<\/li>\n<li><strong>Serveste imediat.<\/strong> Mamaliga e cel mai buna calda, cand inca e cremoasa. Pe masura ce se raceste, se intareste, asa ca pregateste sotelul de ciuperci sa fie gata cam in acelasi timp cu mamaliga.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta vegana.<\/strong> Inlocuieste untul cu margarina vegetala sau ulei de masline, laptele cu lapte vegetal neindulcit, smantana cu smantana vegetala, iar parmezanul cu drojdie inactiva sau parmezan vegetal. Pe masura ce se raceste, se intareste, asa ca la reincalzire adauga putin lapte sau apa si amesteca pe foc mic pana redevine cremoasa. Sotelul de ciuperci il poti tine separat, tot la frigider, si il reincalzesti rapid intr-o tigaie.
