Ricotta este ingredientul secret pentru textura cremoasa si bogata a gnocchi-urilor: ii da acea moliciune catifelata care se topeste in gura. Daca vrei sa intelegi mai bine familia asta de preparate, am scris si un <a href=\"https:\/\/gourmandelle.com\/ro\/ce-sunt-gnocchi-ghid\/\">ghid despre ce sunt gnocchi<\/a>, iar reteta de fata se inspira din <a href=\"https:\/\/gourmandelle.com\/ro\/bucataria-italiana\/\">bucataria italiana autentica<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si de ce conteaza fiecare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are putine ingrediente, dar fiecare are un rol clar. Iata la ce sa fii atenta cand le alegi:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Ricotta (140 g)<\/strong> &#8212; alege una cat mai uscata si scurge-o bine inainte, daca lasa multa zer. Umiditatea in plus iti cere mai multa faina si gnocchi ies tari.<\/li><li><strong>Baby spanac proaspat (200 g)<\/strong> &#8212; se opareste scurt, apoi se stoarce foarte bine. Spanacul lasat ud e dusmanul numarul unu al compozitiei.<\/li><li><strong>Parmezan ras (100 g)<\/strong> &#8212; aduce sare, umami si fermitate. El ajuta compozitia sa se lege si da gust adanc.<\/li><li><strong>Oua (2) si faina alba (85 g)<\/strong> &#8212; liantii care tin totul laolalta. Dupa ce il oparesti 2 minute, il scurgi si il stoarce intr-un prosop de bucatarie pana cand aproape nu mai lasa apa. Umiditatea in exces dilueaza compozitia si te obliga sa adaugi faina, iar prea multa faina transforma gnocchi din pufosi in gumosi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La fel de important e racirea: dupa ce formezi bilutele cat o nuca, le tii la frigider 30-40 de minute. Frigul intareste compozitia si ajuta ouale si branza sa se lege, astfel incat bilutele isi pastreaza forma cand intra in apa. Daca sari peste acest pas, risti ca gnocchi sa se imprastie la fierbere.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le fierbi corect, pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pune apa la fiert, apoi redu focul la mediu inainte sa adaugi gnocchi. Apa care clocoteste prea tare ii loveste si ii poate sparge, mai ales ca sunt delicati. Adauga cate 8-10 bucati o data, nu mai multe, ca sa nu se lipeasca intre ele si sa scada brusc temperatura apei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Semnul ca sunt gata e simplu: cand bilutele ies la suprafata si plutesc, mai lasa-le un minut, apoi scoate-le cu o spumiera. Daca vrei o masa mai consistenta, merg minunat alaturi de un sos usor de rosii sau de unt cu salvie. Poti forma bilutele si sa le tii la frigider cateva ore (peste cele 30-40 de minute de racire) inainte sa le fierbi. Daca vrei sa le congelezi, asaza-le crude pe o tava, una langa alta, baga tava la congelator pana se intaresc, apoi muta-le intr-o punga; le fierbi direct din congelator, doar cu un minut in plus. Odata fierte, gnocchi se pastreaza la frigider 1-2 zile si se reincalzesc cel mai bine intr-o tigaie cu putin ulei de masline.
