Spre deosebire de sangria clasica de vara, mai usoara si racoritoare, varianta de iarna are note profunde, calde, cu un parfum care aminteste de vin fiert dar fara alcoolul extras la caldura. Se serveste rece, garnisita cu rondele de fructe si betisoare de scortisoara. Nu e nevoie de un vin scump, un vin de calitate medie functioneaza excelent. Evita vinurile dulci (demisec sau dulce) pentru ca sangria va iesi prea zaharoasa; vinul sec sau demisec este optim.<\/p><p><strong>Brandy sau lichior de portocale (Cointreau\/Triple Sec)<\/strong> &#8211; brandy-ul adauga profunzime si o nota calda; lichiorul de portocale (Cointreau, Grand Marnier sau Triple Sec) adauga dulceata si aroma de citrice. Poti folosi unul sau ambele. Cantitate: 60-90ml per sticla de vin.<\/p><p><strong>Portocalele<\/strong> &#8211; foloseste portocale bio sau spalate bine daca le adaugi cu coaja (cum arata cel mai bine in pahar). Portocalele de Navel sau Valencia sunt mai dulci si mai aromate. Tai jumatate din cantitate in rondele pentru pahar, restul se stoarce pentru suc.<\/p><p><strong>Condimentele<\/strong> &#8211; scortisoara (1-2 betisoare, nu macinata &#8211; betisoarele aromatizeaza fara sa tulbure lichidul), cuisoare (3-4 bucati, nu mai multe altfel domina), anason stelar optional (1-2 bucati pentru o nota lejera de fenicul). Condimentele se scot dupa macerare sau se lasa pentru decor.<\/p><p><strong>Fructele de sezon<\/strong> &#8211; mere (felii subtiri, Granny Smith sau Fuji), pere, rodii (boabele se adauga la final), lamaie verde. Macerarea permite vinului sa absoarba aromele fructelor si condimentelor &#8211; diferenta fata de o sangria facuta cu 30 de minute inainte este foarte mare. Cu cat macereaza mai mult (pana la 24 de ore), cu atat gustul e mai rotund si mai complex.<\/li>\n\n<li>Nu adauga sifonul sau apa minerala la inceput &#8211; adauga-le direct in pahare la servire, sau in vas cu maxim 30 de minute inainte. Sifonul adaugat de la inceput isi pierde efervescenta in cateva ore la frigider.<\/li>\n\n<li>Alege vinul corect &#8211; un vin prea tanin (prea sec si astringent) va domina nepl\u0103cut dupa macerare. Daca vinul ti se pare aspru singur, adauga putina miere sau zahar de trestie in compozitie la inceput.<\/li>\n\n<li>Serveste in pahare mari (tip goblet sau mason jar) cu multa gheata si o felita de portocala pe margine. Gheata diluata usor sangria, deci daca ai timp, fa gheata din suc de portocale &#8211; racorit fara dilutie.<\/li><\/ul><h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2><p><strong>Sangria de iarna fara alcool<\/strong> &#8211; inlocuieste vinul rosu cu suc de struguri rosii fara alcool sau suc de visine neindulcit, si brandy-ul cu suc de portocale concentrat. Condimentele si fructele raman aceleasi. Macereaza 4-6 ore la frigider inainte de servire.<\/p><p><strong>Varianta cu vin alb sau rose<\/strong> &#8211; pentru o sangria mai usoara si mai racoritoare, foloseste un vin alb sec (Pinot Grigio, Sauvignon Blanc) sau un rose sec. Inlocuieste merele cu piersici sau mango congelat, scortisoara cu cardamom si adauga menta proaspata. Rezultatul este o sangria mai frumos colorata si mai florala.<\/p><p><strong>Cu vin fiert concentrat<\/strong> &#8211; incalzeste 200ml din vin cu condimentele si zaharul pana la 70\u00b0C (fara sa fiarba), lasa sa se raceasca complet, apoi adauga restul vinului rece si fructele. A doua zi este de obicei mai buna decat in prima zi. Nu se congeleaza bine datorita continutului de alcool si fructelor. Fructele din sangrie se inmoaie dupa 24 de ore &#8211; daca vrei sa le servesti si ca garnitura, pune deoparte cateva felii proaspete separat si adauga-le la servire.<\/p><p>Pentru un eveniment, poti prepara sangria cu 24 de ore inainte, o pastrezi la frigider in vas acoperit, si adaugi gheata si sifonul direct in pahare la servire. Portia mare: calculeaza aproximativ 150-200ml de sangria per persoana la un aperitiv, 250ml daca este bautura principala a serii.<\/p><figure class=\"wp-block-image size-full\"><img loading=\"lazy\"
