Se prepara in sub 30 de minute si poate fi vegana sau vegetariana, dupa preferinta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cu Anul Nou Chinezesc la cativa pasi distanta, este momentul perfect pentru cateva retete asiatice facute acasa, iar aceasta supa picanta si acra este exact ce iti trebuie cand vrei ceva cald, intens si reconfortant fara prea mult efort. Spre deosebire de varianta de la restaurant, care contine adesea carne de porc si oua, aici totul porneste de la o baza vegetala: ciuperci uscate care dau un gust profund, umami, tofu pentru proteine si un final iute-acrisor care iti trezeste papilele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult la reteta asta este ca cele doua arome care o definesc &#8212; iuteala si aciditatea &#8212; vin la final, nu in timpul fierberii. Adaugi amestecul de otet si piper alb abia dupa ce ai luat oala de pe foc, asa pastrezi prospetimea si intensitatea lor in loc sa le &#8220;fierbi&#8221; pana dispar. Ciupercile uscate (shiitake, urechi de lemn, enoki) au un gust mult mai concentrat, umami, decat cele proaspete, pentru ca uscarea le intensifica aromele. Cauta ciuperci intregi, nu pulbere, si rehidrateaza-le complet inainte de a le folosi. Nu arunca apa de inmuiere: contine cea mai mare parte din aroma, iar reteta iti cere sa pastrezi o ceasca din ea pentru supa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Otetul de orez<\/strong> &#8212; responsabil pentru partea &#8220;acrisoara&#8221;. Are o aciditate mai blanda si mai rotunda decat otetul de mere sau cel alb, ceea ce il face ideal pentru bucataria asiatica. Daca il cumperi, alege-l pe cel simplu, neindulcit (nu otetul de orez pentru sushi, care contine zahar si sare).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Piperul alb<\/strong> &#8212; sursa caldurii iuti, nu chili-ul. Piperul alb are o iuteala mai patrunzatoare si un parfum usor pamantos, tipic pentru hot and sour soup autentic. Daca il ai boabe, macina-l proaspat chiar inainte; isi pierde repede din intensitate odata macinat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu<\/strong> &#8212; alege tofu tare sau extra-tare pentru aceasta supa, pentru ca isi pastreaza forma cubuletelor in lichidul fierbinte. Reteta cere tofu calit usor, ceea ce ii da o crusta fina si o textura mai ferma. Scurge-l bine si tamponeaza-l cu un prosop de hartie inainte de a-l caliti, ca sa nu sara in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Texturatul de soia felii<\/strong> &#8212; inlocuieste textura &#8220;carnoasa&#8221; a retetei originale. Rehidrateaza-se rapid in supa fierbinte si absoarbe aromele din jur. Daca felioarele sunt mari, taie-le in fasii subtiri ca sa se imbibe mai bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidonul de porumb<\/strong> &#8212; da supei consistenta caracteristica, usor vascoasa. Secretul e sa il amesteci intai cu apa rece, formand o pasta neteda, si abia apoi sa il torni treptat in supa, amestecand continuu. Asa eviti cocoloasele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul, ceapa verde si uleiul de susan<\/strong> &#8212; trio-ul aromatic. Ghimbirul si ceapa verde construiesc baza parfumata in care fierbe supa, iar uleiul de susan, adaugat la final ca un strop, da acea nota prajita, nuca, fara de care preparatul nu ar fi complet. Nu fierbe uleiul de susan &#8212; caldura ii distruge aroma, asa ca il pui doar in farfurie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Rehidrateaza ciupercile cu rabdare.<\/strong> O ora in apa fierbinte le inmoaie complet si elibereaza maximum de aroma. Daca te grabesti si le scurtezi timpul, vor ramane tari si supa va fi mai saraca in gust. Stii ca sunt gata cand sunt flexibile si carnoase la atingere.<\/li>\n<li><strong>Adauga otetul si piperul abia la final.<\/strong> Aceasta este greseala cea mai frecventa: lasarea lor sa fiarba face aciditatea si iuteala sa se evapore. Le combini separat intr-un bol mic si le torni dupa ce ai luat oala de pe foc, ca sa pastrezi intensitatea proaspata.<\/li>\n<li><strong>Toarna amidonul ca pasta, nu uscat.<\/strong> Amesteca-l intai cu 4 linguri de apa rece pentru o pasta neteda, apoi adauga-l treptat in supa fierbinte amestecand continuu. Supa se ingroasa pe masura ce fierbe usor 10-15 minute.<\/li>\n<li><strong>Pentru firisoare de ou perfecte (varianta vegetariana), toarna ouale batute incet, intr-un fir subtire, amestecand lent supa intr-o singura directie.<\/strong> Asa obtii panglici fine in loc de cocoloase.<\/li>\n<li><strong>Gusta inainte de servire.<\/strong> Echilibrul iute-acrisor e personal: daca vrei mai acrisor, mai pui putin otet; daca vrei mai iute, mai adaugi piper alb. Supa ramane la fel de satioasa datorita tofu-ului si texturatului de soia, iar varianta de post este perfecta in zilele cu restrictii alimentare.<\/li>\n<li><strong>Otet:<\/strong> daca nu ai otet de orez, poti folosi otet de mere sau, pentru o nota mai apropiata de original, otet negru chinezesc (Chinkiang), care da o aciditate mai profunda.<\/li>\n<li><strong>Ciuperci:<\/strong> daca nu gasesti amestec asiatic uscat, poti folosi shiitake uscate sau urechi de lemn separat. In lipsa lor, ciuperci proaspete shiitake merg, dar gustul va fi mai bland.<\/li>\n<li><strong>Mai multa textura:<\/strong> adauga lastari de bambus sau morcov taiat juliene odata cu ciupercile, pentru crocant si culoare.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Supa picanta si acrisoara se pastreaza la frigider, intr-un recipient inchis etans, 3-4 zile. Pe masura ce sta, amidonul tinde sa o ingroase, asa ca la reincalzire poti adauga putina supa de legume sau apa pentru a o subtia. Incalzeste-o usor, la foc mic, fara sa o lasi sa clocoteasca puternic, ca sa nu se intareasca tofu-ul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa o pregatesti in avans, poti rehidrata ciupercile cu o zi inainte si tine-le la frigider impreuna cu apa lor de inmuiere.
