Se prefierb scurt, apoi se rumenesc in tigaie cu ceapa, sare, piper si ceapa verde proaspata. Un preparat simplu, reconfortant si plin de gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am ales sa pregatesc acesti cartofi Lyonnaise pentru ca ma fascineaza mereu cum aromele simple pot crea un preparat atat de delicios. Doua-trei ingrediente de baza, cartofi, ceapa si unt, si totusi rezultatul are profunzimea aceea pe care o cauti intr-o garnitura buna de duminica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place sa ii fac atunci cand vreau ceva ce nu cere ingrediente speciale, dar care arata si are gust de restaurant. Secretul nu sta in lista de cumparaturi, ci in rabdarea de a lasa ceapa sa se caramelizeze incet si cartofii sa prinda crusta. Feliaza-i uniform, la o grosime de aproximativ jumatate de centimetru, ca sa se gateasca egal. Daca feliile sunt prea groase nu prind crusta, iar daca sunt prea subtiri se rup cand le intorci in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul<\/strong> aduce aroma de nuca si culoarea aurie caracteristica preparatului. Foloseste-l impreuna cu uleiul de masline, nu singur: uleiul ridica punctul de ardere, asa ca untul nu se arde si se rumeneste frumos in loc sa se innegreasca. Aceasta este greseala clasica la cartofii Lyonnaise, untul singur la foc mare se arde rapid si lasa un gust amar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> completeaza untul si ajuta cartofii sa capete acea crusta aurie. Nu ai nevoie de ulei extravirgin scump aici, un ulei de masline obisnuit rezista mai bine la caldura si face exact treaba pentru care il folosesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> este al doilea pilon al retetei. Feliaz-o fin si uniform, ca sa se caramelizeze egal odata cu cartofii. Cu cat o lasi mai mult la foc mediu, cu atat devine mai dulce, asa ca nu te grabi: aici se ascunde tot caracterul preparatului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa verde<\/strong> se adauga la final, cruda, pentru o nota proaspata si usor picanta care taie din bogatia untului. Toac-o marunt si presar-o peste cartofi chiar inainte de a servi, ca sa isi pastreze culoarea vie si prospetimea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sarea si piperul<\/strong> se adauga la final, dupa gust. Daca le pui prea devreme, sarea trage apa din cartofi si ingreuneaza rumenirea, asa ca pastreaza-le pentru momentul servirii.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu sari peste prefierbere.<\/strong> Cele 4 minute in apa clocotita gatesc cartofii pe interior, ca sa nu ramana cruzi in mijloc atunci cand ii rumenesti. Scurge-i bine inainte de a-i pune in tigaie: apa ramasa impiedica formarea crustei.<\/li>\n<li><strong>Lasa cartofii in pace in tigaie.<\/strong> Dupa ce ii adaugi, nu ii misca imediat. Lasa-i sa stea cateva minute pe fiecare parte ca sa prinda culoare. Stii ca sunt gata de intors cand se desprind singuri de pe fundul tigaii si au marginile aurii.<\/li>\n<li><strong>Nu supraaglomera tigaia.<\/strong> De aceea reteta cere sa adaugi cartofii si ceapa in doua transe. Daca pui tot deodata, ingredientele se fierb in aburi in loc sa se rumeneasca si pierzi crusta crocanta.<\/li>\n<li><strong>Caramelizeaza ceapa cu rabdare.<\/strong> Cele 15 minute de la final nu sunt optionale: aici ceapa isi elibereaza dulceata si capata culoarea auriu inchis. Gustul ramane bogat, iar caramelizarea cepei functioneaza la fel de bine.<\/li>\n<li><strong>Ierburi aromatice:<\/strong> adauga cimbru proaspat sau patrunjel tocat la final pentru o nota frantuzeasca in plus. Cimbrul merge deosebit de bine cu untul si ceapa caramelizata.<\/li>\n<li><strong>Mai mult usturoi:<\/strong> daca iti place gustul de usturoi, poti adauga unul-doi catei feliati fin in ultimele minute de gatit, ca sa nu se arda.<\/li>\n<li><strong>Garnitura completa:<\/strong> serveste cartofii alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-bacon-vegan\/\">bacon vegan<\/a> pentru un fel principal consistent si plin de savoare.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cartofii Lyonnaise sunt cei mai buni proaspat facuti, cand au crusta crocanta si ceapa moale si dulce. Daca iti raman, pastreaza-i intr-un recipient inchis la frigider pana la 3 zile. Pentru a-i reincalzi, foloseste o tigaie incinsa cu putin ulei, nu cuptorul cu microunde: tigaia le reda din crocant, in timp ce microundele ii inmoaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, poti felia cartofii si tine-i in apa rece pana la cateva ore inainte de gatit, ca sa nu se oxideze si sa se inchida la culoare. Scurge-i si usuca-i bine inainte de prefierbere.
