Se fierbe la foc mic peste o ora si se serveste cu varza, ridichi, avocado si lime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ador bucataria mexicana si ma entuziasmez de fiecare data cand ma apuca poftele sa testez retete noi cu specific mexican. Pozole a fost mereu pe lista, insa varianta clasica se face cu carne, asa ca am vrut sa o transform intr-o reteta pe care sa o pot manca si in zilele de post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Asa a aparut versiunea de fata: am pastrat tot ce face pozole-ul memorabil &#8212; porumbul mare si masticabil, sosul rosu din ardei guajillo si muntele de garnituri proaspete de deasupra &#8212; dar in loc de carne folosesc texturat de soia. La fel ca in varianta moderna si vegana, unde carnea e inlocuita de obicei cu texturat de soia, tofu sau ciuperci, soia absoarbe aroma supei si capata o textura care chiar te pacaleste. Cauta ardei flexibili, luciosi, care inca se indoaie usor; daca sunt uscati de tot si se sfarama, si-au pierdut din arome. Guajillo e moderat ca iuteala si dulceag, deci e bun chiar daca nu vrei o supa foarte iute. Indeparteaza cotorul si o parte din seminte daca preferi mai blanda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Texturat de soia (felii uscate)<\/strong> &#8212; inlocuitorul de carne din aceasta reta. Se rehidrateaza inainte de gatit si, ca un burete, absoarbe aroma supei, deci nu il pune uscat direct in oala. Feliile mari dau o textura mai apropiata de carne decat granulele fine. Dupa ce se inmoaie, stoarce-l usor de surplusul de apa ca sa nu dilueze supa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Porumb alb nixtamalizat<\/strong> &#8212; boabele mari, tratate cu var alimentar, sunt elementul clasic al pozole-ului; au o textura masticabila si o aroma usor de masa de porumb. Daca nu gasesti varianta uscata sau congelata, foloseste porumb nixtamalizat din conserva, bine scurs. E diferit de porumbul dulce obisnuit, asa ca merita cautat la magazinele cu specific latino-american.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; apare in doua roluri: o parte calita in ulei de masline, ca baza aromata pentru supa, si o parte mixata cruda in sosul de ardei. Folosesc catei proaspeti, fermi; usturoiul calit trebuie scos cand devine auriu, nu maro, fiindca ars capata o nota amara care strica supa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Supa de legume<\/strong> &#8212; baza lichida a felului, deci calitatea ei se simte direct in rezultat. O supa de casa sau una de buna calitate face diferenta fata de una sarata si fada. Fiindca fierbe peste o ora si se reduce, adauga sarea spre final si gusta, ca sa nu iasa prea sarata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oregano si chimen (chimion macinat)<\/strong> &#8212; duo-ul de condimente care da nota mexicana. Oregano uscat freacat intre palme inainte de a-l pune elibereaza mai multe uleiuri aromate. Chimenul macinat aduce caldura aceea pamantie; daca ai seminte intregi, prajeste-le scurt in tigaie uscata si macina-le pentru o aroma mult mai intensa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Garniturile proaspete<\/strong> &#8212; varza alba tocata, ridichi, ceapa felii, avocado, lime, ceapa verde, rosii cherry, patrunjel si coriandru. Nu sunt optionale, sunt parte din experienta pozole: se pun crude in bol, peste supa fierbinte, si aduc crocant, aciditate si prospetime. Taie-le chiar inainte de servire ca sa ramana vii si colorate.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Inmoaie ardeii corect.<\/strong> Prajeste-i scurt la foc mic doar pana devin usor moi si parfumati &#8212; daca ii arzi, sosul iese amar. Apoi lasa-i in apa clocotita 10-15 minute, pana se inmoaie complet, inainte sa-i mixezi.<\/li>\n<li><strong>Strecoara obligatoriu sosul de ardei.<\/strong> Dupa ce mixezi ardeii cu usturoiul si apa de inmuiere, treci compozitia printr-o sita inainte sa o adaugi in supa. Asa scapi de coji si seminte si obtii un sos catifelat, nu granulos.<\/li>\n<li><strong>Nu te grabi cu fiertul.<\/strong> Pozole are nevoie de timp: dupa ce adaugi sosul, lasa supa la foc mic inca o ora. Atunci se leaga aromele si supa capata profunzime &#8212; vei sti ca e gata cand bucataria miroase a ardei si oregano, iar lichidul a prins culoare.<\/li>\n<li><strong>Gusta de sare la final.<\/strong> Pentru ca supa se reduce in timp ce fierbe, sarea pusa la inceput se poate concentra prea tare. Potriveste de sare si piper spre sfarsit.<\/li>\n<li><strong>Serveste garniturile separat.<\/strong> Pune varza, ridichile, avocado, lime si ierburile in boluri pe masa si lasa pe fiecare sa-si garniseasca portia. Tofu ferm, taiat cubulete si rumenit, sau ciupercile pleurotus rupte fasii dau o textura asemanatoare si absorb bine aroma supei.<\/li>\n<li><strong>Porumbul.<\/strong> Ideal e porumb alb nixtamalizat, dar daca nu gasesti, poti folosi porumb din conserva bine scurs. Textura nu va fi identica cu cea clasica, insa supa ramane gustoasa.<\/li>\n<li><strong>Nivelul de iuteala.<\/strong> Guajillo e moderat. Pentru o supa mai iute, adauga unul-doi ardei iuti uscati de tip arbol la sosul de baza; pentru o varianta blanda, scoate toate semintele din ardei inainte sa-i inmoi.<\/li>\n<li><strong>Garniturile.<\/strong> Joaca-te cu ce pui deasupra: in loc de varza alba poti folosi varza rosie pentru culoare, iar daca nu-ti place coriandrul, ramai doar la patrunjel. Lime-ul insa nu il sari &#8212; aciditatea lui echilibreaza supa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pozole se pastreaza excelent. Supa de baza (fara garnituri) se tine la frigider, in recipient inchis, 3-4 zile si chiar castiga in aroma a doua zi, dupa ce condimentele se aseaza. Se reincalzeste usor pe aragaz, la foc mic; daca s-a ingrosat, mai adauga putina supa de legume sau apa. Pentru pastrare mai lunga, supa se congeleaza pana la 2-3 luni &#8212; portioneaz-o si decongeleaz-o la frigider peste noapte. Garniturile proaspete (avocado, ridichi, varza, ierburi) se pregatesc intotdeauna pe loc, chiar inainte de servire, ca sa ramana crocante si colorate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut, mai poti incerca si alte retete din <a href=\"https:\/\/gourmandelle.com\/ro\/bucataria-mexicana\/\">bucataria mexicana<\/a> de pe blog, precum <a href=\"https:\/\/gourmandelle.com\/ro\/ardei-umpluti-mexicani\/\">ardeii umpluti mexicani<\/a>.
