Jumatate din ea se paseaza pentru textura cremoasa, iar restul ramane cu bucati de cartof. E genul de reteta pe care o fac fara sa ma mai uit la lista de ingrediente, pentru ca le am mereu in casa: cativa cartofi, o ceapa, putin lapte. Mi se pare ca, oricat de obosita as fi, o oala de supa crema de cartofi face seara mai buna.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult la ea este truc-ul de a pasa doar jumatate din supa. Asa ai si cremozitatea aceea bogata, dar si bucatile de cartof care iti dau senzatia ca mananci o supa adevarata, nu doar o crema fina. E un echilibru pe care l-am ajustat de-a lungul timpului si la care nu mai renunt.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofi albi<\/strong> &#8212; sunt vedeta retetei si nu sunt interschimbabili cu orice soi. Cartofii albi, cu continut mediu de amidon, se desfac frumos la fierbere si dau acea cremozitate naturala. Alege cartofi fermi, fara pete verzi sau coltisori incoltiti; verdele indica solanina si da un gust amar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul si uleiul de masline<\/strong> &#8212; le folosesc impreuna intentionat. Untul aduce aroma bogata si rotunda, iar uleiul de masline ridica punctul de ardere, asa ca ceapa se caleste linistit fara sa se arda untul. E un mic truc clasic de bucatarie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba<\/strong> &#8212; aici se intampla magia ingrosarii. Presarata peste ceapa si usturoiul calit, faina formeaza un fel de rantas (roux) care leaga supa si ii da corp. Fara ea, supa ar ramane apoasa, indiferent cat de mult o paseze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele si smantana lichida<\/strong> &#8212; ele transforma o supa simpla de cartofi intr-o crema bogata. Laptele aduce volum si finete, iar smantana lichida adauga grasimea care imbraca lingura. Adauga-le treptat si tine focul mic, ca sa nu se taie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana<\/strong> &#8212; se adauga la final, dupa ce ai pasat jumatate din supa. Pe langa cremozitate, ea aduce o nota usor acrisoara care echilibreaza dulceata cartofilor. Las-o sa se incorporeze la foc mic, niciodata la fierbere puternica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cayenne si piper negru<\/strong> &#8212; nu te lasa pasagit de cantitatea mica. Jumatatea de lingurita de cayenne nu face supa iute, ci ii da o caldura subtila care scoate in evidenta restul aromelor. Vrei dulceata ei, nu aroma de prajit. Stii ca e gata cand devine sticloasa si nu mai are colturi albe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gateste faina cel putin 30 de secunde dupa ce o presari. Daca o introduci direct in lichid fara s-o &#8220;coci&#8221; putin in grasime, supa va avea un gust crud, fainos. Amesteca insistent cu telul ca sa nu se faca cocoloase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Greseala cea mai frecventa este sa lasi supa sa fiarba in clocot dupa ce ai adaugat laptele si smantana. La temperatura mare, lactatele se taie si supa face fulgi. Tine focul mic si lasa-o sa fiarba molcom.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand pasezi jumatate din supa, ai grija la aburul fierbinte din blender. Lasa capacul putin intredeschis si acopera-l cu un prosop, ca aburul sa aiba pe unde iesi. Altfel, presiunea poate impinge capacul si te poti opari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cartofii sunt gata cand intra usor furculita in ei, dupa aproximativ 20 de minute de fierbere. Nu te grabi: cartoful insuficient fiert nu se va pasa frumos si va lasa bucati tari in supa cremoasa.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o poti adapta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru o versiune vegana, inlocuieste untul cu margarina vegetala sau ulei, laptele cu <a href=\"https:\/\/gourmandelle.com\/ro\/lapte-de-ovaz\/\">lapte de ovaz<\/a> sau alt lapte vegetal neindulcit, iar smantana cu o alternativa pe baza de soia sau caju. La ornat, poti folosi una dintre <a href=\"https:\/\/gourmandelle.com\/ro\/retete-vegane-de-branza\/\">retetele vegane de branza<\/a> in loc de branza clasica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei o supa si mai consistenta, adauga deasupra ceva crocant: <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-faci-bacon-vegan\/\">bacon vegan<\/a> faramitat merge minunat cu cartoful cremos. Pe masura ce sta, se ingroasa, pentru ca amidonul din cartofi continua sa lege lichidul. La reincalzire, adauga putin lapte sau supa de legume si amesteca pana revine la consistenta dorita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Incalzeste-o la foc mic, amestecand des, niciodata in clocot puternic, ca lactatele sa nu se taie. Daca stii din start ca o vei pastra mai mult, o poti face fara smantana si sa o adaugi proaspata la reincalzire; asa ramane mai stabila.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Congelarea nu e ideala pentru supele cu lactate, pentru ca textura se poate desface la dezghetare. Daca vrei totusi sa congelezi, fa baza de cartofi pasata fara lapte si smantana, congeleaz-o, iar lactatele le adaugi proaspete cand o gatesti din nou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac supele crema, mai incearca <a href=\"https:\/\/gourmandelle.com\/ro\/supa-crema-de-cartofi-dulci-ghimbir\/\">supa crema de cartofi dulci cu ghimbir<\/a> sau o <a href=\"https:\/\/gourmandelle.com\/ro\/ciorba-de-varza-cu-cartofi\/\">ciorba de varza cu cartofi<\/a> pentru zilele in care vrei ceva mai lejer.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
