Termenul &#8220;charcuterie&#8221; se refera la arta de a aranja si servi o varietate de gustari pe acelasi platou. Ideea de aici e simpla: pastram acelasi spirit de abundenta si varietate, dar inlocuim totul cu ingrediente 100% vegetale. Rezultatul e un platou la fel de bogat vizual si mult mai prietenos pentru oricine tine post sau mananca vegan.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele de pe platou si cum le alegi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un platou reusit are nevoie de cateva categorii care se completeaza reciproc. Iata ce intra in acesta si la ce sa fii atenta cand cumperi:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Cremele si pastele:<\/strong> humus, pasta de fasole si o tapenade de masline. Acestea dau platoului consistenta si savoare si sunt elementele in care vor inmuia toata lumea legumele si painea.<\/li><li><strong>Branza vegana:<\/strong> alege una sau doua sortimente cu texturi diferite, una mai tare de feliat si una cremoasa de intins. Cauta produse pe baza de nuci caju sau migdale, care au gust mai rotund.<\/li><li><strong>Maslinele:<\/strong> reteta foloseste masline Kalamata fara samburi pentru tapenade si masline marinate de casa. Maslinele cumparate deja fara samburi iti scutesc mult timp la asamblare.<\/li><li><strong>Fructele proaspete:<\/strong> para, capsuni, zmeura si afine aduc culoare si o nota dulce-acrisoara care echilibreaza gustarile sarate. Alege fructe ferme, care nu lasa zeama pe platou.<\/li><li><strong>Legumele crocante:<\/strong> morcov taiat betisoare, castravete felii si ridichi proaspete. Pentru tapenade, pui maslinele Kalamata fara samburi, usturoiul, patrunjelul, zeama de lamaie, piperul si uleiul de masline extravirgin in blender si pulsezi doar cateva secunde. Pulsarea scurta e cheia: vrei o pasta cu textura, nu o piure fina, asa ca opreste-te imediat ce ingredientele s-au amestecat si inca se simt bucatelele de masline.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru maslinele marinate, combina intr-un bol maslinele cu lamaia taiata marunt, uleiul, ardeiul iute felii, oregano si tarhonul, amesteca usor, acopera cu folie si da la rece. Lasa-le sa se marineze minimum 3 ore, dar gustul cel mai bun il vei avea dupa una pana la trei zile, cand aromele au avut timp sa patrunda. Asa ca este o componenta perfecta de pregatit din timp.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Trucuri pentru un platou care arata impecabil<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Asamblarea face toata diferenta dintre o tava aglomerata si un platou care iti taie respiratia. Cateva reguli simple care ma ajuta de fiecare data:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Incepe cu vasele mici.<\/strong> Aseaza intai canutele cu tapenade, cu masline marinate, bolurile cu humus, pasta de fasole si branza vegana. Ele sunt punctele de ancorare in jurul carora construiesti restul.<\/li><li><strong>Lucreaza dinspre un colt spre mijloc.<\/strong> Pleaca din coltul de sus al platoului si umple treptat spre centru. Asa eviti sa ramai cu spatii goale incomode in mijloc.<\/li><li><strong>Grupeaza pe culori si texturi.<\/strong> Pune fructele proaspete langa elementele sarate ca sa contrasteze, iar legumele crocante aproape de creme, ca sa fie usor de inmuiat.<\/li><li><strong>Umple toate golurile.<\/strong> Folia de bagheta si saratelele vegane de seminte se aseaza pe margine, iar pesmetii picanti de casa sunt perfecti pentru a astupa orice spatiu ramas liber. Tapenade se pastreaza la frigider, intr-un borcan inchis, cateva zile, iar maslinele marinate sunt chiar mai bune dupa una-doua zile de stat la rece. Cremele de branza vegana, humusul si pasta de fasole se pot face cu o zi inainte si tinute acoperite la frigider. Lasa doar feliatul legumelor si al fructelor proaspete pentru ziua petrecerii, ca sa ramana crocante si fara zeama.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Odata asamblat, platoul se serveste cel mai bine in aceeasi zi, la temperatura camerei. Daca il pregatesti cu cateva ore inainte, acopera-l lejer cu folie si tine-l la rece, apoi scoate-l cu vreo 20 de minute inainte de servire, ca aromele sa se deschida.
