Vodka se evapora la gatire si lasa in urma un sos catifelat, usor picant, cu o aroma rotunda de rosii. Aici se ascunde tot secretul. Eu prefer aceasta versiune pentru ca sosul iese matasos fara sa fie greu, iar combinatia de pasta de rosii concentrata, smantana si parmezan da o profunzime de aroma pe care un simplu sos de rosii nu o atinge niciodata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand am chef de ceva reconfortant, dar nu vreau sa stau ore in bucatarie, asta e reteta la care apelez. Se face cat fierb pastele, iar fulgii de ardei iute ii ajustez de fiecare data in functie de cat de picant imi doresc. Striurile si interiorul gol al tubului retin sosul, ceea ce face fiecare imbucatura mai gustoasa. Cauta paste din gris dur (semola di grano duro), care isi pastreaza textura al dente mai bine decat cele din faina obisnuita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de rosii<\/strong> &#8212; este inima acestui preparat. Caut o pasta de rosii cat mai concentrata, de un rosu inchis, fara ingrediente adaugate in afara de rosii si eventual sare. Cantitatea de 170 g pare mare, dar tocmai concentrarea ei, dupa ce o calesti, da gustul intens de Penne alla Vodka.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana lichida<\/strong> &#8212; foloseste smantana pentru gatit, cu un continut de grasime mai mare, pentru ca rezista mai bine la caldura si nu se taie. Cu cat e mai grasa, cu atat sosul iese mai catifelat. Adaug-o pe foc mediu si amesteca pentru a o incorpora treptat in pasta de rosii calita.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Parmezanul proaspat ras<\/strong> &#8212; razuieste-l tu din bucata, nu il cumpara pre-ras. Parmezanul ambalat deja ras contine adesea agenti antiaglomeranti care impiedica topirea uniforma si pot lasa sosul granulos. Parmezanul proaspat se topeste lin si da acea aroma sarata, umami, care echilibreaza dulceata rosiilor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de ardei rosu chili<\/strong> &#8212; ei aduc caldura caracteristica. Cele 3 lingurite din reteta dau un preparat clar picant; daca preferi ceva mai bland, incepe cu mai putin si ajusteaza la final. Adaugarea lor pe foc, in sos, le scoate aroma mai bine decat daca i-ai pune doar la ornat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul<\/strong> &#8212; cele 2 linguri adaugate la final dau sosului luciu si o textura mai bogata. Incorporeaza-l in afara focului mare, amestecand, pentru ca se emulsioneaza in sos si il face matasos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul si busuiocul uscat<\/strong> &#8212; usturoiul tocat marunt se caleste impreuna cu pasta de rosii, asa ca ai grija sa nu se arda, altfel devine amar. Busuiocul uscat se adauga in sos si infuzeaza treptat o nota aromatica de fundal.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste pasta de rosii pana se inchide la culoare.<\/strong> Acesta e pasul cel mai important. Tine-o pe foc 4-5 minute, amestecand, pana din rosu aprins devine rosu-caramiziu. Asa elimini aciditatea si scoti la suprafata dulceata. Greseala obisnuita e sa o calesti prea putin &#8212; atunci sosul ramane acrisor.<\/li>\n<li><strong>Pastreaza apa de la fierberea pastelor.<\/strong> Amidonul dizolvat in ea leaga sosul si il face cremos. Adaug-o treptat, cate putin, pana cand sosul are consistenta dorita si imbraca pastele fara sa fie nici prea gros, nici apos.<\/li>\n<li><strong>Scoate pastele al dente.<\/strong> Fierbe-le cu un minut mai putin decat scrie pe ambalaj, pentru ca isi mai continua gatirea cand le amesteci in sosul fierbinte. Stii ca sunt gata cand inca opun o mica rezistenta la muscatura.<\/li>\n<li><strong>Adauga parmezanul cand sosul nu mai clocoteste tare.<\/strong> La temperatura prea mare branza se poate aglomera. Trage tigaia pe foc mediu-mic si amesteca pana cand sosul devine omogen si lucios.<\/li>\n<li><strong>Serveste imediat.<\/strong> Sosul cremos e cel mai bun proaspat, cand inca e cald si catifelat. Pentru o versiune blanda, pune doar o lingurita; pentru una clar iute, ramai la cantitatea din reteta sau adauga in plus la ornat.<\/li>\n<li><strong>Cu legume in plus<\/strong> &#8212; poti adauga ciuperci calite sau spanac proaspat in sos, pentru un plus de consistenta si culoare.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pastele cu vodka se pastreaza la frigider, intr-un recipient inchis ermetic, 2-3 zile. La reincalzire, sosul se ingroasa, asa ca adauga putina apa, lapte sau smantana lichida si incalzeste la foc mic, amestecand, pana redevine cremos. Evita microundele la putere maxima, care pot supraincalzi sosul si il pot taia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa pregatesti in avans, poti face sosul separat si sa-l pastrezi la frigider, urmand sa fierbi pastele proaspat in ziua in care servesti &#8212; asa pastele nu se inmoaie.
