Daca vrei sa incerci aceasta reteta in varianta vegana (de post), iti recomand reteta mea de <a href=\"https:\/\/gourmandelle.com\/ro\/tort-streusel-de-mere\/\">tort Streusel cu mere<\/a>, care este foarte similara cu aceasta si pe care o fac atunci cand vreau un desert fara lactate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu o vad ca pe un desert de toamna prin excelenta, cand merele sunt la cele mai bune ale lor si vreau ceva cald pe masa. Sfatul meu este sa amesteci soiuri dulci cu soiuri acrisoare, exact cum spune si reteta, fiindca un amestec echilibrat da o umplutura cu mai mult caracter. Alege mere ferme, care isi tin forma la gatit, ca sa nu se transforme complet in piure; cele prea moi se vor dezintegra in oala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Untul rece<\/strong> (120 g, taiat cubulete) este cheia unei cruste fragezite. Tine-l la frigider pana in ultima clipa si lucreaza-l rapid in robot, doar 5-7 secunde, ca sa ramana bucatele mici de unt in aluat; ele sunt cele care, la coacere, creeaza straturile fragede. Daca untul se incalzeste si se topeste in faina, crusta iese tare, nu frageda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vodca rece<\/strong> (2 linguri) poate parea un ingredient neobisnuit intr-o prajitura, dar are un rol tehnic real: alcoolul hidrateaza aluatul fara sa dezvolte la fel de mult gluten ca apa, deci aluatul ramane usor de intins si frageda dupa coacere. Alcoolul se evapora aproape complet in cuptor, asa ca nu vei simti gustul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana lichida<\/strong> (120 ml) leaga umplutura. Dupa ce strecori merele fierte, amesteci lichidul scurs cu smantana lichida si il reduci pe foc pana se ingroasa, obtinand un sos cremos care invaluie merele. Foloseste o smantana cu un continut de grasime mai ridicat, ca sa nu se taie la fierbere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> apare in toate cele trei componente: crusta, legarea usoara a umpluturii si toppingul. Pentru topping se combina 160 g faina cu 120 g zahar si 100 g unt topit, formand acea pasta cremoasa care se intinde peste mere si se rumeneste in cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara<\/strong> (\u00bd lingurita) este condimentul care defineste aroma. Pentru un gust mai intens, foloseste scortisoara macinata proaspat sau una de buna calitate, fiindca scortisoara veche isi pierde din parfum si lasa doar o nota lemnoasa.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Raceste aluatul cum trebuie.<\/strong> Reteta cere minim doua ore la frigider dupa ce tapetezi tava si intepi suprafata cu furculita. Nu sari peste acest pas: aluatul rece isi tine forma la coacere si nu se lasa pe margini.<\/li>\n<li><strong>Nu uita greutatea la coacerea oarba.<\/strong> Acopera aluatul cu folie si pune deasupra fasole uscata sau naut inainte sa il coci 40 de minute la 180\u00b0C. Fara greutate, fundul crustei se umfla si se deformeaza.<\/li>\n<li><strong>Strecoara merele inainte sa le pui pe crusta.<\/strong> Pasul de scurgere a lichidului si reducerea lui cu smantana este ceea ce face diferenta dintre o umplutura cremoasa si una apoasa care inmoaie crusta.<\/li>\n<li><strong>Urmareste culoarea la final.<\/strong> Ultima coacere de 15-20 de minute e gata cand toppingul s-a rumenit frumos. Crusta va fi putin mai ferma, dar tot reusita.<\/li>\n<li><strong>Mai multe condimente:<\/strong> pe langa scortisoara, poti adauga un varf de nucsoara sau de cuisoare macinate in amestecul de mere, pentru o aroma mai bogata, de toamna.<\/li>\n<li><strong>Alte mere:<\/strong> reteta merge cu orice amestec de soiuri dulci si acrisoare; alege ce gasesti proaspat in piata si potriveste zaharul dupa cat de acrisoare sunt merele.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Prajitura se pastreaza acoperita la frigider pana la 3-4 zile. Eu o scot cu putin timp inainte de servire ca sa ajunga la temperatura camerei, asa cum cere reteta, fiindca atunci aromele se simt cel mai bine. Crusta se poate pregati cu o zi inainte: o tapetezi in tava, o tii la frigider, apoi o coci oarba in ziua in care asamblezi prajitura. Umplutura de mere se poate gati si ea din timp si se pastreaza la rece pana cand o folosesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca te-ai indragostit de aromele de toamna, arunca o privire
