Lintea rosie se desface complet la fierbere si da o textura cremoasa naturala fara a fi necesara blendarea. Este vegan, bogat in proteine vegetale si fier, si gata in 30 de minute. Spre deosebire de lintea verde sau bruna, lintea rosie nu necesita inmuiere in prealabil si se fierbe rapid &#8212; 15-20 minute. Se desface aproape complet la fierbere, ceea ce da textura cremoasa caracteristica dal-ului indian. Clateste bine sub jet de apa rece inainte de gatire &#8212; indeparti amidonul de suprafata si orice impuritati. Mai multe <a href=\"https:\/\/gourmandelle.com\/ro\/tag\/retete-indiene-vegane\/\"><strong>retete indiene vegane<\/strong><\/a>.<\/p><p><strong>Laptele de cocos<\/strong> &#8212; Conserva de lapte de cocos integral (full fat) da cel mai cremos rezultat. Laptele de cocos light functioneaza dar da o textura mai lichida si mai putina dulceata. Adauga laptele de cocos la foc mic &#8212; fierberea viguroasa poate face sosul sa se separe. Acopera imediat cu capac pentru a pastra aromele. Aceasta tehnica de finisare ridica semnificativ profilul aromatic al oricarui dal.<\/li>\n<li>Gateste rosiile complet inainte de a adauga lintea. Rosiile trebuie sa se desfaca, sa isi piarda forma si sa se integreze in sos &#8212; cel putin 5-7 minute la foc mediu. Curry-ul cu rosii insuficient gatite are un gust acid si crud.<\/li>\n<li>Ajusteaza consistenta cu apa sau supa de legume in timpul fierberii. Lintea rosie absoarbe mult lichid &#8212; adauga cate 50-100 ml pe masura ce fierbe daca vrei un curry mai lichid (pentru servit cu orez) sau lasa mai gros (pentru lipii).<\/li>\n<li>Adauga garam masala si laptele de cocos in ultimele 5 minute de fierbere, nu la inceput. Caldura prelungita distruge aromele subtile ale garam masalei si poate face laptele de cocos sa se separe.<\/li>\n<li>Stoarce zeama de lamaie proaspata inainte de servire. La reincalzire adauga 2-3 linguri de apa sau supa &#8212; curry-ul se ingroasa semnificativ la rece si are nevoie de lichid in plus. Reincalzeste la foc mic cu amestecare, nu la foc mare.<\/p><p>Se congeleaza excelent pana la 3 luni. Este unul dintre preparatele vegetariene care se pastreaza cel mai bine la congelare &#8212; textura si aroma nu se degradeaza dupa dezghetare. Portioneaza in recipiente individuale de 300-400ml pentru mese rapide in timpul saptamanii.<\/p><p>Pentru meal prep: fa o oala dubla duminica.
