Reteta are doua etape: fierbere 15-20 minute, apoi cuptor 25-30 minute la 220\u00b0C. Rezultatul este o garnitura cu contrast perfect de textura: crusta crocanta si aurie, interior cremos si pufos. Cartofii noi (baby potatoes) sunt ideali &#8212; coaja lor subtire devine crocanta la cuptor fara sa se arda. Cartofii mai mari se pot folosi taiati in jumatati sau sferturi inainte de fierbere. Evita cartofii fainosi (fainosi se desfac la zdrobire si fac un piure, nu o turta) &#8212; cartofii cu coaja galbena sau rosie tin mai bine forma dupa zdrobire.<\/p><p><strong>Uleiul de masline<\/strong> &#8212; Esential pentru crusta crocanta. Trebuie sa ungi generos fiecare cartof zdrobit &#8212; deasupra si pe margini. Uleiul in contact cu tava fierbinte si cu cuptorul la temperatura inalta este cel care face crusta. Nu inlocui cu ulei spray &#8212; nu da acelasi rezultat. Uleiul de avocado functioneaza la fel de bine daca vrei un ulei cu punct de ardere mai ridicat.<\/p><p><strong>Sarea<\/strong> &#8212; Adauga sare la apa de fierbere (apa sarata da gust cartofului in interior, nu doar la suprafata) si inca putin sare grunjoasa sau fulgi de sare deasupra cartofilor zdrobiti inainte de cuptor. Sarea grunjoasa pe suprafata contribuie la textura crocanta.<\/p><p><strong>Condimentele<\/strong> &#8212; Usturoiul tocat marunt sau ras adaugat peste cartofi inainte de cuptor da o aroma intensa. Rozmarinul proaspat sau cimbrul uscat sunt combinatii clasice. Boia afumata presarata inainte de cuptor da culoare si o nota subtila de fum. Cartofii partial fierti nu se zdrobesc bine si raman duri la interior dupa cuptor.<\/li>\n<li>Zdrobeste cartofii inca calzi, imediat dupa fierbere. Cartofii raciti se crack, nu se zdrobesc plat &#8212; se rup in bucati si pierd forma.<\/li>\n<li>Foloseste fundul unui pahar drept sau al unei cani, nu furculita &#8212; dai o suprafata plana uniforma care se rumeneste egal in cuptor. Apasa ferm o data, nu de mai multe ori &#8212; vrei o turta plata, nu piure.<\/li>\n<li>Preincalzeste cuptorul bine &#8212; cel putin 15 minute la 220\u00b0C inainte de a baga tava. Un cuptor rece sau slab incalzit face cartofi moi, nu crocanti.<\/li>\n<li>Nu aglomera tava &#8212; cartofii trebuie sa aiba spatiu intre ei. Daca sunt prea apropiati, abureaza in loc sa se rumeneasca. Storci usturoiul caramelizat peste cartofii zdrobiti chiar inainte de servire &#8212; aroma este mai dulce si mai complexa decat usturoiul crud.<\/p><p><strong>Cu branza vegana<\/strong> &#8212; Presara branza vegana rasa sau drojdie nutritiva in ultimele 5 minute de cuptor pentru o nota sarata si cremoasa. Drojdia nutritiva da o aroma usor branzita fara lactate.<\/p><p><strong>Cu boia afumata si chimion<\/strong> &#8212; O combinatie inspirata din bucataria mexicana: boia afumata, chimion si suc de lamaie dupa cuptor. Merge bine cu guacamole sau salsa ca dip.<\/p><p><strong>Cartofi dulci zdrobiti<\/strong> &#8212; Acelasi procedeu functioneaza si cu cartofi dulci mici. Timp de fierbere similar (18-20 minute), dar la cuptor se rumenesc putin mai repede &#8212; verifica dupa 20 de minute. Daca ii faci in avans, pastreaza-i la frigider pana la 3 zile intr-un recipient inchis si re-incalzeste-i la cuptor sau in air fryer la 200\u00b0C timp de 10-12 minute pana redevine crocanta. Microundul nu func\u021bioneaza &#8212; inmoaie crusta.<\/p><p>Pentru preparare partiala in avans: fierbe cartofii si zdrobeste-i cu o zi inainte, pastreaza-i pe tava la frigider acoperiti cu folie. A doua zi, unge cu ulei si baga direct in cuptorul preincalzit &#8212; adauga 5 minute in plus la timp.<\/p><p>Serveste alaturi de: <a
