Aveam niste ciuperci Champignion in frigider, asa ca azi am decis sa le transform in chiftele prajite, ca sa-mi reamintesc de gustul copilariei, in varianta vegetariana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am ales sa le prajesc, desi nu se intampla prea des sa fac asta, pentru ca am vrut sa ma bucur cu adevarat de textura autentica. Bineinteles, le poti pune si la cuptor, pentru o varianta mai usoara.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Note despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile Champignion<\/strong> sunt baza retetei. Au un gust bland si o textura carnoasa care imita surprinzator de bine chiftelutele cu carne. Secretul este sa le rumenesti bine in tigaie inainte de a le toca: ciupercile contin foarte multa apa, iar daca nu o lasi sa se evapore, compozitia ramane prea moale si chiftelele se desfac la prajit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmetul Panko<\/strong> face diferenta fata de pesmetul obisnuit. Fulgii lui mai mari si mai aerati absorb umezeala fara sa transforme compozitia in pasta si dau crusta aceea crocanta dupa care le iubim. Cele 200 g par mult, dar ciupercile elibereaza umiditate, asa ca pesmetul are exact rolul de a o echilibra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ouale<\/strong> (3 bucati) sunt liantul care tine totul laolalta. Impreuna cu <strong>lingura de amidon de porumb<\/strong>, ele leaga compozitia astfel incat bilutele sa-si pastreze forma in tigaie. Fiind reteta cu ou, chiftelele acestea sunt vegetariene, nu vegane.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa, usturoiul, cimbrul si mararul<\/strong> sunt cele care aduc savoarea. O ceapa taiata cubulete si calita odata cu ciupercile da dulceata, cei 4 catei de usturoi tocat dau profunzime, iar cimbrul si o legatura de marar proaspat tocat aduc prospetimea care face ca rezultatul sa nu fie fad. Stii ca sunt gata cand ciupercile incep sa se rumeneasca si tigaia nu mai are lichid pe fund. Acesta este pasul de care depinde tot restul retetei.<\/li>\n<li><strong>Nu supraprocesa la robot.<\/strong> Pulseaza doar de cateva ori, cat sa marunti ciupercile in bucati mai mici. Daca le transformi in pasta, chiftelele isi pierd textura si devin gumoase.<\/li>\n<li><strong>Da compozitia la rece 20 de minute.<\/strong> Acoperita cu folie si lasata la frigider, compozitia se intareste si devine mult mai usor de modelat. Daca o prajesti calda, bilutele se desfac.<\/li>\n<li><strong>Umezeste-ti mainile<\/strong> inainte sa formezi bilutele: compozitia nu se mai lipeste de palme si chiftelele ies rotunde si uniforme.<\/li>\n<li><strong>Incinge bine uleiul inainte sa adaugi chiftelele.<\/strong> Daca uleiul nu este suficient de fierbinte, ele absorb grasime si raman moi in loc sa prinda crusta. Vor fi la fel de bune, doar ca textura crocanta este mai pronuntata la cele prajite. Pentru un plus de aroma, poti inlocui o parte din marar cu patrunjel sau adauga putin parmezan ras in compozitie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu le servesc exact ca pe cele din copilarie: alaturi de un piure cremos de cartofi. Merg insa la fel de bine cu un sos de iaurt cu usturoi, peste o salata verde sau ca aperitiv cald, intepate in scobitori.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Chiftelele se pastreaza la frigider, intr-un recipient inchis, 3-4 zile. Le poti reincalzi cateva minute in tigaie sau in cuptor ca sa redevina crocante; in cuptorul cu microunde se vor inmuia. Compozitia cruda se poate pregati cu o zi inainte si tinuta la frigider, gata de modelat si prajit a doua zi. Chiftelele deja prajite se pot congela pana la 2 luni si reincalzi direct din congelator.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\"
