Crema de branza din aluat este cea care le da textura aceea catifelata care se topeste in gura, iar romul aduce o nota calda si eleganta ce le ridica de la un fursec obisnuit la un desert de ocazie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sunt exact genul de dulce delicat pe care il servesti alaturi de o ceasca de ceai sau de cafea, dar arata suficient de rafinat cat sa il pui pe masa la o ocazie speciala. Pentru aluat ai nevoie de faina pentru prajituri cernuta, praf de copt, unt moale, crema de branza la temperatura camerei, zahar alb, un ou mare si extract de vanilie. Pentru umplutura combini crema de branza cu zahar pudra si stafidele inmuiate in rom.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Crema de branza la temperatura camerei<\/strong> este cheia texturii fragede. Rece direct din frigider nu se omogenizeaza bine cu untul si aluatul iese cu cocoloase.<\/li>\n\n\n\n<li><strong>Untul moale<\/strong>, nu topit, ca sa incorporeze aer atunci cand il mixezi cu zaharul si sa dea fragezime.<\/li>\n\n\n\n<li><strong>Faina pentru prajituri cernuta<\/strong> are un continut mai mic de proteine si ajuta fursecurile sa iasa fine, nu tari. Cernerea previne cocoloasele si aerisise aluatul.<\/li>\n\n\n\n<li><strong>Stafidele si romul<\/strong> sunt vedeta discreta a retetei. Cu cat stau mai mult in rom, cu atat se umfla mai frumos si aduc mai multa aroma in crema.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum prepari fursecurile cu crema de branza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Incepe cu o seara inainte, daca poti, si toarna romul peste stafide ca sa se inmoaie bine. A doua zi mixezi untul cu crema de branza pana devin cremoase, adaugi treptat zaharul si mixezi cam un minut, apoi incorporezi oul si vanilia. La final adaugi praful de copt si faina, putin cate putin, doar pana se leaga aluatul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aluatul are nevoie de cel putin o ora la frigider. Este pasul pe care e tentant sa il sari, dar racirea intareste grasimile si face aluatul lipicios mult mai usor de modelat. Dupa ce s-a racit, formezi bilute de 2 pana la 4 cm, cu mainile pudrate cu faina, si le aplatizezi usor cu fundul unui pahar pudrat. Nu le presa prea tare, altfel nu se mai umfla la copt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Coci fursecurile la 190 C timp de 10 pana la 15 minute, doar pana cand marginile de jos capata o nuanta aurie. Le scoti, le lasi sa se raceasca complet, apoi intinzi crema de branza cu zahar pudra si stafide pe fiecare. Inmuiate in rom insa se umfla, se inmoaie si se transforma in mici rezervoare de aroma care echilibreaza dulceata cremei. Romul mai are un rol practic: alcoolul dizolva aromele si le imprastie uniform, asa ca fiecare imbucatura are aceeasi nota calda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei un contrast si mai frumos, poti lasa stafidele la inmuiat peste noapte. Vor deveni pline si suculente, iar crema de branza le va prinde perfect.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa iasa fragede de fiecare data<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Scoate untul si crema de branza din frigider cu vreo 30 de minute inainte, ca sa fie la temperatura camerei si sa se mixeze fara cocoloase.<\/li>\n\n\n\n<li>Nu mixa excesiv dupa ce ai adaugat faina. Cu cat lucrezi mai mult aluatul, cu atat se dezvolta glutenul si fursecurile ies mai tari.<\/li>\n\n\n\n<li>Racirea aluatului nu este optionala. Un aluat rece isi tine forma mai bine la copt si e mult mai usor de modelat cu mainile.<\/li>\n\n\n\n<li>Urmareste atent cuptorul in ultimele minute. Fursecurile sunt gata cand marginile de jos devin aurii, chiar daca partea de sus pare inca palida. Timpul de coacere variaza de la un cuptor la altul.<\/li>\n\n\n\n<li>Umple fursecurile abia dupa ce s-au racit complet, altfel crema de branza se inmoaie si curge.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Idei de variatie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta este generoasa cu experimentele. Daca le pregatesti pentru copii sau preferi fara alcool, poti inmuia stafidele in suc de portocale sau apa calda in loc de rom si sa adaugi putina coaja rasa de portocala pentru aroma. Stafidele se pot inlocui cu merisoare uscate sau caise taiate marunt, la fel de bine. Iar daca vrei un plus de textura, o mana de nuca sau de fistic tocat marunt in aluat schimba placut jocul.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le pastrezi si cu ce le servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Fursecurile neumplute se pastreaza intr-o cutie etansa la temperatura camerei cateva zile bune. Odata umplute cu crema de branza, tine-le la frigider si scoate-le cu putin timp inainte de servire, ca sa isi recapete fragezimea. Aluatul crud rezista si el la frigider o zi sau doua, asa ca poti pregati totul din timp si coace fursecurile proaspete cand ai nevoie de ele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti place sa ai mereu o cutie de fursecuri de casa la indemana, arunca un ochi si peste <a href=\"https:\/\/gourmandelle.com\/ro\/fursecuri-cu-oreo\/\">fursecurile cu Oreo<\/a> sau peste <a href=\"https:\/\/gourmandelle.com\/ro\/fursecuri-de-migdale-cu-ciocolata\/\">fursecurile de migdale cu ciocolata<\/a>, doua variante la fel de bune pentru cafeaua de dupa-amiaza.
