Nu exista batut spuma, nu exista cernut faina, nu exista nicio etapa la care sa poti gresi grav. Secretul sta in coacerea lenta pe bain-marie, care transforma compozitia simpla intr-o textura catifelata, intre budinca si cheesecake.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il scot atunci cand vreau un desert care impresioneaza fara sa imi ocupe toata dupa-amiaza si, mai ales, cand am musafiri care evita faina sau glutenul. Aroma intensa de cacao si dulceata profunda data de laptele condensat fac din el unul dintre acele deserturi la care toata lumea cere reteta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Aceasta reteta e potrivita daca ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Un desert fara faina si fara gluten care nu te face sa simti ca ai renuntat la ceva.<\/li>\n<li>O prajitura care se prepara la robot, in cateva minute de munca activa, fara tehnici complicate.<\/li>\n<li>Un desert care se face din timp si se tine la frigider, ideal cand gatesti pentru musafiri.<\/li>\n<li>O alternativa intensa de ciocolata atunci cand ti-e pofta de ceva dens si cremos, nu de un blat aerat.<\/li>\n<li>Un desert care arata spectaculos rasturnat pe platou, dar care iarta orice nesiguranta in bucatarie.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Se face la robot<\/strong> &#8211; pui toate ingredientele (mai putin decoratiunile) in vasul robotului, blenduiesti pana se omogenizeaza si gata compozitia. Atentie sa cumperi lapte condensat <em>indulcit<\/em>, nu lapte evaporat (neindulcit) &#8211; sunt usor de confundat pe raft, dar laptele evaporat nu are zahar si reteta ti-ar iesi fada.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pudra de cacao<\/strong> &#8211; cele 90 g sunt cele care dau culoarea inchisa si aroma. Foloseste cacao pura, neindulcita, de calitate. O cacao buna are un parfum intens chiar si la borcan; daca pudra ta miroase a praf, gustul flanului va fi sters. Cerne-o, daca observi cocoloase, ca sa nu ramana puncte amare in compozitie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oua mari<\/strong> &#8211; cele 4 oua sunt agentul de inchegare care transforma lichidul in budinca la coacere. Foloseste-le la temperatura camerei, asa cum cere reteta: ouale reci se incorporeaza mai greu si pot lasa compozitia neuniforma. Scoate-le din frigider cu aproximativ 30 de minute inainte sau tine-le 5 minute in apa calduta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidon de porumb<\/strong> &#8211; jumatatea de lingura pare putin, dar are rol exact: stabilizeaza crema si o ajuta sa lege fara sa o faca tare, completand actiunea oualor. Inlocuieste faina obisnuita si este motivul pentru care desertul ramane fara gluten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte integral<\/strong> &#8211; cei 240 ml de lapte integral subtiaza compozitia concentrata de la laptele condensat si ajuta totul sa se blenduiasca neted. Grasimea din laptele integral contribuie la senzatia bogata in gura; daca folosesti lapte degresat, flanul iese mai putin catifelat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Extract de vanilie<\/strong> &#8211; lingurita de vanilie nu se simte ca atare, dar rotunjeste aroma de cacao si reduce senzatia de amar. Un extract adevarat de vanilie face diferenta fata de esenta artificiala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Decoratiuni de ciocolata pentru tort<\/strong> &#8211; sfertul de cana se presara abia la final, peste flanul rasturnat. Nu se baga in compozitie, ci dau textura crocanta si un aspect ingrijit, de cofetarie, in contrast cu crema fina de dedesubt.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu sari peste bain-marie.<\/strong> Apa din tava mai mare nu este un moft: ea tine temperatura in jurul formei blanda si uniforma, ca ouale sa se inchege incet. Fara baia de apa, marginile se gatesc prea repede si flanul iese cauciucos sau crapat in loc de cremos.<\/li>\n<li><strong>Toarna apa fierbinte, dar cu grija.<\/strong> Umple tava exterioara cu apa fierbinte pana la aproximativ jumatatea inaltimii formei, atent sa nu intre apa in compozitie. O poti pune in tava deja asezata in cuptor, ca sa nu o cari plina prin bucatarie.<\/li>\n<li><strong>Verifica coacerea, nu te lua doar dupa ceas.<\/strong> Intervalul de 40-60 de minute variaza in functie de cuptor si de tava. Flanul este gata cand marginile sunt prinse, dar centrul inca tremura usor cand misti tava &#8211; se va intari complet la frigider. Daca astepti sa fie complet ferm in cuptor, va iesi prea copt.<\/li>\n<li><strong>Treci cu cutitul pe margini cat e cald.<\/strong> Imediat ce il scoti, plimba lama unui cutit subtire pe marginea formei. Asa desprinzi blatul de pereti si te asiguri ca se va rasturna intreg, fara sa se rupa, dupa racire.<\/li>\n<li><strong>Ai rabdare la frigider.<\/strong> Cele minimum 4 ore de frig nu sunt optionale &#8211; in acest timp crema se aseaza si capata textura ferma care permite rasturnarea. Daca preferi un gust mai amarui, de ciocolata neagra, poti reduce putin zaharul; tine cont insa ca dulceata echilibreaza amarul cacaoi.<\/li>\n<li><strong>Mai intens de ciocolata<\/strong> &#8211; foloseste o cacao mai inchisa, de tip dutch-process, pentru o culoare si o aroma mai profunde. Pastreaza aceeasi cantitate ca sa nu dezechilibrezi compozitia.<\/li>\n<li><strong>Cu un strop de aroma in plus<\/strong> &#8211; un varf de cutit de sare fina sau putina scortisoara adaugate in robot scot in evidenta gustul de ciocolata, fara sa schimbe textura.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Flanul de ciocolata se pastreaza excelent la frigider, acoperit, 3-4 zile &#8211; ba chiar se aseaza si mai bine in zilele urmatoare, asa ca este desertul ideal de facut cu o zi inainte de masa. Tine-l in forma sau intr-un recipient inchis, ca sa nu prinda mirosuri din frigider si sa nu se usuce la suprafata. Il poti decora cu ciocolata abia la servire, ca decoratiunile sa ramana crocante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta budinca de ciocolata, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/mousse-de-ciocolata\/\">mousse-ul de ciocolata<\/a> pentru un desert cremos similar, <a href=\"https:\/\/gourmandelle.com\/ro\/sufleu-cu-ciocolata-pere\/\">sufleul cu ciocolata si pere<\/a> cand vrei ceva cald si aerat, sau <a href=\"https:\/\/gourmandelle.com\/ro\/tort-fara-gluten-cu-ciocolata-fructe\/\">tortul fara gluten cu ciocolata si fructe<\/a> daca ramai pe gama fara gluten.<\/p>\n\n\n\n<figure
