Se coace 20 de minute la 200C.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ca urmare a recentei descoperiri a mamei mele despre <a href=\"https:\/\/gourmandelle.com\/ro\/ce-este-glutenul\/\">sensibilitatea la gluten<\/a>, m-am angajat intr-o calatorie pentru a explora nuantele unui stil de viata fara gluten si a face cat mai multe retete adaptate acestei diete. Aceasta tarta a fost una dintre primele victorii reale: un blat care chiar se dospeste si devine crocant, fara sa fie nevoie de gluten ca sa tina totul laolalta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De atunci am facut-o de nenumarate ori, pentru ca de fapt e doua retete in una: aceeasi coca imi serveste si drept blat de tarta sarata, si drept blat de pizza. Contine deja un agent care imita rolul glutenului, asa ca aluatul devine elastic si poate retine bulele de aer din drojdie. Daca folosesti alt mix fara gluten, alege unul etichetat pentru paine sau pizza, nu unul universal pentru patiserie dulce, altfel coca nu va dospi la fel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drojdia uscata<\/strong> are nevoie de apa calduta ca sa se activeze, nu fierbinte. Daca apa e prea fierbinte omoara drojdia si coca nu mai creste; daca e rece, fermentarea e foarte lenta. Verifica temperatura cu degetul: trebuie sa fie placut calda, ca apa de baie. Un plic intreg are aprox. 7-8 g, deci aici folosesti jumatate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmetul fara gluten<\/strong> este ingredientul secret pentru un blat crocant. Presarat in forma unsa, formeaza o bariera intre coca si umezeala, exact ca faina pe care o presari sub o pizza. Asigura-te ca e fara gluten certificat, pentru ca pesmetul obisnuit din comert anuleaza tot efortul retetei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile<\/strong> trebuie feliate uniform si calite separat de restul umpluturii. Elibereaza multa apa, iar daca le pui crude direct pe tarta inmoaie blatul. Alege ciuperci ferme, cu palaria inchisa si fara pete inchise la culoare &#8212; sunt mai proaspete si mai gustoase. Nu le spala sub jet de apa, ci sterge-le cu un servet umed, ca sa nu se imbibe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> este cel care da nota de umami si inlocuieste branza intr-o varianta vegana. Spre deosebire de tofu simplu, cel afumat are deja gust pronuntat si o textura mai ferma, asa ca se taie frumos cuburi care isi pastreaza forma la cuptor. Tampoaneaza-l cu un servet inainte sa-l tai, ca sa scapi de excesul de lichid.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de tomate cu oregano<\/strong> functioneaza ca un sos concentrat intins direct pe coca. Pasta de tomate (nu bulionul subtire) ramane pe blat fara sa-l inmoaie si aduce gust intens. Oregano uscat e perfect aici pentru ca isi elibereaza aroma la caldura cuptorului.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Modeleaza coca cu mainile, nu cu facaletul.<\/strong> Aluatul fara gluten este foarte lipicios &#8212; e perfect normal. Daca incerci sa-l intinzi cu facaletul se lipeste si se rupe; cu mainile umezite il intinzi uniform in forma fara probleme.<\/li>\n<li><strong>Lasa coca sa-si dubleze volumul.<\/strong> Cele 45-60 de minute de odihna la temperatura camerei nu sunt optionale. Stii ca e gata cand aluatul s-a umflat vizibil si lasa o usoara urma cand il apesi cu degetul. Intr-o bucatarie rece poate dura mai mult.<\/li>\n<li><strong>Caleste ciupercile pana se evapora apa.<\/strong> Soteaza ceapa intai, apoi adauga ciupercile, sare si piper si tine-le pe foc cele 10 minute. Stii ca sunt gata cand lichidul lasat de ciuperci s-a evaporat complet si incep sa se rumeneasca &#8212; asa nu inmoaie blatul.<\/li>\n<li><strong>Nu sari peste stratul de pesmet.<\/strong> Greseala cea mai frecventa e sa pui coca direct in forma unsa, fara pesmet. Fara acea bariera, fundul tartei ramane moale. Presara-l uniform inainte sa asezi coca.<\/li>\n<li><strong>Verifica blatul, nu doar ceasul.<\/strong> Cele 20 de minute la 200C sunt un reper, dar cuptoarele difera. Cel mai bine o reincalzesti in cuptor sau in tigaie acoperita, nu la microunde, ca sa-si recapete crocanta blatului.
