Se prepara in aproximativ un sfert de ora la robotul de bucatarie, plus timpul de inmuiere a nucilor, si se raceste la frigider cel putin o ora inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Recent, Costin m-a abordat cu o provocare: \u201ePoti sa faci o pasca raw vegana de Paste?\u201d Inarmata cu caju si migdale, am transformat reteta traditionala de pasca intr-o varianta fara coacere. Rezultatul? Absolut extraordinar. Deserturile raw nu inceteaza sa ma uimeasca: ofera satisfactia rasfatului fara vina, datorita ingredientelor lor nutritive.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iar daca te ingrijoreaza partea estetica, te linistesc eu: dupa cum puteti vedea din fotografii, prima mea incercare de a decora acest desert nu a fost cea mai reusita. Alege migdale crude, nu prajite si nesarate, ca sa pastrezi caracterul raw al desertului. Inmuierea minim jumatate de ora (ideal peste noapte) inmoaie miezul, ca robotul sa le poata macina pana devin faina; daca le pui uscate, riscati o textura prea grunjoasa si o crema neuniforma. Cauta migdale cu coaja intacta si fara miros ranced, semn ca uleiurile din ele nu s-au oxidat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Caju crud<\/strong> \u2014 inima &#8220;branzicii&#8221; dulci. Caju este preferatul deserturilor raw tocmai pentru ca, hidratat si procesat, se transforma intr-o crema fina, fara gust pronuntat care sa acopere restul aromelor. Inmoaie-l minim jumatate de ora, ideal peste noapte: cu cat e mai bine hidratat, cu atat crema iese mai matasoasa. Daca te grabesti, il poti acoperi cu apa clocotita pentru 15-20 de minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> \u2014 leaga crema si o ajuta sa se intareasca la rece. Lasa-l la temperatura camerei ca sa capete o consistenta cremoasa inainte de a-l adauga; uleiul de cocos se solidifica la frigider, deci el este cel care da pascai fermitatea de care ai nevoie ca sa o feliezi frumos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarate de psyllium<\/strong> \u2014 rolul lor este de a lega si a ingrosa compozitia. Psyllium absoarbe lichidul si gelifica usor, dand cremei mai mult corp, ca sa nu fie curgatoare. O singura lingura este suficienta; daca pui prea mult, crema devine prea densa si gumoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Stafide aurii<\/strong> \u2014 sursa principala de dulceata si culoare. Se folosesc inmuiate in blat (alaturi de migdale) si o mana intreaga in crema, pentru acele insule dulci de fruct. Inmuierea de 20-30 de minute le hidrateaza si le face mai usor de procesat. Cauta stafide moi si lucioase, nu uscate si tari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Miere sau alt indulcitor natural<\/strong> \u2014 regleaza dulceata cremei. Trei linguri sunt punctul de plecare; gusta si ajusteaza in functie de cat de dulci sunt stafidele tale. Daca vrei o varianta complet vegana, inlocuieste mierea cu sirop de artar sau de agave (vezi sectiunea de substitutii).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Extract de vanilie si esenta de rom<\/strong> \u2014 dau profunzime aromei si o nota de sarbatoare, exact cum te-ai astepta de la o pasca. Vrei mai intai faina fina, apoi inca un minut la putere maxima dupa ce ai adaugat stafidele.<\/li>\n<li><strong>Distribuie blatul cu mana protejata.<\/strong> Foloseste o manusa de plastic sau o punga peste maini si preseaza amestecul uniform pe baza si pe pereti; presarea ferma este cea care tine blatul lipit, sa nu se sfarame cand feliezi.<\/li>\n<li><strong>Proceseaza caju pana e perfect cremos.<\/strong> Stii ca este gata cand pasta nu mai are bucatele si se simte matasoasa intre degete, fara senzatia de nisip. Asta dureaza de obicei 1-2 minute la viteza maxima; daca robotul se incalzeste, opreste-l si razuieste peretii.<\/li>\n<li><strong>Lasa pasca la frigider cel putin o ora.<\/strong> Nu sari peste acest pas: la rece, uleiul de cocos se solidifica si abia atunci pasca capata fermitatea care iti permite sa o feliezi frumos.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta complet vegana:<\/strong> inlocuieste mierea cu sirop de artar, de agave sau de curmale. Reteta devine astfel potrivita si pentru cei care nu consuma deloc produse de origine animala.<\/li>\n<li><strong>Alte fructe uscate:<\/strong> daca nu ai stafide aurii, mergi pe stafide obisnuite, curmale tocate sau caise uscate maruntite, fie in blat, fie in crema, pentru o dulceata naturala diferita.<\/li>\n<li><strong>Joaca-te cu aroma:<\/strong> coaja rasa de lamaie sau de portocala in crema da o nota proaspata, iar o lingurita de scortisoara o apropie de aromele clasice de sarbatoare.<\/li>\n<li><strong>Decor dupa bunul plac:<\/strong> seminte de mac in plus, fructe de padure proaspete, fulgi de cocos sau cateva migdale tocate. Tine-o intotdeauna la rece pana in momentul servirii, pentru ca uleiul de cocos se inmoaie la temperatura camerei si textura devine mai moale. Daca vrei sa o pastrezi mai mult, o poti congela portionata si o lasi sa se dezghete la frigider inainte de a o servi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca pregatesti un meniu intreg de sarbatoare, pasca aceasta se incadreaza frumos alatura de restul preparatelor dintr-un <a href=\"https:\/\/gourmandelle.com\/ro\/meniu-de-paste-vegetarian\/\">meniu de Paste vegetarian<\/a>. Foloseste o manusa de plastic sau pune-ti o punga peste maini pe post de manusa.
